I make my own great curry masala with 29 spices (sort of a grand extension of Kitchen King). What I don't add in that masala are the Chole specials of pomegranate, amchoor & mint. I came here to pick up tips for the ratios. This was really helpful with that; thanks! I was really surprised how many of my 29 you used; 13 in fact. You don't often see that. I don't count sea salt or tamarind, as I add those while cooking. I use different ratios in my own masala of course, based on my personal taste preferences, but your ratios really weren't that different to mine. Even without making this masala recipe, I know it will be good.
