      I love how many different variations of mustards there are. Dijon, honey mustard, spicy brown mustard, basic yellow, jalapeño mustard, horseradish mustard...they are all delicious! But I also love ketchup!

    I worked at a grocery store for YEARS and lots of parents with strollers would use their stroller to shop instead of the shopping carts. When you have a baby that small, if someone is going to give you a hard time for trying to make your life easier that seems like a them problem. Trust me, we can tell who is shoplifting and who is going to end up paying, so do whatever is easiest for you, Becky!!

    You guys should do you can sit with us @ the dinner table with Matt. And have him teach and make one easy traditional Italian meal!! He should teach everyone how to say the ingredients in Italian!! I would really enjoy that :) please like so they can see this!!!

    As someone who works for an optometrist, I adore the factual understanding that Matt is showing and teaching with! Everyone should go to the eye doctor once a year if able, just to check your eye health!

    They wash them and that’s why store bought eggs are refrigerated since there is no protective coating on the outside of the shells.

    I have chickens and also lived in europe for a while! Eggs have a protective coating on them called the bloom. They wash the outside of the eggs in the grocery store in the US so they lose this coating and therefore they have to be refrigerated. If you get your eggs from chickens or quails (like matt) they can sit on the counter for 2 weeks cause they still have the bloom! In Europe (germany at least) the grocery store eggs aren't washed so they sit in the store unrefrigerated and also sit in your home on the counter. Most people just give them a rinse before cracking them

      I believe this is everywhere in Europe. At least in all the countries I've lived in and visited the eggs are not refrigirated.

    I'm a former glasses maker. Well, specifically I'd make the lenses for the frames sent to us and fit them inside. The lenses start off as big hockey puck chunks of plastic and you slowly cut and smooth them down to match the prescription. I was hired from a craigslist ad-- I remember being so surprised that anyone could be trained to make them. I've worn glasses since Kindergarten and my prescription is around -10 with an astigmatism. I got to make my own glasses :]

    Eggs are sanitized in the US to help avoid salmonella! So not pasteurization, but it's still a cleaning process done in the US. The coating of the egg that helps keep it fresh also gets washed off, so you need to refrigerate your eggs in the US so they don't spoil.

      This is right ^ in Europe and other countries they are cleaned so their eggs aren't put in the fridge ! Same with milk in France is sold at room temperature!!!

    For the children’s book question I gotta say Le Petite Prince is so endearing and can even be enjoyed by adults. It has a much deeper meaning, it’s very philosophical, and is well written. (Although, I’ve only read it in French)

    Fun fact: some people can get cataracts earlier than others because some medications make you more likely to develop them earlier. Also, you can have more than one type of cataract at a time. My mom had 3 on one eye and 2 on another when she had hers removed.

    I was born with a cataract in my left eye. As such I developed glaucoma in that eye at 15. By age 65, 90% of people will develop cataracts (it's a natural build up of proteins on the lens), but only about 17% get cataract surgery. Babies are also born with a protective coating (vernix), just like eggs are. 🥚 are washed in the US which removes the protective coating, which is why we must refrigerate them.

    I worked for a lab that studies cataract surgery. What happens with the old lens: They stick a couple instruments under your cornea to chop up the old lens and suck it away with (basically) a tiny vacuum. They do a little more vacuuming to clean out the remaining gunk. Finally, they insert a tube containing the new lens, which comes out and unfolds, and they spin it around to make sure it's properly placed.

      Just had my 2nd cataract surgery done two weeks ago. Your description is bang on. It is amazing the difference now that both eyes have been done.

    The classic fairy tales seem pretty violent to many, but children are learning to handle their emotions and stories can make feelings safe (The Uses of Enchantment by Bruno Betelheim). When Max was done feeling wild, he came back to his own room where someone loved him best, and his food "was still warm".

      Agreed, I think a lot of kids stories start with validating the fact that kids aren't always happy so it's showing them how to manage those big feelings & that they're still lovable at the end

    60 C is 140 F. Boiling is 100 C and 212 F.

    Most eggs in US grocery stores are washed but not pasteurized. This is because most pathogenic bacteria will be found on debris from the barn and can cross contaminate when breaking the egg! This does remove the protective “bloom” from the egg, which is why we refrigerate shelled eggs in the US. But you can have eggs in the fridge for a few months!
    Pasteurization is done at many different temperature and time combinations to find the perfect balance between killing the bacteria without affecting the food. So you can do really hot temperatures for a very short amount of time or lower temperatures for longer periods.
    For backyard chickens or quail, wiping off any debris with a paper towel and leaving the eggs at room temperature is very common!
    (Getting my PhD in Microbiology and do studies on poultry 😊)

    becky is cracking me up lol. i’m 31, have had cataract surgery, two retina detachments, two reattachment surgeries, and two surgeries to remove the oil that is put in your eye to reattach. it’s gnarly, but really cool how strong the eye actually is!!

    Becky, I’m so happy to hear you want to try a cultural dish of mine 🥰 I think a great intro to Century Eggs is by trying it in Century Egg and Pork congee, aka 皮蛋瘦肉粥. People can substitute pork with chicken, shiitake or enoki mushrooms, etc based on individual diets. Eating the egg alone might be strong for someone trying it the first time. As a Hong Kong American, I almost never eat the egg alone (always in congee), but plenty of people who love century eggs eat it as an appetizer/snack too! Hope this helps 🫶🏼
    ps. one of my other fave eggs is the salted duck egg! The yolk is commonly used for certain mooncakes and buns, very delish.

    becky! something i do is that after i get home from the grocery store i wash and then pre cut and store my fruit in delis (like if you are prepping) and then it’s easier to 1. eat them 2. see them. also if you wash with baking soda + vinegar in my experience they last longer, don’t know why

    Hearing you talk about children’s books then Vs. now has made my whole day! I’ve definitely seen some books that look like they’re for kids and they’re NOT, so watch out. For example, “Brenda’s Beaver Needs a Barber” is a wild ride. I read online somewhere that a teacher has this in their classroom library and they realized later it was NOT appropriate.
    I’m a first grade teacher and I listen to you guys while I work at home in the evening. It keeps the burn out at bay ❤️ thanks again for everything you create and share for us listeners!!!

    You guys made me all nostalgic for my mother's Dickens village. After I moved out of state it got too exhausting for her to put it all up by herself. 😢 I think my favorite children's book was Harold and the purple crayon. My boys also really loved the poems in where the sidewalk ends. 😊

    Cataract surgery is really easy. I had it done on one eye already at age 43. It is day surgery and I was scared but it wasn't painful at all. The recovery was fairly simple, drops in the eye and a plastic cover over the eye while sleeping so you don't accidentally rub it and that was only for a couple of days. Maybe things are different in the USA but I am in Canada and it was so much easier than I thought it would be. I've had zero problems since.

    I’m a farmer. Eggs have to be refrigerated because they wash the eggs. Once you wash an egg the bloom (invisible protective coating) is gone and bacteria can get through the shell since shells are porous. Unwashed eggs are not porous because of the bloom and can stay unrefridgerated for weeks if not months. To pasteurize an egg it gets heated to 140 degrees F (60 degrees C)

    Eggs have the coating on them that protects the egg's pores (used for the chick to get oxygen through). In the US this is washed off, which is why you MUST refrigerate them.
    Eggs generally have lysozymes for 20 days that protect the egg against outside pathogens, which is why you can keep them outside of the fridge for that time. After that, you're supposed to keep them in the fridge, because salmonella grows spectacularly. It's still advised to keep your eggs in the fridge regardless to make them last longer, in countries where eggs aren't washed before storing. This is because it prevents pathogens from growing or at least slows them down. (according to my food safety professor)
    Cooked eggs can only be kept for about 3 days in the fridge (in Europe eggs or products with eggs are probably the #2 source of food poisoning outbreaks (EFSA&ECDC))

    I work at an eye drs office and cataract surgery is so common. And they can start at any age. LASIK is so fast. You are under the laser for such a short time and then you can usually go back to work the next Monday if surgery is done on Friday. It’s pretty easy recovery. Cataract surgery on the other hand is a lil more complex but it’s got a really good recovery rate and a lot of people don’t have complaints after it’s said and done

    So yeah Century eggs are difficult to make BUT if Becky's looking for an easier egg recipe look into Tea Eggs! They're essentially hardboiled eggs that are marinated in a tea broth and have a really cool streaky pattern when you peel them! Quail Eggs would be a bit challenging but might be a fun party appetizer! (Or charcuterie board item- with or without ketchup! jk lol)

    I've shopped with the stroller like that. But, the typical carseat actually clicks right onto the cart (over the seat part) so that's convenient. I don't think it works on all of them, but most of them. I'm now questioning if you said anything about this because I'm tired, too lol

    Becky, I used to do 1/2 pump of whatever flavor (ie pumpkin spice) if I wanted to flavor my coffee but minimize the sugar. Pro tip in case it helps. Hope you’re all having a good week!!

    Yes, Becky you can just put spices in your cup of coffee, and you can add the spice directly into the grounds as well, but it depends on the spice and what effect you want what works best. Cardamom, cinnamon and nutmeg in coffee are really popular, for example.

    I've had a small cataract in my left eye for 15 years. I was 32 when they first found it. They just monitor it ever year, during my regular yearly check up (I wear glasses and contacts). They treat it like ni big deal. Every time, I ask if its gotten big enough so I can finally get the cataract surgery. I'll be able to see 20/20 for the first time in my life. And they said they would do both eyes. I've worn glasses since I was 5yo. My current contact lens prescription is -10.0. Yeah...I have always had bad vision.

    Just a comment regarding pumpkin wine. Botulism grows in an anaerobic (no oxygen) space and in low sugar. So unless she was keeping that pumpkin in a vacuum it’s HIGHLY unlikely. There are other bacterium that definitely could have been present, such as E. Coli or Salmonella.
    I’ve never seen this tiktok either so I’m not sure if she was just letting it do it’s thing or was actively monitoring acid levels, or where it was being fermented.

    it's kinda funny and nice at the same time, that you all over in the US and I in Germany remember the same childrens' books (like the rainbow fish, the caterpillar by Carle, where the wild things are, and of course the little prince and all that). best for me- while even more for children older than Henry is right now though - are Astrid Lindgren's books.

    1) they do wash eggs in america, and it destroys a bacterial coating which is why they need to be refrigerated here, but I would assume they were pasturizing because they aren't like being opened? 2) ny dad is from Frankenmuth which is known for having like a massive massive Halloween store so we have a Christmas village cos it's extra easy to find them second hand/on sale when you go to christmas town 9 times a year

    Becky went though hell bearing a child, but gets grossed out over cataract surgery. Talk to your parents or older relatives or people you know. It's an almost certainty that one of them has had cataracts. That surgery has become routine.
    Also, visit an ophthalmologist annually, especially as you get older. Cataracts aren't the only eye problems you face as you get older. Glaucoma is a big deal and can blind you.

    Boiled quail eggs with a little salt (put it in a small ziplock bag and shake it), it’ll absorb the flavor and be a nice snack.
    Also - look into kwek kwek! Some quail egg recipes for ya 😂

    I do nightmare before christmas decorations for Halloween and all the way to Christmas.. one year I kept it all year with all the holidays.. only lasted a year idk if I have a good space for it in my new house

    Eggs in the grocery store are washed so they’re clean. Cleaning them washes off the bloom, which is what allows you to keep fresh eggs on the counter.

    I think matt went to an ophthalmologist.
    The drops are for dilating the pupil to look at the back of your eye aka your retina and lens.
    The puff that becky refered to is to check the IOP(intrac occular pressure)

    John Oliver JUST did something on this. So egg products (outside of the shells) are mandated by the USDA and are pasteurized. Eggs in shells are mandated by the FDA and are not pasteurized as a rule. They don't have the same rules. They're just washed to destroy salmonella on the outer shell. We don't vaccinate chickens for salmonella like everyone else, so we just treat the product.

    my mom's fave to read to me was always I'll Love you forever.     I know about eggs! They just wash them. Eggs in shells are not pasteurized. The protective coating on the egg that gets washed off is called the bloom.

    I took a class about how to teach lessons to kids through children's books. The main book we read was called, "Big Ideas for Little Kids" by Wartenberg. I highly suggest.

    Whole raw American eggs are washed to make them look cleaner/more presentable. This washing process is not actually intended to make eggs safer to eat. But, because of this washing process, commercially-packaged American whole eggs must be refrigerated to prevent salmonella penetration of the raw egg.
    Most non-American eggs are not washed. Therefore, non-American eggs should not be refrigerated, as the unwashed coating on the outside of the shell can trap moisture in the shell and cause mould in the egg. (This unwashed coating helps prevent salmonella penetration.)
    Commercially-packaged non-whole American egg products, like liquid egg products, do have to be pasteurised.

    In the UK our chickens are vaccinated against whatever it is that’s dangerous whereas the US cleans the eggs in some way. Eggs aren’t stored in fridges in shops here, they’re on the shelf

    eggs from the store are refrigerated because they are washed which removes the protective layer on the egg that keeps the bacteria out. if you wash your eggs you risk them developing harmful bacteria sitting on the counter
