The Hillbilly Kitchen - Perfect Pot Roast

  • This recipe will work with any beef roast. You can use any carrots and potatoes, but the baby carrots and new potatoes taste better and cut down on preparation time and effort. I usually prepare 8 ounces of beef per person, and 6 ounces of carrots and 6 ounces of potatoes per person (per-cooked weight). I always use yellow onions and you can add more or less to taste. You will also need salt, pepper, garlic powder or fresh garlic, Worcestershire sauce and cornstarch. I cook the roast slowly and for a long time which makes it very tender, at least an hour per pound. If you are making a smaller or larger roast adjust the corn starch. A little corn starch will thicken a lot of liquid. So when you are making your gravy add your corn starch/water mixture slowly and stop as soon as it starts to thicken. Over time you will learn exactly how much you need. If you get it too thick you can add a little water to thin it, but don't get carried away or it will lose flavor. Also if you need to prepare part of it ahead of time you can cook the roast to the point where it is ready to add the veggies the day before your dinner, but if you do this put the whole pot in the fridge because you will want ALL the brown stuff in the pan to flavor the veggies.

    I love your recipes because they are like my Mama’s cooking. She grew up in the the Kentucky. Worked in the fields and then did all the cooking as a young girl for her family. She was saved at a very young age and like you shared about Jesus to everyone, even when she was in a nursing home at the age of 92.
    I just watched your CZcams about “Go Back Home” it made me cry because I was so touched. Thank you so much precious lady. You are doing a wonderful job in your ministry.

      I still cook for a big family, just a different kind. My kids are all grown and out of town, & my husband passed away a couple years ago. I take out enough for a couple meals for me and take the rest to my local Fire Dept and Police Dept. I can tell you, they Love me for it and keep me safe and sound.

    In the past, I had cooked my pot roasts in the crockpot or in the oven. I never dreamed that I could make a no-fault roast on top of the stove! I bought a cast iron dutch oven and all of the ingredients just to prepare this and let me tell you! It was the best I've ever made! I'm a 57 year old mother of three grown sons and grandmother to three grandchildren who absolutely love my cooking (I'm no slouch in the kitchen). My husband and my youngest son absolutely LOVED the pot roast, carrots and potatoes made this way instead!

      I wash the dishes as I go even when cooking Thanksgiving dinner. People are amazed that I don’t have 2 sides of a sink full of dishes. It’s just easier than doing a million later after the food is caked on.

    OK; I'm blown smooth away! I'm 62 years old, and didn't know that you could cook a roast on TOP of the stove! I thought you had to roast it in the oven, or maybe cook it in the crock pot. This is so great! Thanks for sharing with us!

    I appreciate your comment that your family doesn't like rare pot roast. I was not raised on rare meat of any kind, and my mother, grandmother and aunts were great cooks. You cook like I was taught.

      Well IMHO Roasts should not be rare. steaks absolutely but no, not roasts. If you’ve never had a proper medium rare steak, I encourage you to go to a steakhouse and try one. the explosion of juiciness and flavor in your mouth will have you hooked.

      @@cindylubin4204 tell me why, because I’ve not eaten rare prime rib yet, to be honest, that I felt had a good flavor. Whether at steak houses, restaurants, or home cooked. All of them were flavorless to me. I finally got tired of paying big prices and stopped ordering.

    My mom used to put a roast in the oven before church and when we got home the aroma filled the house ... yum! Course she had potatoes carrots onions and then .... gravy! No one has ever been able to duplicate her roast!

    Once thing I learned to do when I was young was to cook. This pot Roast is the best pot roast ever, never thought of adding mushrooms or cooking the Veggies like she did but now I make it the same way. Just sit back and imagine seeing Grandpa Jones in the window...You are a great cook...

    I'm so enjoying your videos! One thing my Mother taught me about cooking a roast-- if it's really tough add a cup of brewed, black coffee to the pot. The acid in the coffee will tenderize the meat with no coffee flavor!

    Been quite a while for me here. I love good southern cooking, but man did I get thrown off my game when they diagnosed me with Diabetes Type 2, Insulin Resistant. It's been a long 1 1/2 years of research and I'm still learning. I'm not getting the diet/nutrition side much at all from the doctors, so I'm having to do my own research to learn about the macronutrients in our food, plus discover for myself what one says doesn't spike blood sugar at all that it actually does spike mine. I miss that old simple life. But, I'm back. I'm 62, and just want to eat good food, period. That's it. So glad to be back here. I hope you are well after your loss. I've been there myself.     You and I cook so much alike. The only difference in cooking a roast is that I flour my roast and brown it then start the cooking process with water. About 30 minutes before the roast gets done, I add the veggies and let them cook. The flour helps make the gravy, but I still have to thicken the gravy more. Love your videos. So glad I found you on YT.

      Yes, the whole world is complaining of the loss of a homey feeling and lack of ethics, yet they still attack Christianity. I can see why they have issues with false Christianity, but that’s hating false colors, a false flag. It’s hating the enemy of Christianity. Real Christians had no part in things like the Crusades and Inquisition and witch trials. They don’t torture and kill, nor do they bash people upside the head with a big book.     I tried your Salisbury steak recipe and I just love it. The only problem I had was I could not find Worcester sauce here in Jerusalem (Israel) so I found a recipe on line for homemade Worcester sauce - not half as good, but passable and the resultant recipe was actually pretty good. I can only image that it would have been perfect if I could have found the Worcester sauce.

    Just like my mom use to make! Your recipes are user friendly and remind us of what good nutritious food was like before a generation took over to tell us not to eat meat or drink milk. My grandmother lived to be in her nineties eating and drinking both!

    The Lord is so good and has been so gracious through the years. Thank you for your Christian testimony and sharing these blessed memories with us all. My mother, a Kentucky girl, cooked just like this for our family of nine, we never went hungry and just like you she cooked the most amazing simple and wonderful meals. I can still see her blessed face glowing with joy as family and friends demolished 2 large stuffed turkeys and all the Thankgiving side dishes that go so well together on Thanksgiving day. My cup runneth over! You remind me so much of her. She was a treasure in my life as you are to your family. God bless you all and thank you again for the precious memories. I'll keep on watching!

    I've been eating like this all my life. I love to cook and have been sharing my own recipes with friends on FB. From now on, when one of my friends ask me about recipes I'm doing, or have done, I will refer them to your website.       +marty brentlinger I call my husband's belly, my cooking trophy :) I think this food is much better for you cholesterol than fast food. Last summer the garden did really well, so I had him eating a lot of fresh stuff and his cholesterol actually came down to normal. If you can add some tomatoes, cucumbers, salads and fresh fruit it will fix that problem fairly fast. Comfort food is real food and I just don't think it is bad for you. I have changed the kind of oil that I fry in, but I think the taste is actually better. I know real butter is better for you than synthetic margarine. So I say eat real and eat hardy :)

    We had it almost every weekend, either Saturday or Sunday. Reminds me of both the delicious taste, and my parents. Payday, I'm getting some! I may even use my cube steaks like they were a roast, and do it now.

      No Worcester sauce, hate the taste, my only change. I do prefer a roux gravy verses cornstarch for pot roast, but cornstarch gravy is quicker.

    Am I the only one who adds celery, leaves and all? Adds an additional yummy flavor! and sometimes, some wedges of cabbage! Also a little tomato juice or tomato paste give it a tiny sweetness that makes it over-the-top!

Some will never know what it's like to have both parents working, get you to and from school not to mention everything else!!!! I'm soo thankful to understand and try to walk the same line!!!     I use a slo cooker , wash all my fresh vegetables I don’t trust when it says pre washed that’s how one would get sick 😷, the Ivy plate is beautiful I have a set of them use every day!!!
    After I ski cook 👩🏻‍🍳 I take out the roast and make my gravy .

    I love where it says gravy is considered a beverage ! Yes ma'am ! I am a gravy fanatic. I love it with mashed potatoes but I'm really partial to gravy on rice. My favorite cut of meat has always been a boneless beef rump roast. I'm sitting here watching this with my mouth watering. Miss Becky, you're an inspiration to me with your cooking and your faith.     I am fasting intermittently - one meal a day in the morning - but I find watching this before I go to bed really comforting and brings back great memories. This is real comfort food ideal for cooler weather.

    One of the best investments I ever made was a cast iron enameled 8 qt. Dutch oven. They are heavy but it's the only pot you'll ever need for big one dish meals. Great for searing meats and slow cooking. You can use them on the stove in the oven or on a grill. The heavy lid is perfect for making tough cuts tender bc no steam escapes. It also makes a great deep fryer and roasting vessel. The bigger they are the more they cost but you'll never have to replace it and it can be passed down. I have a small frying pan from my grandmother that's over 100 yrs old. A 120 dollars may seem like a lot for an 8 qt. Dutch oven but it's worth every penny. Great recipe but I kept thinking she's gonna need a bigger boat ( pot). lol :o)

      +Tonithenightowl :) That pot was brand new and it is a little smaller than the old one, so of course I made the same amount of roast. Samantha has a couple of the enameled coated cast iron Dutch ovens. I have a set of cast iron pans and an uncoated Dutch oven that I have had forever. I told somebody last night that anything new I get for my kitchen is a gift for Christmas, Mother's Day or my birthday. So thanks for the Mother's Day idea :) It is time to upgrade and I love the cook wear that will work on the stove and in the oven and that lasts forever!

      +The Hillbilly Kitchen - Down Home Country Cooking I hope come Mother's Day you get one. I have a ridiculous amount of cast iron but to me there is no comparison. Ever try a fruit pie or meat pie in a 10 inch cast iron skillet? You'll never make it in glass again lol. They are also great for deep dish pizza. I have two low sided skillets I use as a panini press. I have a 14 inch cast iron pizza pan so I don't need a pizza stone. I love my regular cast iron ( like a camping one) dutch oven bc it makes the best roasted or home fry potatoes in the oven. What the hell I'm going to do when I can't pick them up anymore... I don't know lol. Hubby never gives me any shit either and he always cites, have you seen her collection of cast iron? LOL Love your channel. I love down home cooking, it's all I know or care to know.:o)

      Tonithenightowl I always bake my meatloaf in a cast iron skillet, but I never thought about using one for a pie. I also know they are good for pizza and keeping the husband in line :)

      I will totally agree with you on that matter. For a long time I just had a iron skillet, that I still use today, and wouldn't trade it for nothing. My brother-in-law bought me a "Lodge" 5 quart cast iron dutch oven with a cast iron lid for christmas last year. I don't think I could have got a better present than that, it's wonderful and I just love it to pieces. Cast iron is a wonderful investment to make, just take care of it and it will last you a lifetime.

    I was so shocked when you poured that corn starch mix into your vegetables. I've never seen anyone make gravy that way. We always poured the liquid off and did it in a frying pan!! It looks delicious tho. Thx

      My mom always made roast gravy by adding cornstarch and water or flour and water to the broth and letting it cook until thick. Simple and so good.

      By pouring the liquid out the pan you literally poured all the flavor down the drain. Oh goodness don’t ever do that. Keep everything in the pot. You can also use the liquid from the pan to make your cornstarch slurry. I never mix it with water.

    I make my pot roast in the pressure cooker. Been doing it like this for 50 years, just like my Mother did. It always turns out so tender and delicious. Mine looks just like yours but it doesn't take as long to cook it. Nice video!

    Ironical: The Rifleman was on my TV while I watched this. I'm the cook in the house, wife works, I'm a disabled former Deputy. I love cooking....love this Hillbilly Kitchen. Country people from the Mid West cook alot of the same things and ways. The only thing different I do is add Kitchen Bouquet after browning the meat. Makes the prettiest gravy ever, taste fantastic. We use corn starch also! Love this channel!
