At one point you said sausage. No, this dish is called "Rolada" and comes from Silesia. This is a variation on similar dishes popular in Germany and Austria. It is wrapped meat, usually in sauce, and you have a potato cake, something like dumpling dough.

Well, I've been watching from Poznań, Poland. Actually today I prepared baked pierogi for dinner. And btw, doner is a night snack of choice as well in Poland. Anyways, as I'm vegetarian a have my own pierogi receipes, with tofu, different mashrooms. You should try bluecheese with spinach and a hint od nutmeg.

Polish cuisine is very rich and diverse. There wouldn't be enough time to talk about it. I am Polish and I have been cooking since I was 12. My mother and grandmother taught me to cook. Each region has its own specific cuisine. In Poland, soups are very popular. Each has many varieties. They were nutritious and warmed us on cold days.
But we also have soup for the summer that cools the body. We call her ,,chłodnik". There are also beets in it😊🙋❤️

I am Polish and I am aware that it is difficult for tourists to find truly Polish food. From what I see, you are from South Africa, so you may have German roots, which means that half of our cuisine, i.e. Polish and German, will be similar. As for food - there is probably no single typical Polish dish like pizza. There are hundreds of dishes in Poland and they are made in hundreds of ways. Soups are typical of Polish cuisine. Not purees or plates, but soups with meat, vegetables, potatoes, etc., broth, tomato, mushroom and even pickled cucumber soups, etc. As for dumplings, the most typical ones are with mushrooms and cabbage, but for tourists they are made with mushrooms. Mushrooms in Poland are mainly boletus. And here you have the crux of the matter. Polish cuisine is based on the highest quality ingredients, you can eat anywhere as long as someone prepares the food well and it does not depend on the price. The most Polish dishes are probably those that do not appear in other cuisines. E.g. tripe, mushroom, cucumber, stuffed cabbage, leniwe or dumplings and regional mutations, dumplings, dumplings, etc. What is in the film is food for tourists, but you have a chance to find really well-made food in restaurants, listen to how many people speak Polish and how many speak other languages languages. Good luck.

Our national dish is pierogi and bigos. We even have a pierogi festival in Krakow. You can taste many varieties of them, from spicy to sweet.
My grandmother was a highlander and she made pierogi with bryndza. When you are in Zakopane or Szczawnica, I recommend these dumplings. Bryndza is a sheep's cheese with a salty taste, so the pierogi will be slightly spicy.
    Greetings from Krakow :)

😆 BARSZCZ - SZ is similar to English "sh" (shell) and CZ is like CH ins CHECK\
The classic donut in Poland is filled with rose jam, but the homemade donuts that I prefer are filled with cherry or plum jam inside, but only with a small amount, not like the one shown in the film with pistachio filling, where there is basically only a filling :). By the way, a donut with pistachio filling is a rather exotic proposition :) There are many wrong assumptions in the film about the ingredients, e.g. dumplings and Silesian dumplings (in English translation both are dumplings but this is misleading), which are made of a different dough.
At 16:16 It's not a sausage :) it's a beef roulade (we call it "zraz" which is something different than classic roulade), it's a slice of beef filled with a slice of bacon and a piece of pickled cucumber.
    Bon Appetite.

I have the impression that pierogi are a Polish national dish for foreigners :) Do we eat them often? It probably depends on family traditions and customs, also on the region of Poland - you have seen that there are many types of dumplings and dumpling-like dishes. In our family, we eat pierogi maybe 2-3 times a year, certainly on Christmas Eve, when meat is not eaten (according to religious rules, but many non-religious Poles also adhere to this). Similarly, bigos - we mainly eat it during events where there are a lot of people, just like lard, it is also prepared then. A very nice dish that I recommend is "Żurek", a sour soup often served in hollow bread.

If you are in Poland in the summer, don't try bigos. Bigos is an autumn-winter dish, in summer cabbage is not good (because it is not yet sauerkraut) and bigos does not have the real taste of winter cabbage.

Another soup, not mentioned in the video, is żurek (pronounced zhoo-reck) which is soup made from soured rye flour and other ingredients with slices of sausage, potatoes, and hard-boiled egg added. Wonderful soup for cool/cold days. And barszcz is pronounced "barshch". 🙂

In Poland we do not have one national dish, each region has its own regional cuisine. Pierogi are very popular in the West, but in Poland they are as popular as bigos. In short, almost every Christmas or Easter dish can be called a national dish because they are known throughout the whole country and are not much modified in regional cuisines.

When visiting Poland, be sure to try the following dishes:
    - Pierogi Ruskie (and other varieties with meat, buckwheat, spinach with cheese, and sweet versions filled with fruits and cream. There's a wide variety to suit everyone's taste.)
    - Bigos - Made of sauerkraut and fresh cabbage, wild mushrooms, several types of meat, and a mix of herbs and spices. Known in English as "Hunter's Stew," it's especially favored by those who appreciate a hearty meat dish.
    - Schabowy with potatoes and mizeria - A traditional Polish pork cutlet served with boiled potatoes and mizeria, a cucumber salad in a sour cream dressing.
    - Chłodnik - A cold soup based on yogurt, kefir, or buttermilk, with added fresh vegetables like cucumbers, radishes, and dill, perfect for hot summer days.
    - Barszcz with uszka - A flavorful beetroot soup served with tiny dumplings filled with wild mushrooms, offering a rich aroma.
    - Żurek - A sour rye soup often served with white sausage and boiled egg, distinctive to Polish cuisine. Often served in a hollowed-out loaf of bread!
    - Tomato Soup - A thick, aromatic soup made with tomatoes, often served with rice or pasta.
    - Cucumber Soup - Made from pickled cucumbers, with the addition of potatoes and often meat, known for its slightly sour taste.
    - Oscypek with cranberry - Smoked cheese from sheep's milk, served with cranberry. Originating from the mountainous south of Poland, this dish is popular across the country, especially in tourist areas. Except in the south of Poland and specific months of the year you will eat only from cow's milk. But it is also delicious!
    - Pączek - A fluffy yeast doughnut filled with rose jam or other sweet fillings, glazed with icing or dusted with powdered sugar, especially popular on Fat Thursday.
    - Gołąbki - Minced meat with rice or buckwheat wrapped in cabbage leaves, served with a tomato or cream sauce, blending simplicity with deep flavor.
    - Kaszanka - A traditional Polish blood sausage filled with blood and buckwheat groats, seasoned with spices. Grilled with onions, it offers a unique taste and aroma, recommended for offal enthusiasts.
    - Liver with onion - Liver, often from poultry or pork, fried with onions. Served with apples or potatoes, it's a rich source of iron and vitamins, a staple in Polish cuisine.
Polish cakes, widely known in Poland as Ciasto, are also an essential part of the culinary experience. However, exploring the full spectrum of Polish cuisine would take much more time. This overview merely hints at the richness of flavors awaiting discovery upon arrival.
Poland is quite diverse, and although some dishes from one region are popular in another, often to truly experience the authentic taste of a dish, it's recommended to visit its place of origin. However, in Poland, distances are not vast, and thanks to the highways, travel between regions is relatively quick. This accessibility allows visitors to easily explore the rich culinary heritage that varies from one region to another, making the journey through Polish cuisine as rewarding as it is delicious.

Kulebele are dumplings from Katowice Restaurant with traditional Silesian Cuisine called "Żurownia". Is highly recommended place. Other great example in Katowice is "Śląska Prohibicja". Prices are rather higher than average, but is the best quality you can get. Kulebele is a new variation of other traditional dish: a beef roll (not sausage) with bacon and pickle, and potato dumplings (and this version is more popular).

If you want to try different varieties of dumplings, be careful, they are very filling. Look for Pierogarnia, closer to the center where there are a lot of tourists. Dumplings with cabbage and mushrooms in restaurants are different from home-made dumplings - they are made by boiling the cabbage and after cooling, squeezing out the sour juice, adding cooked mushrooms, adding a bit of pepper and grinding everything - they should be soft and slightly sour. In the film they say that it is the first time he eats such soft meat in dumplings because the meat is cooked and ground. I make fried dumplings as leftovers from dinner, I recommend them. But my number 1 is homemade bigos. Don't pour cream on top, it doesn't go well with cabbage. And you don't eat it on bread, you eat it with bread, or dip it in the juice from bigos. Don't buy donuts in the supermarket, but in a pastry shop or donut shop, my favorite is glazed with rose jam and still warm. I don't recommend stuffed cabbage rolls because not everyone makes delicious ones. I recommend pork chop with potatoes and salad, pork shank with very tender meat, chicken liver with onion. Try Polish poppy seed cakes, apple pie, cheesecake - my favorite Cheesecake with jelly with strawberries or raspberries. If it's in season, order some dumplings with forest dumplings. I saw you swallow. Bon appetit and don't be afraid, you won't gain weight if you visit my country a lot. Poles are not that fat people because they walk a lot in the city and burn calories.

Polish cuisine is very diverse because historically we have had many influences. I think that pickled cucumbers (actually fermented) are characteristic because they cannot be pickled in any other microclimate. Polish cuisine is sweet and sour and we like expressive flavors. In summer, it is good to try dumplings with seasonal fruit. Red borscht, i.e. made from beets, occurs only in central and eastern Europe. It is prepared from beet leaven, i.e. pickled beets with spices. Just like with cucumbers, fermentation requires an appropriate microclimate ;)

From my perspective, three most polish dishes are:
Bigos (sour cabbage cooked for several hours with random stuff in it it 's like a boiled kimchi , but with anything added , meat, sausages, mashrooms, beans or whatever, really)
    Pierogi (dumplings with various stuffings

Polish cuisine is different. Depends on the region. In southern Poland, we serve a soup called white barszcz. This dish is similar to zurek. Served with white sausage and egg. It must be with marjoram ☺️

Ok, pierogi, barszcz, bigos etc.. all amazing dishes. Delicious food. But if you want to eat something that every Pole eats at least once a week is rosół. It's not as "mainstream" as other soups because rosół isn't usually as good as it is at home in restaurants. It's a soup that every mum in Poland makes usually on Sunday (sometimes saturday) and it's a base for everything they cook during next week.

I'd say most of this dishes can be considered traditional and Polish, most of them are rather local, meaning not really popular outside Poland, or popular but made in a significantly different way. With doughnuts being the most controversial pick on the list. I love pierogi, I love potato pancakes, but those are rather labor intensive and because of that kind of a bit premium. With two working parents in my family a typical Sunday meal would look rather like 20:30. Plus a chicken or tomato soup.

I am waiting for commenters with their knowledge of English to translate the book "Kuchnia Polska" from 1954, published by the State Economic Publishing House, in short PWE, or for our friend to learn Polish. There are many more different recipes there, and there are older books as well.
365 dinners for five zlotys - a cookbook by Lucyna Ćwierciakiewiczowa, first published in 1860 and reissued many times under various titles: 365 dinners for five zlotys, 365 dinners by Lucyna Ćwierciakiewiczowa, 365 dinners. Subsequent editions were improved and expanded.

It was a torture watching you, knowing how it tastes and knowing you were on empty stomach when watching the video. When it comes to pierogi, there is a restaurant called Pierogarnia in Old town Wrocław ( address is rynek 26) and Kubiel pierogarnia at 28 Ludwika Solskiego Street in Wrocław. When it comes to Zapiekanki unfortunately I admit the best are in Kraków at Nowy Targ Square, it’s in Jewish quarters. Enjoy Guys. I am sure once you gonna try these you guys will find Polish genes in you. You both look like you’re Polish.

Depending on what city you want to visit you should choose different restaurants with different dishes :) For example in Kraków you should visit restaurant Starka and try beefs cheeks :) its graet dish and they also have traditional polish alcohol called starka :) So its not so simple to tell you what to eat :) it depends on where and how much money you want to spend :D for example one of our traditional dish is beaver tail. But its forgotten and hard to get because beavers are protected by low :)
