    Ron, I want to thank you so much for giving the tri state so much of your wonderful culinary skills! I grew up waiting in line on Friday or Saturday nights to get a table at the 4th Ave. Location., with my parents. This chili is what began my journey to seek heat and flavor in my own chili. Tonight, I made this recipe and was taken back to those wonderful days! Thank you, Ron! You are missed so much in the Huntington restaurant scene!

    Thank you Ron for making this happen! If you would reopen, I can guarantee my family will be there once a week just like my wife and I did during our days at Marshall. Great memories and I tell people all over the east coast about it when I can.

    Please do the Cadillac Nachos, all other nachos I have eaten are substandard compared to CW’s.

      My coworkers & I (5 of us) would go to CW every Friday (mid to late 80's) and we all ordered the Cadillac Nachos, always! I married & moved away, but went for Cadillac Nachos any time I was in town. I try Nachos everywhere, but nothing tastes like the Cadillac. I still crave them so badly I can almost taste them.

    Well done! Exciting to see the magic that creates the flavors of Chili Willis!
    We were with you often from the old to the new location - and were there with you the last night too ... (also remember the Charleston venture)... every visit was perfection! Best ever!
    Would love to see you conjure up Shredded Beef Burritos AND Chicken Enchiladas... I can still taste those flavors!
    Thanks for sharing how all our favorites are created.... looking forward to the next amazing dishes!
    (And like others have said, if a restaurant appears down the road - we will definitely be there- regularly!

    Thanks Ron…… I’m from Ashland and CW was a frequent dinner destination for me and my wife. All other Chilis in my life have never lived up to your Texas Red. It was a rarity that I didn’t get it on every visit. Always Started with the Queso……. PLEASE !!! Do that recipe soon as well!! X

    Fabulous video! I so wish you would make Texas red and sell frozen to local grocery stores like Rocco’s does with their spaghetti sauce, lasagna and bake spaghetti. Everyone would buy your Texas red! Maybe that would be a way to get your fabulous chili out without having to reopen the restaurant. I’d still love to see the restaurant reopen. I started going there as a child and it will always be my favorite restaurant! ❤️

    Hi Ron, Your cooking channel is terrific! I've never had your Texas Red chili, it certainly looks delicious. You are a great teacher and I love listening to the soft Mexican music in the background. I'm looking forward to the next recipe. Miss you.

      The black bean soup was from a can. LeGout is the brand, and unfortunately it has been discontinued.

    Perfect! I’m one to try anything I’ve had out and loved so this has made my day.a group of us used to drive over from Ashland Ky on a weekly basis for this food and not only for the great TexMex we all love but the people that worked there, so to be able to make these recipes in my kitchen is just awesome Ron!     Thank you for this channel and your knowledge! Don't forget the dessert........would love to see how the ice cream taco is made and put together! My wife of 8 years and 7 year old son have never experienced this deliciousness, even though i talk about it often!!!

    I use to travel all the way back to Huntington just to have your Cadillac nachos. I remember as I went to Vinson High school that this was the place for people to go.
    Have you done a video on how to prepare Cadillac nachos? They were very different from any other place I've eaten, and I've had 100's of nachos from all over the country. I was disappointed to see when the restaurant closed permanently.

    Hey, Ron! I've been wanting this recipe for decades.. My daughter "in law" sent me this video.. Love it. Hands down the best chili I've ever had.. My only concern is... More portioning.. 1 onion? 2? How much of each type of meat? How many of the peppers to make the puree?

    Thanks for posting this video! My family and I made your Texas Red Chili this weekend and it was absolutely delicious! We are eagerly awaiting new videos, hopefully in the not too distant future :-). We would love to see recipes for your queso, chicken fajitas, shredded chicken quesadilla, ice cream taco, broiled chevre goat cheese appetizer and a recipe for your tortillas.     I have my Grandmother's chili recipe from the late 1800's. Her Dad was a cowboy, working out of San Antonio. It is identical with the Chili Queen's recipe.
    Beef, beef suet, chili peppers, and garlic Ingrediants are measured in pounds. 22:44
    I use my Mother's recipe.
    The worst chili I ever had appeared to be tomato soup with bits of ground beef. The cook was from Montana.
    Anyway, I'm sure this makes an acceptable chili. But Texas Red it ain't.
    You get points for leaving out beans.

    Need the shredded beef burrito for sure. Did it have a specific name? That's all I ever ordered there as a kid.

      It was called a Super Burrito Jon. A loaded burrito made from chipotle shredded beef and topped with guacamole and sour cream. I’ll see if we can’t put together an episode on that recipe. Chili regards, Ron

    Hi! The video is fantastic! I can almost taste that Texas Red now!😍😍 Can you give us an ingredient list with specific amounts for the Texas Red? Also, I seem to remember some larger chunks of meat in the chili? Is that just larger pieces of the chuck beef? Thank you so much!!

    Ron, thank you. I grew up on Chili willi’s and still to this date, after traveling the world and now living in Texas for the last 15 years I have never had better Chili, period. I have sent out messages all over begging. Thank you from an old man

    From watching this is what I figured out as the Ingredients. Please correct as needed. I have not figured out all the quantities and what I have are mostly estimates.
    Ingredients.
    Chopped Onion. - 1 Yellow Onion.
    Minced Garlic - looks like 2 large cloves
    Toasted Ground Cumin -½ cup to make up about 1 ½ Tablespoon.
    Mexican Oregano
    Beef Consummate - 16 oz.
    Tomato Sauce - 2 quarts
    Doseeki Dark Beer. 6 oz.
    Ground pork. - 2 pounds
    Ground Chuck Lean - Looks like 2 pounds.
    Ancho Pepper - 6 each
    Guajillo Pepper - 6 each
    Mexican Red Chili Pepper - 6 each
    Tres Ochos Chilis or Paprika
    Jalapeno Powder
    Vinegar
    Sugar
    Salt
    Olive Oil
    Beef Base - 1 tablespoon.
