Caribbean people clean their meat too and we use lemon or lime to cut the "freshness". But we season our meats overnight in herbs (chive, garlic ,onion, thyme etc) and then scrape the herbs off before caramelizing the meat in brown sugar. Ketchup in stew is our norm. Have a clear sink and counter-top before you begin cleaning the meat/poultry and then thoroughly clean and sanitize the area when you are finished.
Please to specific which island Jamaican do not use chive, brown sugar is a new thing. Ketchup also new. Clean is to cut rawness not freshness, different island definitely not 🇯🇲🇯🇲🇯🇲🇯🇲🇯🇲. Bless
@@caljensandie365 To be specific Trinidad and Tobago. How can lime cut rawness. Raw meat is uncooked meat.
@@caljensandie365 Are chives not called scallion in Jamaica? It is the same herb but a different name is used.
@@lizabetx483 in Jamaica we say to cut the rawness. Think of how fish has a fishy smell and using lime cuts that smell. It's the same thing with meat. You say sumn different in trinidad and we say differently in JA.
@@Izlandprincess1 In Guyana we say to cut the rankness.
My wife and I can’t believe we are just discovering you!! I love how you made a video of a COMPLETE meal versus one dish. I was taught to cook in bits and pieces but never learned how to cook at this level. With you, I will be able to prepare delicious meals for my boyfriend/future husband and our future family with love ❤ thank you
Sister...Girlfriend....You did the damn thing with this plate! Every spice, ingredient was on POINT! Yes, I was here for it from start to finish! Thanks for sharing! I am thoroughly impressed. And I will be making this exact same dish very soon! 🤩🤩🤩
Thanks sis! you will love this so much!!
On my soul! If only, I could have reached through this phone and get me a plate☺ I would be one happy sister. Frfr
Look delicious great cook.
@@CamirrasKitchen hello sister you're right you have to each your meat that Blood what my Auntie talk about Soaking her Meat in a little Salt that Salt help draw the blood out and it's work that what I do with my Bloody Meat use that Salt in Lime juice sometime special with my Chicken
My lord is thy shepherd 😋😋😋vinegar does get rid of any left over bacteria or parasites 🦠 😉in the meat
hmm okay well girl imma keep doing it!
I'm getting some neckbones this weekend. I've made "oxtail" with beef shank before and it was delicious.
Oh yes!
This is a perfect video, you need a cooking show to help the less fortunate people in the kitchen
Girll completely agree. We in the Caribbean clean our meat. The places these meat be and how they be cut and prepared we don’t know. It could have been dropped, sneeze on etc. clean with water and salt, vinegar or lime. Just clean out your sink with bleach and dish liquid and you good. Doing the “cleaning” also help draw out blood. We been doing it for years.
yes did you see on the blood in that beef? and folks day dont clean. im like nah 🖐 im putting water and vinegar on mine!
@@CamirrasKitchen yesss
I learned something today using beef neck bone instead of oxtail. It cost me 32.00$ cdn for two packs of oxtail with only four pieces of meat inside each pack. xoxo
Thank you so much for sharing. God bless you! I was looking for an oxtail replacement since their prices have gone up. I appreciate the love put into this meal. 💗😊
You are so welcome!😇
I always wondered " How does a Soul Food dinner cost $20?" Now I see!!!!!! This LOOKS AMAZING!!!!!!
whats funny is that i actually sold this plate for $20. if you really cooking yes it is worth it and you can taste the quality.
Soul food dinners used 2 cost $5.00.
GAS USED 2 B $.15 a gal. Candy and soda was $.10, Rent was $100. Per mo. I know I'm old, but retired, I am content and happy.
@@lisasterrett4817 I’ll be 46 yrs old this week. I vaguely remember $5.00 church dinners in the basement on Sunday afternoons, but this here meal from Camirra’s kitchen looks like a $5.00 meal with a $20.00 tip!!! (Or a $20.00 meal w/ a $5.00 tip) either way it looks good.
She can Cook!!! She has Tons of Seasonings!!! I have Alot to Learn!!!
Im so glad you feel like you are learning something new!
People that don’t clean their meat are 🤢 this is why you can’t eat at everybody house lol. Anyway, no shade. Another amazing video! 🤤 I need a plate, or 3 lol
That isn't shade that's the truth. This exactly why I don't eat folks house house unless I was there when you prepared it lol.
So apparently in the culinary world they don't think it makes a difference whether or not you clean the meat the germs get killing during the cooking process. I don't care what no body says I rinse the meat before I cook.
A little bit of flour on the meat before you rinse will help grab hold of the nasties.
I am telling you people just say and do all types of foul stuff. I was sitting here thinking who and their dirty cooking self is complaining about cleaning raw meats. Wth?!?!
There's no need to clean meat. It's just an old wives thing. Especially if your braising meat or cooking in a pressure cooker. And this is coming from a professional chef. And plus it's not blood, it's myoglobin.
Such a good substitute to use the neck bones. Priciate ya sis as usual fantastic presentation. Enjoy your Sunday. last's get the subscribers up everyone.
🙏 thanks!!

My mom used to put beef neckbones in her pasta sauce. It would cook all day! And then we would munch on the bones! Love it and definitely gonna try this. I wish I could try the shrimp but I’ve developed an allergy unfortunately. Which stinks because I love shrimp!

Great job! You got a lot of information and recipes in a short video! I love this mix that you put together. Awesome job on re-creating oxtails with the neck bones. I’ve done that a couple of times. I like your recipe here. I didn’t know all that about the sweet potato having all that moisture. I’m going to try your way next time! And as for the macaroni and shrimp, I am definitely trying this one! Again, thank you very much. ~Sharon

Btw I'm glad that you do clean the meat. I use water and vinegar or water an citrus fruits to get all of the gunk out. The ONLY meat you can't wash is ground meat. Everything else must be washed.

I'm doing this neck bone recipe today. I'm new to this page and really like this channel.
I haven’t seen or eaten neck bones since I was a child😇🤗🤎🤎I’m calling my grandmother now😌😂
I was watching this video and I thought she cooks beef bones? And your Mac n cheese is definitely a winner with the shrimp. These are all delicious and tasty recipes. I enjoyed watching how it's prepared.
Vinegar does actually help, it makes the meat more tender but only if you marinate it a bit and even mix it with some flavor. Great Dish!
AMAZING AWESOME FOOD. THANKS FOR SHARING THIS GREAT MEAL AND I KNOW I WILL BE MAKING THIS GREAT ONE...THANX 👍 👌 😊
Bless your heart
