- The wagyu of the sea. Bluefin tuna is a delicacy unlike any other, and there’s a good reason single fish have sold for north of 3 million dollars. They’re fantastic. Similar to a cow, they have various different cuts of meat, all of which are very different in terms of their colors, textures, flavors, and perhaps most notably, fat content. Today, we got an 132 pound tuna and turned it into a sushi roll. And I was joined by my amazing, kind friend @GugaFoods.
One additional note. I’m a huge advocate for the environment and this includes sustainable fishing practices. Bluefin tuna in particular have a sad history of overfishing from certain foreign fleets. This tuna came from South Africa and, to my knowledge, was sustainably harvested given each country has a certain quota. With that said, I’m constantly thinking about that balance between respecting the environment and providing content you can love and learn from, so I thought it was important to be transparent.

i love this man, a friend of ours is a professional fisherman, and when we still lived close to him we used to get whole yellowfin tunas sometimes, man those where nice, though really hard to butcher. have you tried chopping off the head of a whole 1.5 meter long tuna? we had to get a hatchet. that stuff is good man, so good.
instead of cutting the steaks, if you cut off the top triangle and then cut the rest into halves according to the pattern on the fish itself, you get the nice triangle portion for rolls and the bottom 2 'saku blocks' for nigiri and sashimi

That’s what that phrase meant. We didn’t know that we needed it, but we did.
There are actually a special set of extremely long bladed tuna "knives" (if you want to call them that) that actually have similar proportions to swords like katana or tachi from Japan. The "Kurouchi sakimaru" is one type, but they basically look like a katana with a large sushi knife type of handle and offset. They're made specifically for cutting up extremely large fish. But, aside from some of the large Japanese distribution warehouses, I don't know that I've ever actually see someone that really ever needed one. That crazy as shit man.
And what blows my mind is that this fish is NOWHERE NEAR the biggest tuna I've seen. It's enormous, obviously. But tuna get insanely huge.

In Japan, it is cheaper than other parts and has been eaten by old to yung for many centuries.
