Ecuadorian Pork Seco

    INGREDIENTS:
    1lb of lean pork
    1 red onion
    2 green onion stalks
    1 tomato
    3 garlic cloves
    1 green bell pepper
    3 cilantro stems
    1 handfull of cilantro
    2 Naranjillas
    1 can of beer
    A dash of oil
    ½ teaspoon of achiote
    2 spoons of “Ají para seco” or paprika
    ½ teaspoon of cumin
    A pinch of pepper
    Salt to taste
    2l of water
    Sides:
    Rice
    Fried sweet plantain
    Avocado
    Cassava
    RECIPE:
    Wash the pork and dice it in medium cubes.
    Add a dash of oil and the achiote to a pot.
    Add the chopped green and red onion, tomato, green bell pepper and garlic, to make the refrito.
    After we cook the refrito sear the pork and mix well, add the cilantro stems and cover with water, let boil on high heat.
    Turn down the heat to medium.
    Blend with a little bit of water the Ají para seco (or paprika) with the Naranjilla, strain and add to the pot, add salt, pepper, and cumin. Let cook for 25 minutes or until the pork is tender. Remove the cilantro stems and add the chopped cilantro leaves.
    Serve with rice, fried sweet plantain and avocado.
