    As an Arab guy having lived in Lebanon and Syria for 20 years, I have to give you props for your solid falafel recipe - very authentic! It's also often called a falafel "paste" before it's fried. Eid mubarak all, and congrats on your engagement!

    I don't plan on cooking many of the dishes in the Basics with Babish series, not for a long while (I.E. when i have my own kitchen), but these episodes are super comforting for someone who struggles to try new foods.
    I'd always avoided Falafel because I had no idea what it was, same for hummus, so having a full recipe video that breaks it down beginning to end what it is is incredible. I actually feel like I could make that leap to try it now.

      @@uglyndumb7858 It's not that they're not delicious, it's just like American Chinese food. Yummy, but not how it's actually made in its culture of origin. Therefore, differences in flavor and texture. Honestly, I've made the "correct" versions for a lot of my American friends and a fair amount of times they don't like it because the textures and flavors are so different from what the western world eats that the westernized versions of the food are more delicious to them (totally fine by me, they didn't grow up eating that food so I don't hold it against them).

    I started air frying my falafel(using the ingredients and techniques from Yotam Ototolenghi- besides the frying) these days. It’s 👏a👏game👏changer👏🙌 I highly recommend it if you can’t be bothered frying it in the pan and cleaning all the oil.

    Here’s a trick for you, my mom always adds a little bit of baking soda in the falafel paste and mixes it before frying, they are fluffy and not as dense. The hummus is perfect 😍

    I wouldn't even use canned chickpeas for hummus, honestly. They're simultaneously gummy and gritty. You're much better off using dried chickpeas for everything. Re: I'm Lebanese and I've made a lot of hummus and falafel

    I got my hummus recipe from my best friends dad, who is Lebanese, and the homemade stuff tastes amazing. It's not traditional, but I also add cumin, parsley, and oregano to my hummus. Try it, it takes the hummus to a whole new level!

      Not really. He usually butchers middle eastern recipes. He was fine until he overpowered the falafel with dill (which doesn't belong in falafel). Also the hummus he made is very thin with way more tahini than it should have.

    you can avoid some/most stickyness if you put the oiled sheetpan in the oven to heat up for a few minutes, before adding on the patties. works with potatoes at least

    It’s “falafel dough” as translated from Arabic. I would at least double the parsley amount. A better falafel is distinguished by the bright saturated green colour inside instead of a dull yellowish green. Another sign is the coarse outside surface instead of a smooth surface- which can be affected by the amount of baking powder and overworking the dough when forming the balls. Using a falafel mold with auto release is preferred in professional authentic restaurants in the middle east. Sumac was missing in your spice mix. A better tahini base is usually lighter in color- a sign that the seeds weren’t over roasted or burnt. A small amount of cilantro is used by some falafel professionals alongside parsley. Mint and dill similarly have a sporadic presence. Adding onion and a small amount of fresh Serrano pepper is somewhat essential. I’ve seen these small inaccuracies in falafel recipes throughout the united states. Let me know if you find this helpful:)

    Thank you, Babish! Just made this and it was great! My falafel mixture wasn’t holding together after processing- it was a little wet. Maybe I didn’t let the chickpeas drain long enough? A few tablespoons of flour helped. I’m so grateful for your video! :)

    Our trick is always to let the paste sit for about 30 minutes before forming it. The starch starts to come out and makes it slightly sticky to hold together. I dont know when or why I started, but I usually make mine like a large tatter tot. Also a friend clued me in on the best way process the chickpeas: meat grinder. We only ever use it for falafel but it makes it perfect. Food processor is way more accessible though.

      it is a combination of visuals, and sound
      the video doesnt stand out a lot in terms of colors, has a nice colorscheme that is very calming, his voice is consistent and fits in the foreground very well, and the music in the background adds some very needed background noise

    The streetfood to go in my town is the falafel roll. About $4-5 for a bread roll stuffed with a couple of falafel balls, lettuce/red onions/tomato, maybe some pickle (it varies with the place you go to), a mixture of garlic sauce and hot sauce, and a fuckton of cilantro. Some places switch the roll out for a more Pita-like serving in Iraqi Samoun-bread, and if you want hummus, feta, grilled aubergine or anything it's usually about a dollar-worth extra.

    One tip: squish the balls a bit from one direction before frying, gets some cracked edges that play very nicely with deep frying and gives you some texture contrast
