Basically need small swords to cut a fish that large. They were impressive though, and I love me some good blades. SIDE NOTE: I can't imagine the feeling of preparing a fish that expensive. I'd probably not throw anything away, and try to eat those dorsal spikes too!

In Japan we usually use soy sauce, sake, mirin and some suger (teriyaki like taste) when we sauté fish like you did in this video, maybe you wanna try that someday.
