    This is my mom's favorite recipe and it's better and lighter that other cakes I've tasted. Most people make banana bread but don't realize that banana cake is fluffier and moister because there is less flour than the bread batter. Most breads use oil instead of butter. Try this for yourself and you won't be disappointed.

    My roommate in college was from Hilo, and her gramma sent her the most delicious banana cake. I've lost track of my roommate, as it was over 40 years ago, but have never forgotten her gramma's wonderful cake. I'm making this recipe today, hoping it's the one!

    I baked it last night and followed your technique of mixing. Then, baked it on a muffin mold...this is absolutely moist and soft...so good that I had 2 pieces for breakfast and the rest for my visiting family this afternoon.       These aren't parchment paper. It's a type of wax paper that comes in a box

    Thank you! I was confused with people calling it bread. In brazil we have corn CAKE, and they make it savory and flowery calling it "bread".

      I've always called it banana cake, that's what we grew up with but now everyone calls it bread. Pretty much the same.

      1 c butter is 227 g, 1/2 c is 115 g. 1 stick butter is 1/2 c.

      Yes, usually I use my electric mixer cause the Kitchen Aid is too heavy. By hand do you mean actually using your hands? Years ago I had no fancy gadget and mixed everything by hand. Sometimes I use extra bananas and it comes out so moist. I used a double recipe yesterday, used 8 big bananas and it was enough for 10 small loaves. I like it this way to give to friends. Just wrap in plastic wrap.

      The videos don't have measurements. You have to go to my website where pictures and recipes are posted. Look under desserts. The milk is 1/2 c sour milk which you make with 1/2 c milk and 1 1/2 T vinegar.

      Thanks. It's gas but the oven can only hold so much on the top cause the broiler is close to the rack.

      I think anyone my age remembers the good times in childhood. Our kids cannot imagine what it was like because we had no tv, cell phones, internet, all the toys that are so easy to buy. We had to make up games, stayed out just before dinner, walked a lot and didn't have money to buy all the snacks and shop in stores for all the distractions. We wore hand me downs and only had one or two pairs of shoes. I wore uniforms, had to learn to sew when patterns and fabric were so cheap and never bought dresses except for special occasions. Even sewed my prom gown. So many memories and my daughter used to say, Oh mom, you and the cousins talk about the same things all the time. But now she wants to listen because she appreciates learning about the past.

      @@HawaiisPickleLady I'm 74 now and grew up in very poor state, Mississippi, and my Mother didn't bake. Our treat was when we went to our grandmother's house. She would always milk the cow after we got there and we got a glass while it was still warm. Boy was it good. And for toys we played with whatever we could find. My grandfather dipped snuff and would save bottles it can in. We used those for cars to play with. We had hogs, a cow and a goat. We rode the cow, which we got in plenty of trouble for, and got goat to chase us. Did have a radio although couldn't listen to it very often. Mom cooked on a wood store, fireplace for heat, no air conditioning, bathed in a washtub, and the topper was if you needed to go to the bathroom it was an outdoor toilet. They were very hard times for everyone and even those who had more than we did had very little. Sometimes I wish our kids could have experienced that way of life for just one week, maybe they would appreciate what they have more.

      I do have one but I don't always use it and some people are not familiar with it nor can they afford. I started out with no mixer and used to use my hand to mix everything.
