    To Make Chana Masala
    Oil - 1 1/2 Tbsp (BUY: amzn.to/38KXZQi)
    Chopped Onion - 2 Nos
    Ginger, Garlic & Green Chilli Paste - 2 Tsp
    Freshly Ground Chole Masala Powder - 2 Tsp
    Tomato Puree
    Cooked Chickpeas - 2 Cups
    Salt (Buy: amzn.to/2vg124l)
    Water - 1/2 Cup
    Chopped Coriander Leaves
    Method:
    To make the spice mix:
    1. Add kashmiri red chillies, cinnamon, black cardamom, green cardamom, cloves, nutmeg, mace and bay leaf. Roast them slightly.
    2. Now add the coriander seeds, cumin seeds, fennel seeds, sha jeera, peppercorn and dry ginger. Roast them well on medium flame for 3 mins.
    3. Now transfer the spices to a plate and let it cool completely.
    4. Once the spices have cooled down, transfer them to a mixer jar.
    5. To the mixture jar, add black salt and amchur powder.
    6. Grind it to a fine powder. Chole masala is ready.
    To make the chana masala:
    1. To a pan, add oil, onions and saute them.
    2. Once the onions have changed color, add the ginger, garlic, green chilli paste.
    3. Saute until the raw smell goes.
    4. Next add the freshly ground chole masala powder.
    5. Add the blanced tomato puree and mix well.
    6. To this add the cooked chickpeas.
    7. Season with salt and mix everything.
    8. Add water. Cover and cook for about 10 mins on medium low flame.
    9. Finally add chopped coriander leaves.
    10. Chana masala is ready to be served.
