    Hi Helen,
Thank you for sharing your yummy recipes with us. For vegetarians/vegans, other than tofu, mushrooms, seitan or tempeh, what else can I use this delicious looking marinades on? Tia

    • @ModernPepper
      @ModernPepper  Před 3 lety +1

Hi Judy n! Excellent question! Hmm...maybe thick slices of eggplant, squash, or zucchini? Slice them at least 1.5" thick, cut length wise. Just soak in the marinade for 10 minutes at room temperature, and grill on high heat on both sides. Or cook under the boiler (put the oven shelf as close as possible to the heat source) on both sides for a few minutes/until you see some brownish seared marks?

I so love watching you. We just had a whole hog fed out and butchered. I have some beautiful spare ribs that would just be fantastic to fix this way. So glad I seen this video and we have a Green Egg, also. They are the best grill, highly recommend them. We live on a farm in Northeast Arkansas and we also just had a beef butchered, do you have any favorite spicy beef recipes to share I have watched all your videos. I have fixed your Bulgogi several times and it is delicious. Thanks as always. You are blessed.n

👋Hi jenny jarrett 👋. Wow....you must be eating the freshest and sweetest hog and beef🥰. Ok, spicy beef dishes are less popular. Spicy Pork dishes, on the other hand, are SUPER POPULAR in Korean dishes! I mean, I'm just thinking about your hog bones.....turning them into stews! We have this slowly stewed spicy pork bones...I wish I can just come over and cook with your fresh meat.
If I may, I would suggest you enjoy the fresh taste of your beef and pork belly as non-marinade KBBQ with lettuce wrap. You probably saw this latest KBBQ video, czcams.com/video/eJDS1V-4Oq4/video.html I'm drooling thinking about how extra delicious your fresh meat is, compared to the supermarket cuts of meat the rest of us have.
Ok, here is one way to make spicy beef or pork broth soup or stew.
🌶Go to 7:30 of the video and then again to 14:20. czcams.com/video/CrY9GyOTTOQ/video.html
Make the bone broth using pork or beef (you can also add big chunks of meat with bone attached. If you can't get Korean radish, use the small round red/pink radishes (peel the skin off). You can order the Beef Dashida online (go to www.modernpepper.com/store).
(Basically, you can use this pork or bone broth as the base for so many Korean soups/stews). I usually make extra and freeze them into pint-size portions and use it when I make Kimchi Stew, DoenJang Stew, etc...
Here is my Korean soups/stew recipe playlist:
      czcams.com/video/QVZRZTnrAZ4/video.html
🌶Once you skim off the fat layer from the broth, add some of the Spicy Seasoning Sauce, according to your spicy preference. And adjust with salt and beef dashida.
      czcams.com/video/xQR-WNzRiuw/video.html
You can make this as a broth soup OR turn into a thick stew:
🌶Broth Soup: Simple Spicy Galbi Tang (매운 갈비탕)
Add some fresh scallions, and pour in some egg (whisk the egg in a separate bowl as you pour it into the boiling broth), and enjoy with Korean rice. If you have sweet potato noodles (noodles to make Japchae), add it to the broth right before. The noodles will cook in two to three minutes. Once these noodles are cooked, it needs to be eaten right away OR taken out of the broth, if you are planning on eating it later. If you let the noodles sit in the pot of broth, it will get so bloated that you will not be able to even pick them up, and will just fall apart.
🌶To turn it into a stew:
Add only half of the broth (in a pot add the cooked meat on the bone and pour the broth so it fills halfway in the pot). Add the spicy seasoning (according to your spicy preference), chunks of carrots/ potato/white onions, more finely chopped garlic, grated ginger (1/4 amount of the garlic), a few pinches of freshly ground pepper, and let it simmer on low-medium heat (or until the potato is done). If you happen to have any extra fermented kimchi, add a few pieces (less than 1/4 of the amount of meat you have in the pot). The liquid should have reduced to half or close to it. Taste it, and maybe add 1/2 Tbsp of honey to round out the spiciness (but not to make the liquid sweet tasting. You should not taste any sweetness in this stew). If you want to make it extra spicy, add fresh jalapenos about 1 or 2 minutes before serving this stew. Garnish with fresh scallions, and maybe a sprinkle of sesame seeds on top. This dish is made with pork bones (called GhamJaTang 감자탕, also famously known as the hangover stew), usually, the neck bone and you eat the meat attached to it, but use any chunks of meat attached with the bone). I will eventually do a video on this dish, but for now, I hope you can enjoy this with your freshly butchered hog. Enjoy with Korean rice and some cold soju (if you drink alcohol)😉

@@ModernPepper You are so nice to respond to my request. Oh how I do wish you could come and cook with me. Oh my what I could learn from you. 😊😊😊 Thank you for these recipes. I definitely make bone broth with my bones. I asked for as many bones as they could package for us. Our meat is very very good. We are blessed especially with having a farm for our meat. Meat is so expensive now. If you are ever near Arkansas would love for you to come stay awhile. Please continue sharing and teaching us Korean dishes. God is Good
