PINEAPPLE DESSERT - Bonita's Kitchen

- Welcome to Bonita's Kitchen! Today we will be making PINEAPPLE DESSERT. Made with crusted pineapple, whipped cream, butter, sweetened condensed milk and graham cracker crumbs. So Tasty!!!

Ingredients:
Bottom Layer:
3 cups graham crackers crumbs.
½ cup butter or margarine
2 tbsp pineapple juice
Middle Layer:
½ cup butter or margarine
½ can ( 300ml) sweetened condensed milk
2 tsp pineapple juice
Top Layer:
1- 300 ml whipped cream or cool whip
1- 398ml can crushed pineapples ( remove all liquid keep to use )
Method for Bottom Layer:
Line a piece of parchment paper in a 9 x 9” glass pan, then in a bowl add grated graham crackers, melted butter and pineapple juice, mix together, then layer the bottom of the grass pan patting it down, keep ½ cup of your mixture for top.
Method for Middle Layer:
In another bowl add ½ cup room temperature butter, and blend until creamy, then add a little at a time sweetened condensed milk and pineapple juice, start to mix with a blender or a whisk.
Continue mixing until all combined and creamy.
Scoop 6 dollops on top of graham cracker crust, then spread evenly.
Method for Top Layer:
In another bowl mix whipped cream on high speed until it forms stiff peeks or use cool whip.
In another bowl add crushed pineapples and drain totally taking all liquid off before adding to whipped cream mixture, keep to use on the other steps…
Fold all crushed pineapples in with the whipped cream, then scoop over the top of middle layer and smooth out evenly.
Then remainder graham cracker mixture, sprinkle over whipped cream and pineapple mixture in the grass pan, let set in fridge for 1 hour or over night.
Serve:
Cut in medium or large pieces and plate. Enjoy!
Adjust recipe for a bigger 9 x 13” pan dessert, 3/4 cup butter, 6 cups crumbs, 1 can sweetened condensed milk.

hi Bonita, this is Sue, this looks yummy l am going to have to try it, But l make something simular, l call it my Pineapple fluff,, 1 small can of crushed pineapple with the juice, a pack of vanilla pudding, mix together, when mixed good, add one cup of whipped cream and fold that in. chill and serve. But l bet it would be nice over the graham crumbs. l am going to try that the next time l make it.

This looks absolutely delicious. I have to make this. I have a quick question. I got a recipe for chocolate pudding from my mother-in-law using Knox gelatin. I have no idea if you cook it or not. She’s passed away and I just don’t know how to make her pudding, do you have any suggestions on how to use the gelatin to make chocolate pudding thank you so much! The recipe only lists ingredients, not the instructions
Mix the gelatin with 1/2 cup of your cold liquid and let it sit. Mix your other ingredients and microwave on high 5 to 6 minutes. Now add gelatine mixture and stir well. Cook 3 to 4 minutes more. Pour into serving dishes and refrigerate until set. (Can use stove instead of microwave too)
