"Oxtail Style" Beef Neck Bones | Shrimp Mac N' Cheese | Candied Yams | Cabbage & Kale | Soul Food

  • I'm going to show you how to make beef neck bones taste like oxtails! Oxtails are way too high, but beef neck bone are a great replacement. I'm pairing it with some shrimp macaroni and cheese, candied yams, and steamed cabbage & kale. Please use this video when cooking these recipes so you can have step by step instructions.     Beef Neck Bones:
    5-6 lb beef neck bones
    1 tbsp oxtail seasoning
    1 tbsp beef bouillon powder
    1 tbsp better than bouillon
    1 tsp thyme
    1/2 tsp rosemary
    1 1/2 tsp curry
    1 tsp browning
    1 1/2 tsp garlic pepper seasoning ( salt free)
    1/2 cup dry red wine
    1 tsp salt ( adjust to taste)
    2 tbsp ketchup
    water
    1 large onion
    5 cloves garlic
    2 bay leaves
    butterbeans
    Yams:
    3 lb sweet potatoes
    1 stick salted butter
    pinch salt
    2 tbsp maple syrup
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/4 tsp ginger
    1 tsp vanilla extract
    1/2 tsp lemon extract
    Shrimp Mac n Cheese
    16 oz medium shrimp, peeled, deveined
    16 oz macaroni noodles
    4 tbsp butter
    1/2 medium onion
    1/2 Bousin Garlic and Herb cheese or 3 cloves garlic & 2 tbsp cream cheese
    2 tbsp flour
    1 can evaporated milk
    2 cups heavy cream
    1 cup whole milk
    1 lb mozerallla
    1 lb sharp cheddar cheese

    Caribbean people clean their meat too and we use lemon or lime to cut the "freshness". But we season our meats overnight in herbs (chive, garlic ,onion,thyme etc) and then scrape the herbs off before caramelizing the meat in brown sugar. Ketchup in stew is our norm. Have a clear sink and counter-top before you begin cleaning the meat/poultry and then thoroughly clean and sanitize the area when you are finished.

      Please to specific which island Jamaican do not use chive, brown sugar is a new thing. Ketchup also new. Clean is to cut rawness not freshness, different island definitely not 🇯🇲🇯🇲🇯🇲🇯🇲🇯🇲. Bless

      @@lizabetx483 in Jamaica we say to cut the rawness. Think of how fish has a fishy smell and using lime cuts that smell. It's the same thing with meat. You say sumn different in trinidad and we say differently in JA.

    Girll completely agree. We in the Caribbean clean our meat. The places these meat be and how they be cut and prepared we don’t know. It could have been dropped, sneeze on etc. clean with water and salt, vinegar or lime. Just clean out your sink with bleach and dish liquid and you good. Doing the “cleaning” also help draw out blood. We been doing it for years.

      There's no need to clean meat. It's just an old wives thing. Especially if your braising meat or cooking in a pressure cooker. And this is coming from a professional chef. And plus it's not blood, it's myoglobin.

    My mom used to put beef neckbones in her pasta sauce. It would cook all day! And then we would munch on the bones! Love it and definitely gonna try this. I wish I could try the shrimp but I’ve developed an allergy unfortunately. Which stinks because I love shrimp!

    Vinegar does actually help, it makes the meat more tender but only if you marinate it a bit and even mix it with some flavor. Great Dish!

    Bomb looking meal, and yes when cooked up right its easy to fool someone into they thinking some good ol oxtail. Imma need a huge Tupperware bowl of them yams.
