Today I’am making Kinema ko tarkari (Fermented soybeans Curry)which is ethic food of Rai’s and Limbu’s.
It is sticky,stinky pungent smell and unique fermented flavour.
The common word kinema is derived from “Kinamba”of the Limbu dialect in which’Ki’ means Fermentation and ‘Nambaa’ means Flavour.Thus it is assumed that the Kinema originated from Limbu communities,who reside in the eastern Himalayan region.
Ingredients for this Recipe
Fermented soybeans 300 grams
1 big onion
2 medium tomato’s
2 inches ginger
5 cloves garlic
5 fresh chilli
30 ml mustard oil
1 Tbs chilli powder
1/2 tsp turmeric powder
Salt according to your taste
Coriander leaves for garnish

I just recently came to know that Nepalese and Japanese fermented soybeans (natto in Japan) were very similar, and so I tried recreating your recipe over here across the sea :D delightful taste and really easy to make!! This is definitely going to be a dish that I will make many more times in the future.

Was that ‘gilo’ kinema or dry soaked one? I was shocked at the amount of salt added, a sure fire recipe for high blood pressure! Salt can always be added later to suit individual taste 😱

However, it always pays to be aware of health issues linked to salt in diets. BTW, did you use gilo kinema for this video?
