Chocolate arrives neatly packed in foil, but how is it made? We are lucky to spend time with Catherine Goulet, the owner and chocolatier at Avanaa Chocolat, who takes us on a trip to South America and transforms the collected cocoa beans to bars of chocolate. #Chocolate comes from cocoa beans, which grow in fibrous cocoa pods that need to be dried and fermented. Then, they are cleaned, sorted, roasted, crushed, and ground. The most interesting fact we learned is just how long it tastes to grind the cocoa - 3 whole days! The resulting product is a chocolate liqueur that can be tempered and cooled into a bar of chocolate. Catherine let us try some of her craft chocolate, and it was definitely a unique experience. Just like craft beer and small batch coffee roasts, each bar has a distinct, strong flavour special to the bean. If you're a dark chocolate lover, it's worth trying some craft chocolate.

My favorite job I’ve ever had was working at an artisan chocolate shop. I miss it a lot, even though I wasn’t there very long. Working with chocolate is just so much more fulfilling than you’d ever expect.

End grain are actually end cocoa bean. Usually when they harver it, what they do i ferment end bean because they have a ten pulp, which i really tasty.
From there, we can start tiles off road. Line now, we're going to take some bean from end bag.

Its a fermented product a lot of the challenge is sourcing quality product and quality control. You dont just pick beans grind them and add sugar.

Déjà, c'est filmé à Montréal et la madame est clairement francophone : faîtes donc la vidéo en français, avec sous-titres.
Pis, autant je trouve la démarche pour aller chercher le cacao de meilleure qualité et aussi équitable possible admirable, autant je trouve le processus de fabrication un peu... stérile (lire "non manuel").
Enfin, bravo le coup de pub, mais d'habitude, c'est discret. Là, on se demande si ils n'ont pas payé pour que vous veniez les filmer !
Elle a choisi à parler en anglais. On donne l'option à parler en français toujours, et on a des autres vidéos en français :)
Sa seule valeur ajoutée c'est la torréfaction. Le reste du process c'est à la machine. Sa gamme de chocolats parfumés a du lui demander un travail conséquent. Du reste bravo à elle pour avoir ouvert un petit atelier dans un domaine aussi concurrentielle.
