It's time to re-stock the freezer with some fresh caught fish. The target species in this adventure is the Mahi Mahi, also known as Dolphin Fish or Dorado. This awesome pelagic is the fastest growing fish in the ocean, and one of the most beautiful in my opinion. They are a great fun on rod and reel or speargun and taste bloody amazing too. I got a campfire going on the beach and cooked up grilled mahi and pineapple tacos!

That lifestyle and weather is a dream. I used to live in Australia and got to experience it. Now, back in Northen Europe, it's cold with gray skies, no sunlight. Have to find a way to move out of here.
depending on your age, there is plenty of FIFO work (fly in fly out) in the mines here in Australia that pays anywhere from 120-300k a year depending on the position, even cleaners get over 100k, not hard to get a working visa either and they'll pretty much hire anyone wanting to have a crack at it.

Really enjoy your content. Especially every time you cook yourself on the beach. As an Asian, I have planned the whole cooking menus and catching process in my head if I was there with you. How to catch the fish and crab, the sea snail and the other ingredients…and my recipe are fully prepared in my head. Almost amounts 56 pages pdf. EVERY TIME . If you put a Chinese friend there, they will cook at least 8 dishes even without any other food. It’s really a heaven of my Chinese stomach.

the reason why the tortillas got converted to a tostada is because you let it rest and all the heat was gone. A tortilla needs to be warm, almost at the moment you put it out of the grill you need to start doing the taco (I'm a mexican guy who can cook)

Blackened Mahi Mahi is my favorite fish to eat. Tacos, Sandwiches all so good
My biggest was 17.5kg on 8kg line, was beautiful eating. We also caught another in a different comp that went 21.8kg.

Quite some time ago, I think it was you that did a catch and cook on the beach like this one and you used a topping which I think you said was a flavored mustard or mayo that is popular in Australia. Of course, I didn't write the name down, but I wanted to try to find some. If you know what I am talking about, could you tell me the name and brand? It really sounded good when you recommended it to everyone.

You need a small Aquarium net / attach a short cord to handle and tie to live bait tank. Also this will minimize the oils and human scent from your bait tank. Thats what the pros do.
It might be pronounced differently in Australia but typically "tortilla" is pronounced "Tor - Tea- Yah" (Or Tor Tea Ah). Thanks for the great video capture and congrats on the Mahi Mahi.

when grilling the taco shells to warm up put it in the taco shell form so it get warmed up like that and is trapped in the position just like they were flat
Try putting the tortillas on the closed portion of the grill with a bit of oil on it instead of the open flame. Looks good, I wanna do that so bad!!
