      People make snide comments about the portion sizes in the US, but that's because we don't feel like we've gotten a good value for our money unless we can take enough leftovers home to have at least one and sometimes two additional meals 😁.

    Brisket is a very tough meat, but when it is cooked "low and slow" for most of a day, it becomes tender anf juicy.

      Bricket comes from the breast-plate - the 'chest' of the cow. There are Good Beef Cattle and Not-So-Good, by the way. And the Not-So-Goods are still worth devouring.

      I find it funny how western people figured out to eat the very tough brisket part of the beef by low and slow long cooking process, which is quite difficult and time consuming... But the Koreans and Japanese have figured out a totally different and much easier way to consume brisket,... Just cut it paper thin and slightly grill it or dunk it in hot pot,.. Which anyone who had Korean bbq or Shabu knows that distinct brisket taste.

      Plus, Turkey is a must-have staple for Thanksgiving dinner here, so it makes sense we'd generally prepare it better, since we'd have more experience with preparing it. And Turkey is a fairly common sight where I live too. I've literally seen groups of wild Turkeys wandering right through our backyard on more than one occasion.

      It's easy to overcook turkey if you don't know what you're doing. Then it will be dry and blah. Properly prepared turkey is fabulous! Just as properly prepared chicken is. Smoked turkey or smoked chicken are incredibly delicious.

    Texas style smoked brisket is one of the most incredible things you can possibly eat, Texans are masters of this cut. The only other cut I like to eat, is Tri-tip, and most people hate that cut because the grain divides into 3 directions, while excellently cooked brisket is practically an art form.

      Tri-tip is a FABULOUS cut. I grew up on tri-tip, in just a little area of California, and no one else from outside of my city knew what it was until I moved to Texas. It's amazing cooked right. Medium rare tri-tip is the best.

      Terry Blacks isn’t even top 5 in Austin… it’s a knock off version of Blacks Bbq in Lockhart tbh… now Franklin Bbq, La Barbecue, Leroy and Lewis Bbq???? Those places change you

    I'm from a region of the US known as the Appalachians. We're distinct from "the South" but also very similar. We have many of the same cultural trends but also are very different. One of my favorite traditional forms of barbecue stems from Cherokee native Americans. Instead of local beef (since there aren't a lot of beef cattle raised in the region) we use hogs, wild boar, or deer for barbecue. We smoke and barbecue the roasts and take the tougher cuts in thin strips to marinade and dry into jerky. Some people don't care for deer but it might be my favorite meat. When prepared correctly, it's a tender, flavorful meat that would remind you of a beef pot roast. While it might be blasphemous, I've only had South African biltong once and I think it was just as good as our deer jerky back home. Early South Africans share a lot of the ethos of the Irish, Cherokee, and Dutch who colonized the Appalachians. Very hard-working people who adapted to a new land and helped to shape a new food culture by mixing together their old ways with new ones.

      I've never had Venison before, though given the chance I'd certainly be open to trying it. I believe both of my parents have had venison before, and I know for certain that my aunt, uncle, & cousins have, as all of them either used to or still do hunt. I know my cousin even bagged a bear once while out hunting with my uncle. I grew up in upstate NY, but I've lived in the WV panhandle for almost 10 years now.

    If you go to Texas for BBQ.. you still should have a taste of smoked BBQ turkey! it is not dry at all and smoked turkey has a smoky taste that is different than regular roast turkey. My dad had a smoker grill where he would smoke turkey for special occasions.

    In the states we have something we call a doggy bag. You eat till you're full, not till you're vomiting everywhere, eat till you're full and take the rest home with you. We also have surf and turf but not so much in our BBQ joints.

      @elvenmagick Never seen catfish at a BBQ place before but ok. That definitely doesn't mean that there's not a place anywhere in the country that has it on the menu. There's weird people in all walks of life, so I guess there could be a weird BBQ joint owner with catfish on their menu... 🤦‍♂️🤷‍♂️

    As an American I can only say how incredibly lucky we, as Americans, are to live in the United States. Tens of thousands of restaurants, shopping malls that are bigger than international airports, an unbelievable health care system, amazing universities and the most incredible sporting activities the world has ever seen. From Fishing, hunting, music and theater to college and professional sports such as NBA, NFL, NHL, MLB and MLS, we have such an overload of leisure activities that it is just mind-boggling. What so many in this country have forgotten is that this country was made great and was built by people seeking a better life from every corner of the world. The USA would not be the USA if it were not for amazing people from all walks of life coming to this country and contributing. I often wonder how anyone can visit the States and not have a strong desire to stay. If not for themselves... then for their children.

    Texan here and I had never tried the dino rib at Blacks til about 2 months ago. It was soooo delicious!!! 😋

    Man if I were a millionaire I'd fly you out here to try it no questions asked. Southern BBQ is easily the best food I've tasted, and it's the kind of thing that once you have it, you'll crave it the rest of your life. I can put myself in a better mood just by thinking about it. Edit: LMAO! I commented this about 4 minutes in, unpaused once I hit send, and then immediately heard your "if there are any millionaires out there..." comment. Weird bit of serendipity

    If you need seafood, you'll find the state of Louisiana right next to Texas. Their Cajun/Creole food will complete your gustatory satisfaction. (To be fair, there are other great seafood regions in the U.S., but Louisiana is the only one next to Texas!)

    Terry Blacks is a 20 minute drive away from me. But between here and there I can find 30+ BBQ places. Terry Blacks has some great food. Just don't discount us home smokers. We can smoke some meat that will give Terry a run for his money.

    Every hotel & motel has an ice machine. You may even have a mini refrigerator in your room. So, ask the restaurant for a "to go" box/bag and take any leftovers with you and have 2 meals at the price of one. Some rooms may even have a microwave. Something to ask about before you book your hotel room. Excited to view your trip to eat BBQ (at this very restaurant?) next year!

    Sausage in Texas is based on German or Czech or Polish recipes, and smoked over pecan or oak, maybe mesquite. So lucky to live in the best area for Texas BBQ.

    Watched this yesterday and immediately went to the butcher to get 6 bones of Plate Ribs to throw on the smoker. This was excellent looking BBQ top to bottom. The reason the meat is so moist is because of the long cook time, low temperature that causes connective tissue to break down and fat to render inside of the meat. Sausage looks like Jalapeno Cheddar Hot Links.

    There's one that's called a "Southwestern Cornbread" that intergrates Bell peppers, Jalopéno and onion and it's phenomonal

    Watching a lot of these Brits try American food videos, I notice that they take these overly large bites of the food. And I'm like, WTF? You don't have to swallow these things whole. Take your time and enjoy it.

    I've literally been around this wonderful world of ours and have enjoyed a wide variety of cuisine. But, I've been blessed to live in Texas for almost 25 years, and, there's nothing like Texas BBQ, whether brisket, pork ribs, pulled pork, chicken, sausage (my favorite), and yes, even smoked turkey or ham. It's all amazingly good. And the sides--hash browns, potato salad, coleslaw, green beans (my favorite), pinto beans, mac 'n cheese (yummy), cornbread, fried okra, collard greens--you can't go wrong. And dessert--apple pie, cherry pie, peach cobbler (the absolute best--make sure you get it with ice cream, or at least whipped cream). We Americans, and particularly Texans, are really spoiled when it comes to good eatin'.

    True US BBQ is so so good. It doesn't even have to be in the south. I got a lead on a guy up here in Philly who would run a pit in a vacant lot in the ghetto sometimes and it was a word of mouth event. There aren't a ton of true BBQ places up here - one of the best went down in a flood. If you ever come over since you love meat - go to a Brazilian steakhouse. It's essentially unlimited various meats. I prefer BBQ but it's a cool experience

    I literally just got back from a trip where we went to that exact restaurant and the food is as good as it looks if not better. You can’t beat Texas BBQ. It’s absolutely incredible.

      So good it steals the shine of other beef BBQ styles. California tri tip and Baltimore pit beef are also quite good, but Texas will always be king.

    There are TWO ways to prepare cornbread. One is like a savory, mealy, herb-y, stuffing like cornbread and the other has a slight but NOTICEABLE sweetness to it. It is still very corn like in taste but ALSO a nice sweetness. I greatly prefer the sweeter type.

    Where I live there is a BBQ place within like 100 yards of where I sleep and when I used to work nights I'd get home early in the mornings and see the pit masters out back tending the smokers and get this lovely punch in the face of smoked meat scent.

    If you go to America, I would love to see a vlog! Try to get to this restaurant if you can, I loved this reaction video. You make me laugh so much. And about the Michelin restaurants, you are spot on! Pompous, fancy shmansy for nothing, I totally agree. Your comments are so right, I don't think the turkey is in the same league with the meats, but like you said, chicken ALWAYS beats turkey! On the bone, a whole smoked chicken is to die for! Or barbecued, on the bone is it! And I am a big barbecue connoisseur, and if you are a fan of lighter fuel fires...well that's just criminal. Where I live (Hawaii) we have trees everywhere called Kiawe (kee-ah-vay) which is the well known way of barbecuing with. And I'm sorry, but real barbecue is achieved with a wood fire. And Kiawe wood here has an incredible flavor just as hickory wood would be...it is it's own glorious flavor that makes any barbecue Michelin belt status! Even barbecued salmon, oh so good! And you are spot on about fish, any cooking method for fish, the whole fish, is the right way to enjoy it. That's a whole other level of flavor that some miss out on if they fillet it and get rid of the skin and bones, now I'm getting hungry.
    You are a very light hearted person with a respectful demeanor...you don't have to keep apologizing for how you comment, are viewers really that petty? Your channel, your way...your comments are great! If by chance you offend anyone, they can just stop watching...speak your mind man! Thank you for this reaction! If you go to America or Texas, I will be incredibly jealous! But would anticipate a great video if you do one, tasting brisket for the first time..oh, to live vicariously through you would be an immense pleasure, just as much as the Jolly boys!

    I think that if I was challenged to pick one place that I had to get food from for the rest of my life, it would have to be Texas. Awesome BBQ, Tex-Mex, Mexican, Cajun, and just Home-Cooking abounds there. Corn-pone (the original hush-puppy in my opinion) is one of my favorite side-breads. I hope your US trip goes well!       It is a real melting pot of flavors. There are so many cultures/flavors meeting/mingling here. From Ethiopia to Nepal you have so many people moving here, that the choices can be overwhelming, but beautiful at the same time. Food, family, and friendship.

    If you are planning a trip to Texas you have to see San Antonio. The history and the food is awesome. Try as much BBQ and Mexican food as possible is all I'm saying and don't forget to visit the Riverwalk.

    If all you've had is dry turkey, then you haven't had turkey cooked right my friend. The sausages are either made in house, or made by a butcher specifically for this barbeque joint. My guess is its pork based, but it might be beef, or a mixture of both. Their food looks amazing. There are a lot of other places in America that have different types of barbeque. St. Louis, Tennessee, The Carolinas, all have different types of Barbeque, and they're all delicious.

    the reason you get dry turkey is because you cook it fast. the best was to cook it is to smoother it in butter, cover it in foil, then stick it in an oven that has been preheated to 500 degrees. once you have put it in, turn the oven down to225-250 degrees and cook for 8 hours. most of the time you don't have to carve the turkey, because it will just fall off the bone. if it doesn't, you took it out to soon.

    Wait the year and save the money. Terry Blacks is awesome, but crazy expensive. It's also not a chain, so they only have restaurants in Austin, Dallas and Lockhart, Texas. Josh and Ollie probably had $300 - $400 worth of food there. A "Large Family Pack" at Terry Blacks, which includes 6 lbs of meat and 5 pints of sides, is $280.

      It's absurd, but I can't complain too much. I went and got just 4 slices of brisket the other day and it was almost $20. I may take up learning how to smoke brisket.

    You have to try deep fried turkey, it's so moist and delicious. We make one every Thanksgiving and we NEVER have leftovers. I'm serious, the bones get picked clean 🎉

    Ive eaten at that same Terry Blacks and I can tell you they are not over reacting. It absolutely will exceed your expectations. The shocking thing about that location in Austin, TX, is that ive never had to wait more than 20 mins to get in get my food and get sat down. It so accessible and thats why I think its the best. They have another location in Dallas, TX, and its just as good. If you get a similar plate to what they got youre looking at like a $200-$250 dollar meal but it feeds a whole family. I would recommend for sure getting the Beef rib, both moist and lean cuts (they ask at the counter) and sausage (jalapeno cheddar), Mac and Cheese Potato salad and the banana pudding. If you drink alcohol I would recommend you try the Black Margarita (itll turn your poo green, but its delicious).

    Barbecued fish and shellfish is a hallmark of Florida style barbecue. Down here we concentrate on pork and sausage, but then we add the seafood component. Our barbecue sauces are fruity and sweet and peppery with a hint of smoke, and our preferred sides are coleslaw, beans, and roasted, mashed sweet potatoes.

    You absolutely have to try a brined, smoked, and deep-fried turkey. It is extremely "moist" meat. Brining makes all the difference.

    Native New Yorker, currently live in Omaha, Nebraska.TERRY BLACKS is in Texas, and is NATIONALLY RENOWNED as among the finest BBQ in the United States.
    That’s a great choice if you want to experience bbq literally as good as it gets.
    I’ve eaten bbq regularly all my life, in multiple States, but never Texas yet.
    Even in the States, FRANKLINS and TERRY BLACKS are bucket list restaurant experiences for most Americans. I can’t wait to see you finally get to try! Safe travels when heading over here!

    Agree with you so much on the fish. Whole fish and fish filet are completely different things. In Chinese food having a whole fish in a meal is very important. For new years the tradition is always cook a whole fish and not finish it save it over to the new year as like you'll have fish every year (as back then it was rare to get whole fish and was only something served during special occasions like new year).
    I love whole fish, its so good.

    There are BBQ places located in small towns where ppl line up at 5-6 a.m. just to get some bbq because the place(s) are only open 1-2 days a week and they run out of food.
    There is one place I want to go to called Snow's BBQ in Lexington Texas that opens at 8 on Saturday (only day open), but it takes 2 hours to drive there. That would mean I would have to leave my house around 4 a.m. if I want to line up and be able to order before they run out of BBQ.

    What makes brisket so good is the marbled fat through the meat. The reason it takes so long to cook it is help "process" the meat. Cooking the brisket over low heat (like 180 to 200 degrees F) slowly over a period of 12 to 16 hours helps to break up the collagen in the muscle fibers (the connective tissue that holds the muscle together). It also slowly melts the fat out of the meat and flavors it in the process. The result is an incredibly rich flavor and a texture that literally falls apart when it's done right.

    If turkey is cooked right, it won’t be dry. Usually people use the breast which is the driest part of the turkey but I have had moist turkey breast.
    I personally like turkey thighs wings or drumsticks because they are not dry.
    I know you’re not fond of turkey but I can almost guarantee that if you have a smoked turkey you would like it.

    Hope you're able to make it here to Texas one day mate, we're friendly folk down here. I believe this restaurant is located in Austin. And while you're here you can visit other nice pubs in Austin or Dallas like Deep Ellum etc. Some pubs have local draft from several brewers across the state of Texas or even locally in same city.
    I reckon a pint of local beer and some BBQ would suffice after a hot summer day . Either way wish you a great day & year! Just advice by a bloke from Texas 😅

    If there's one thing we do best here in the Southeast is cook great food. I know I'm biased but I think we have the best food out there. Don't get me wrong there are some good things from other parts of the country no doubt but we have to be the champs of great food. And we are proud to say Texas is part of the South. I live in Alabama and grew up here but I also lived in Texas when I was in elementary school so Texas has a special place in my heart. Each Southern state has their own version of each item on the long list of southern foods and each state has their own unique item that is great

    A moist smoked Turkey is actually pretty good. But I agree, if you don't cook it right, it does come out pretty dry. We didn't even do Turkey for Thanksgiving last year. We did an Italian style meal, and even though I'm half-Italian, I honestly don't care for all the pasta that Italians generally eat. Too many carbs, imo.

    As a lifelong TEXAN, I approve this message. 😁👍 San Antonio is a pretty cool place, look it up, we are world famous for several reasons. If you ever make it here, go up into the Tower of the Americas right in the middle of downtown! Nobody even acknowledges it when they come here as tourists. It’s the tallest structure in the city and you can’t miss it, but it’s like it’s invisible. So many CZcamsrs miss it. It’s the best view of the city for sure and it’s right there downtown with the Alamo and our very famous Riverwalk. I highly recommend you go up there!

    That sausage is made from the bits of beef and/or pork left over from the other cuts of meat, including a bit of that delicious fat (no waste), then add cheese and whatever else, like bits jalapeno peppers. And, no matter where in the world Josh and Olly are, nothing goes to waste, and the crew is very well fed.

    The beauty of the States is you can ask for to go containers and take all of the leftovers home. The portions you get at a BBQ place, if you go at lunch, you will have enough for dinner and to take for lunch the next day sometimes. You get your money's worth. People think that because we have huge portions in the States, we eat all of it at one sitting.

    15:42 so, when I was about 13, my parents decided I was old enough that they could safely leave for a long weekend and leave me at home alone. To make sure I had good food, they got a very respectable amount of barbecue and sides from the best local place (it reheats surprisingly well if done right). As soon as they left, I finally had the chance to eat as much barbecue as I wanted in one sitting.
    I ate nearly two pounds of brisket. I ate an entire rack of pork ribs. About a pound each of sausage and ham. I ate a quart of potato salad, half a loaf of sourdough bread, almost a pint of beans.
    I kept it all down, but that was the day I learned why it is unwise to *actually* eat all you can eat. I felt terrible for days. But damn, it was worth doing once.

    The terms of cooking the way you like are flame broiled, grilled, and smoked. Those are the three ways to properly Bar-B-Q. Im from Austin, Texas, and live 7 miles from this place. My mother would stay up all night when preparing a day of Bar-B-Q.
