i LOVE my stick blender saves so much trouble with using and washing a blender on certain things.........my wife got our kitchenaid stick as a seniority gift at her work......big company.......one year she got a stand mixer Kitchenaid Profession Series 600 with lift bowl........that must have been a big anniversary, 25 or 30 years.

Ron, thanks so much for the Chipotle Shredded Beef recipe! Chili Willis is my all time favorite restaurant; I have never found another Mexican restaurant that even compares. I miss it so very much. Can you please do a video on the Super Burrito (my favorite dish you made) or attach the written recipe to your website listing all the ingredients? Thanks again for the recipes and videos that you have so generously shared!!! Making the Shredded Beef and Original Red for dinner tonight!

Glad you enjoyed the cooking lesson. Black Bean Soup was always a favorite at Chili Willi’s. The smoky chile that I use in the video is Pasilla de Oaxacanya, which just means it is from the state of Oaxaca. You may substitute any dried chipotle chile to add that smoky flavor to the bean soup. Use a dried chile rather than the chipotle in adobo found in a can. You want to remove the chile once your soup is cooked to add flavor. If you like spicy though you may purée some of the chile with the soup ingredients. Thanks for your comments. Chili regards, Ron
Ron, I want to thank you so much for giving the tri state so much of your wonderful culinary skills! I grew up waiting in line on Friday or Saturday nights to get a table at the 4th Ave. Location., with my parents. This chili is what began my journey to seek heat and flavor in my own chili. Tonight, I made this recipe and was taken back to those wonderful days! Thank you, Ron! You are missed so much in the Huntington restaurant scene!
Skip the first 3 1/2 minutes. That chile is Pasilla de Oaxaca. They are also called pasilla mixe, or chile pasilla Oaxaqueño. Oh, there are no exact recipe measurements but easy to guess.

Excellent! That’s reeeally wet... I’d prefer you reduce it an inch by leaving the lid off it for 30 min. But a very nice recipe. Thank you.

Ron, thank you. I grew up on Chili willi’s and still to this date, after traveling the world and now living in Texas for the last 15 years I have never had better Chili, period. I have sent out messages all over begging. Thank you from an old man

I have my Great Grandfather's chili recipe. He was a cowboy who joined the herds at San Antonio, Texas. After much research I found the original Chili Queen's recipe. The two recipes were the same. Quantities are given in pounds, which I don't recall right now. Beef suet, lean beef,, Ancho chilis, garlic. ,This is known as chili con carne.....peppers with meat. This was served in San Antonio to cowboys and soldiers from time immemorial until about the 1930s So no beans or tomatoes. Of course you can make it of anything you want to or add whatever. But don't call it Texas chili.
I have my Grandmother's chili recipe from the late 1800's. Her Dad was a cowboy, working out of San Antonio. It is identical with the Chili Queen's recipe. Beef, beef suet, chili peppers, and garlic Ingrediants are measured in pounds. 22:44 I use my Mother's recipe. The worst chili I ever had appeared to be tomato soup with bits of ground beef. The cook was from Montana. Anyway, I'm sure this makes an acceptable chili. But Texas Red it ain't. You get points for leaving out beans.
Why did Chili Willi's go out of business?

I started eating there in 1987 while at KCC. My all-time fav Mexican restaurant EVER!. The polo flautas were amazing. Your online recipe for the chili is considerably different: chuck, not round - no beans - only tomato sauce not crushed - and no cilantro. Which one is what you were making in the late 80s?

It's your recipe, of course your prerogative, but I wish you would either make it and sell it, sell the recipe and let someone else make it, or put it here. To just keep it locked up in your noggin is pretty hard to swallow (so you speak). Mad respect always for giving us great joy for those years, but this is pretty rough.
All over the country, I've never found nachos as good as yours. I don't know what was different, but I LOVED them - and the Pollo Flautas, my ABSOLUTE FAV!! That queso is ridiculously good. I wish you would reopen!!!

Awesome recipe Ron! If you are on the appetizer reveals, PLEASE do the Queso !!! It was my wife and I’s all time favorite! Everyone has white Queso now but this was so unique. The consistency was thick and the flavors were perfect! X
