      I was such a fan of you, but god this is DISSAPOINTING. You really should research Israel and they’re genocide on Palestinians. HUMMUS is NOT ISRAELI. Israel not only has killed countless of Palestinians and stolen land, but have also stolen their culture food etc. After World War 2, “Jews” were sent to Palestine where they began to attempt to wipe out (and still do) the Arab Palestinians. All because their “god” has told them that the land belongs to them. This issue isn’t what the media tries to portray, a “war”. Palestinians are not only Muslims but Christians and Jews as well. I currently live in Palestine and the horridness around me from being occupied by Israeli zionists is terrifying. I can’t walk down the street without the fear an Israeli soldier may shoot me just for practice, arab Palestinian pedestrians always run the risk of being ran over by Zionist citizens. People are being murdered, kidnapped, schools are being bombed, houses raided, streets blocked, people being kidnapped and tortured, towns have curfews. All this while people travel to Israeli touristy cities and eat Palestinian food, enjoying the weather and vacation while people are suffering just behind that bordered wall. (which was Palestine beforehand) it’s like saying you went to Nazi Germany and was proud to be there while Hitler was conducting genocide.

      I have been living in Israel for 30 years and was surprised she didn't top with cusbara, I mean coriander. Also, for those who are Iraqi or descendants of Iraqis, be careful while eating "fool" (fava beans) as many Iraqis are highly allergic to fool.

    This makes sense. Many people say not to add salt to beans when you cook them because it prevents them from being soft, however it’s been my experience that it’s acid that prevents them from being soft. For example I never add tomatoes to beans until after they have cooked. I did get confused about adding baking soda to the soaking of beans though because when sprouting, plants like a slightly acidic environment but now I understand why.

    I used your tips (instant pot cooking method with onions and bay leaves and processing the garlic and letting it sit in the lemon juice) and integrated it with my hummus recipe that I had already made and it was AMAZING. I just add a lot more lemon juice and cumin, and today I put in some parsley from my garden and it was so good. Thanks for this video!

    BEST hummus recipe EVER! Ingenious with the baking soda! Soooo soft! I would definitely recommend sprouting the garbanzos for max nutrition. Super easy, ramps up the nutrition to the highest heights! I pureed the cooked onion with the cici, more fiber. Because the beans were sprouted and softer beside the baking soda softening them, I did not use any of the cooking liquid. I also cut back on the tahini, only used 2 Tablespoons. When it was hot it was super soft and as it cools down it firms up and is so velvety, yumm!

    Love this recipe! I like a spicy hummus myself and my recipe comes from a Moroccan lady, so definitely a different flavor. BUT I never ever thought to soak my chik peas so THANK YOU! I like to add cannellini beans for a large batch which works pretty well to smooth it out too!

    I used to go to Bali every summer for many years back in the late eighties, early nineties...SUCH a great place.     OMG, I made this last night and it actually worked! I used to soak the chickpeas in plain water and then boil them with sodium bicarbonate but it didn't make that much of a difference in terms of their hardness. Let me tell you, last night I was shocked at how soft soaking them in sodium bicarbonate made them! Plus the combination of ingredients... turned it into the best hummus I ate, not even those I got from a store could even compare! So THANK YOU for the recipe!

    That garlic/lemon juice/tahini concoction is a version of garlic based mayonnaise.
    It's a recipe that is vegan and the garlic takes the place of egg. Tahini is high fat so replaces the oil.
    That step makes an ultra delicious mayonnaise.
    And bean juice proteins fluff up and go creamy with beating - check out vegan marshmallow fluff.
    No wonder this hummus is amazing - it's mayo and chickpeas! It's great food science.

    Question: Have any tips on how to avoid this??? I made the beans in the Instantpot according to your website recipe of this hummus (10 minutes with 15 minute natural release) and my beans were total mush, no bean shape at all, looked like they blew up. Luckily it was for hummus, but they definitely did not look like yours in the video. My chickpeas also looked slightly smaller than yours when dry so not sure if that is the reason or not. Followed your printed recipe to the T. Tasted great when made though, super dooper smooth, delicious!!! Thank you for your help...

    This hummus is delicious, I use this as a mayo substitute, base for salad dressings, spread on sandwiches and wraps, dip with vegetables, dollop on beans or soups...scrumptious, I do 1 1/2x the recipe when I make it! My beans are definitely more mushy than yours when I open up the Instantpot, I don't know why, but it has happened twice. Doesn't matter though, it all gets blended. Thank you!

    Looks so perfect! I’ve used most of those tips except for the baking soda, and it still made a lovely hummus that looks similar to yours. I didn’t use baking soda because some sources say cooking with baking soda reduces nutrients in the beans. I want to try just for fun once but I always think nah, I’ll just skip it and save the nutrients 😆

      I make a big pot of chickpeas because I also eat them on salad. Once they are a good texture for salad, I remove what I need for hummus and add them to boiling water with just a bit of baking soda, say 1/4 teaspoon. Within a few minutes they are very soft and ready to blend. You can use the aquafaba from the original pot, so you aren't mixing baking soda into your hummus. My hummus turns out super smooth.

    This hummus recipe is delicious! I love that it's so healthy and that I could make it over a few days if I need to, with the initial steps happening while I do other things. Day 1 I soaked the chickpeas, in the fridge. Day 2 I cooked them on the stovetop & saved the chickpeas & liquid (separately) in the fridge. Day 3 I finally had time, a couple couple days later to put it all together. Turned out so light & creamy. It makes enough to take to a party and still have a good amount left for myself.     I’m drooling 🤤I’ve never made homemade hummus like this but I will say I always add cumin! I watched a video years ago and they used cumin and I basically don’t care for hummus without it. If you’re too lazy to make this Trader Joe’s organic hummus is delicious and has cumin in it, lol! Definitely going to make this though 🌱🙌🏼

    The only thing I would do differently is to remove the scum from on top of the liquid after pressure cooking. I have found with this can contribute to bitterness or aftertaste with chickpeas or pulses.

    Interesting! Yeah once I did take the skins off of canned chickpeas and it was a pain! But it is true it does make hummus very oddly smoother than it would be if the skins were left on, again using canned chickpeas. There is a science behind it actually as per test kitchen. That being said I hated the texture! It was weird, it was almost like air and sour water. I am glad to know you could still get smooth hummus even with the skins. I prefer the skins! Interesting too about not adding olive oil until the end. This is a win for me since I try to avoid oil, I’ll have to try this method using fresh chickpeas. Best👌🏼

    Haha I'm from Israel and hummus masbacha and ful is on the menu of pretty much every hummus place. I really want to eat at Abu Hassan now though.
    Another tip is to use small chickpeas (like you did), some varieties are bigger and are better for stews rather than hummus. And yes, cumin is always added, and olive oil only on top. Your hummus looks incredible.
