  • Khailmag and ghee are the most respectful and beneficial dishes of Mongolian Traditional kitchen. They are the treasures of food culture as well. With Nargie's amazing attitude towards Mongolian food, let's take a look at how this dairy product dish cooked in a typical family in hoodoo.

In Trabzon / Turkey we have a dish called Kuymag. Its corn flour, a lot butter and atleast 3 different cheeses. When the butter is at the top, its done just like your Khailmag. As we come from Altai, there is a connection there.

As an Indian I had no idea ghee is so integral to another culture as well that too a place so far away. Very nice. Yes, Ghee is by far the best form of fat to consume. It's mixture short and medium chain fatty acids unlike unhealthy modern refined oils.

Ghee is most extensively used in india. However the method of production is quite different here. 1st butter is churned out the "desi" way from full cream yoghurt or curd and then the butter is clarified by slow heating until all water is lost, leaving an aromatic, delicious desi ghee. Try it sometime. BTW awesome dessert. I'll try it, and Nargie, you've got some serious style man! 👍

GHee is also widely used in India, Pakistan and other Asian as well as Middle Eastern countries. I personally love ghee. True when you say that is has lots of health benefits. But what I learnt today from your video is that, Mongolians surely have excellent resource management skills. Making the fullest use of the abundant dairy produce without wastage (although a necessity because of the harsh weather conditions there), is extremely commendable.

Ghee is a term from India, westerners are more familiar with the term clarified butter which is relatively inexpensive to make but most people are to lazy to fry the solids out of a block of butter so they spend two or three times more money to buy butter they could have made at home in less than 30 minutes.
