The babka recipe that I learned from my grandmother has a cinnamon merengue as the filling and the yolks in the dough. I have never seen it done this way by anyone else, making it a family mystery.
My family recipe also includes a meringue... and dates, crushed pineapple, and cinnamon. We also don't cut it in half like he did, just cooking the rolled up dough in a ring pan. I also haven't ever seen a matching recipe.
@@mith59 yes, we also don't cut it in half. We just do nuts and raisins in the meringue. There is a streusel in the recipe that no one ever makes, and the recipe is for a circle bundt shape instead of a loaf
@@mith59 well, to be fair i dont think the "cutting it in half' is necessarily part of the recipe, that's more of a "gotta get that sweet sweet cross section"

I had thought up a mayo and garlic butter paste but your idea also got me to thinking I could add parmesan to the mixture to add some cheese to it.
So today, the same 12 year old who I posted about recently, invited his friend over to have a dude baking day and they are making the cinnamon babka version. I began baking during the pandemic (as did most of the world, it seems) after finding your channel and it allowed me to find peace and purpose in such an uncertain time. I ended up even starting an at home business where I sold different types of bread all through last year whether it be special orders from home or two times a week at local markets. Pretty much all of my menu (babka, bagels, focaccia, etc.) is influenced by your original videos that I had found close to a year before. You helped me take so much of my negative energy and redirect it into something I never could’ve dreamed about. Thank you so much for everything that you do and for inspiring me and so many others!

For us Polish folks, you REALLY need to make some Pączki
Tip for slicing rounded dough: dental floss. Cut a length and garrote the dough where you want the cut. The floss is thin enough to slice cleanly, and the pressure is even enough around the dough not to deform it. This is very useful when you are making, say, cinnamon rolls out of one roll of dough.
Would clean cotton thread work the same?

while it's a bit thicker, I was taught to use a piece of butchers thread/ twine/ string whatever. I think because it's made with food use in mind?
edit: I never said dental floss was bad and yea I know it's safe to go in your mouth. I was just offering was told in a cooking class. maybe someone only buys the flavored floss and wondered about alternatives? idk floss is fine too, go nuts

I’ve found that you really have to roll it out nearly paper thin if you want a ton of layers, and because of this you also have the thin out the cinnamon mixture with a lot more butter. It’s tedious and messy and very hard to cut and twist perfectly but once it’s baked it looks and tastes so beautiful. I use the NYT chocolate babka recipe for the dough and just throw together a cinnamon/sugar/butter mixture by eye

Fun fact: In Poland traditional, Easter pie is called „Babka”. It is dry, usually lemon pie which is baked in bundt pan. It is surprising that in the US completely different cake is called the same.
Seems like a regional thing. The Easter babka marmurkowa (which seems directly related to the German Sandkuchen) is indeed different from the one in the video, but I’ve seen chałkas (which this one looks closer to) being called babka drożdżowa as well :)

@@alissa6 Qatari culture has huge overlaps with Muslim culture, because Islam is native to Qatar. Jews are native to Israel, not the US (despite what Mormons may believe), and our cultures are entirely separate.
Fun fact: babka in its original is supposed to be “paraev”, which mean none dairy or meat in Hebrew. Real babka is made with shortening or margarine.

I made a pesto babka about a month ago and it was a massive hit! I love babka-style loaves, there's so much you can do with it. The possibilities are endless, and they're almost always a hit!

I've made the Martha Stewart recipe babka before, it has chocolate, cinnamon sugar, and strudel. Its delicious, even if you have to halve the chocolate in the recipe because it's too rich. Thank you for showing me a recipe that is a bit less... martha stewart. I might actually be willing to attempt this more than once a year.

I've made the babka from your Seinfeld special once a year since it came out. This new video looks so much easier and more consistent. Can't wait to try this way now.
This is beautiful and I can't wait to try these recipes, especially the savory version. One thing that popped into my mind when you cut into the savory babka, it would have been nice for the swirls to have been more visible. I wonder if you could use a food processor for the spread, and add in some green scallion tops and/or some fresh parsley to get a green color. That way you can really see those layers and I'm sure it would taste great too.

Saving this to make at Easter for tea or coffee after dinner. I'm Polish & Ukrainian and growing up we always had babka for Easter, but I'm starting to think it was actually Ukrainian Paska because it wasn't too sweet was huge, round, and sometimes had cheese. It was store bought from a place on LI that's probably been gone for 20 years, so it's not like there was a recipe to check and my family's passed so I can't ask anyone. Thanks for reminding me I still wanted to try and make what we used to have.

550g all purpose flour
2.5tsp yeast
2/3 cup of warm milk
2 large eggs
55g granulated sugar
2tsp salt
1tsp vanilla paste
140g unsalted butter
I've been practicing with babka since October or so. My family's and coworkers' favorite sweet variations have been apple cinnamon with walnuts, or pumpkin pecan. They are both very tasty and not quite as rich as chocolate
I've seen this particular episode at least a dozen times thanks to my 3yo and finally made babka with her today. Definitely let it cool before slicing but otherwise it's pretty tasty and the other siblings approve of it too

I'm always impressed by Andrews style.. that coffee cup at the end of the video with the handle that goes all the way up to the lip was clean. Interesting, the babka I’m used to having is a sweet yellow bread with golden raisins in it. I didn’t know there were other versions.
There is full chocolate version, half-half as well as the swirly one and the plain vanilla/lemon raisin one you mentioned!
Chocolate babka is the best of them all
I recommend making one with poppyseed jam/paste.
My husband's grandma's recipe has golden raisins too, as well as lemon and orange zest. Neat to see that there are others who are used to this version as well.

That said, cinnamon and fruit jam are the traditional fillings, with chocolate being a later development. And none of these hold a candle to poppy seeds, the best filling now and forever.

My mom started to make babka last year and keeps making it. Every time she makes it, it looks more out together. My brother also has been making bread since the beginning of Covid

Chocolate babka is amazing
For the savory one, the lack of swirl is disappointing after all that work. I'm sure it tastes awesome but do you think an extra sprinkling of black sesame seeds or poppy seeds over the cheese mixture would work to make a dark line for the swirl? Or something else?
i'm not 100% sure what's in 'everything bagel seasoning' but my instincts are telling me to use pumpkin or sundried tomato/pepper paste
@@KairuHakubi The tomato isn't a bad idea at all. Pumpkin would be a no for me though it might appeal to someone else.
The bagel seasoning is usually poppy seeds, white sesame seeds, black sesame seeds, dried minced garlic, dried onion flakes, and flaked sea salt.

The swirl is there, it's just not as visible. Probably looks better irl. Also... it could look cool if something was added to the dough to make it darker so the white pops a bit more.

Its strange I didn knew this kind of pastry is in US too, we have it in everysupermarket and my grandmother used to bake it quite often. Funny thing is that Babka means grandmother in my language.
