    In the second episode of 'Communities & Food Stories' we are exploring the unique contours of the Kayasth cuisine as experienced at the home of our gracious hosts Veenu and Ramesh Mathur from Vasant Kunj in Delhi. The husband-wife duo runs an amazing home kitchen service called Bageechi Kitchen ( bageechi.kitche...) which serves some classic Kayasth dishes prepared with heirloom wisdom and knowledge along with other classics.
    With surnames such as Saxena, Srivastava and Mathur, the Kayasth were writers in the courts of the Mughals rulers. They aren't the members of the four classifications of Brahmin,Kshatriyas ,Vaish and Shudhra. Because of their ancient professional background, they are a well educated group engaged in mostly administrative, legal and accounting professions.
    Coming to some details of the cuisine of the Kayasth community we see that it is a seamless blend of various gastronomy traditions hence an example of the cultural and gastronomical inclusiveness of India.
    Over a refreshing cup of tea Ramesh and Veenu Ji shared some fascinating anecdotes pertaining to the community and their traditions, their own family heritage and their way of life.
    After a brief chat we went to the kitchen to start with the meal preparation. The next couple of hours in the kitchen was the most delighted phase full of irresistible aromas and amazing insights.
    We got to know that meat is predominant to this cuisine and that too mutton. Veenu ji was preparing two classic dishes for us. One was the mutton kofte and the other was badaam parsinde. Both the dishes were a slow cooked preparation. This resulted in the most tender, succulent and robust flavours. Veenu ji had picked up this wisdom from his father who was very fond of cooking.
    The appetiser was aloo kulle ki chaat whose highlight was the super aromatic Daddy ka Masala and the kala chaat masala. Unlike its popular counterpart available on the streets of Delhi, it was spicy and zesty.
    Finally it was time to relish the parsinde and kofte with Matar Ki Tahiri and Bakarkhani. Among those two things the soft, fluffy and subtlety flavourful bakarkhani was a stunner. We ended the feast with a luscious makhane ki kheer.
    This gratifying meal made us realise how for the Kayasthas, food is craft that is pursued meticulously and passionately.

    I am also a Delhi Mathur Kayasth... the recipes shown in this video are super authentic and specialties of the Delhi Mathur's. Parsinde (as we call them) and Kofte are celebration foods cooked specially during festivals and feasts. I remember my Grandparents talking fondly about their lives in "Shahar"... The style of talking and the Mathur hospitality is very genuine and sincere. Lovely to see our food and culture being showcased.

      There is no similarities between bengali kayastha and normal Hindi kayastha...these guys don't even consider Bengali kayasth in their hierarchy... bengali Kayastha are a mixed breed of different castes and varnas..

      @@Subhrojit1000 there is no point in any views your or mine fact remains fact do you do Chitragupta puja??do you know that Mathur Srivastava and all these sub castes of Kayastha are actually Chitragupta sons Mathur and Srivastava are the eldest ones do they are considered upper ones??please Google and know the facts...just see the judgement of Calcutta High court on bengali Kayastha where they considered majority of Kayastha as Shudra varna once but currently the government of West Bengal considered them as general..there are only 2 castes in Bengal ... BRAHMIN AND SHUDRA eventually many Shudras got educated and formed the Kayastha caste

    There are so many kayasthas in Maharashtra, especially in Mumbai and Pune. They have a very distinct food culture and are considered hard-core non-vegetarians. You should definitely visit kayastha households in Maharashtra!

    Hi sir. It's nice to see kayastha kitchen. Even I am a kayastha from bihar. It's true that mutton is the main cuisine in kayastha kitchen. In bihar, we relish fish and mutton with rice. I know you have enjoyed it in your bihar tour

      As Lucknow Kayasthas, we don't prefer rice at all. Various dishes of mutton are the speciality and even some special veg dishes. Tehri as well

    Thanks Delhi Food Walks for the video. Host did not know the main festival of Kayastha, we are the descendents of Chitragupta Maharaj, we worship him as well. Mathur is not the eldest son but Shrivastava is. We Kayastha don't know about our history. Nevertheless great video.

    Lahsun papdiya is also a very important dish in Kayasth cusine... One of Guy Anuj Mathur is reviving old lost recepies back. I think his brand Name is Lahsuniya ... Very good authentic taste 👍

N thats tge reason men in our community r even gr8 cooks haha ...And bcoz of our gr8 grand mother's experiebce and intelligence we make better food.

    agar kayastha food ki baat kare to koe bh sabji pyaaz , ginger garlic and masalo ( haldi, dhaniya, mirch , jeera) ko silwata par grind kar ke banayi jati thi or aaj kal mixer main grind kar ke. kayastha always love masala wala khana.

    I am also a kayastha but interms of foods consumed during diwali information is not 100 percent correct. Many Kayastha don't eat non veg in diwali. Sindhi food details were really genuine but not the kayastha one. Still ok but sindhi food was really good

      Actually brother they are mathur and are generally from bihar and up so in the time of diwali we sacrify goat to goddess kali and we eat that as a prasad, so they are correct in there own way and you are correct in your own

    Bihari Kayastha Cuisine is Totally Different. Bihari Kayastha Cuisine have a lot of spices & lot of meat. We've different/separate dishes for every festival exist.

      But Bihari kayasths don't have variety,
      Mutton curry + Rice +Roti/paratha is the only thing they eat unlike Other Kayashthas who cook Mutton in more than one way & not just curry.

I request you to cover cuisine of bihari kayastha with title Karna, Labh , Chaudhary, Shreevastava , Malik, Das...etc , we have different way of cooking .... We are maithil kayastha ... we love cooking #Bagiya , Tishi ka chatni , Biriya , tilkor ka taruwa , Arikanch ka sabji , karela ka bharuwa etc ....

    Anubhav ji, pls visit Dubai, we will serve you actual kayadtha cousin. Couldn't understand no mention of Chitrgupta puja. Also, never heard bhakharwari a kayastha cousin. Pls do visit us in Dubai. Plus you will also get Bihari and UAE food since we are from Bihar and stay in Dubai.

      Bengali and orya kayasths are mostly non veg.. but we take a lot of veg dishes as well..fish and mutton play important roles in our culinary culture...

    1) Kalam Dawat ki pooja is done on Dooj ie the second day after Diwali, when new books (of accounts) are opened.
    2) The food depicted is a very small representation of Kayastha cuisine.
    3) It's तहरी ( teh ri) not ताहिरी (Taahiri).

      It's a quickfire meal when one avoids a full meal of Roti Sabzi Dal chawal etc etc..

      I think Kayastha is the major community which has been derived from chithra gupt family and that community spreaded every where in our nation. People belongs to gupta, das, bose, patil, patel, nair, pillai, mudaliar, reddy, naidu and etc will follow the same guidelines i believe.

    As per as meat eating in Kayastha community is concerned , it depends on area. In North India where Mughal influence was predominant, more or less every community became a meat eater. But in Madhya Pradesh , Gujarat ,Haryana and Rajasthan , most of the kayasthas are pure vegetarians. But you will find meat eating kayasthas in Assam,Bengal,Uttar Pradesh ( mainly Purvanchal and awadh), Odisha and in Bihar Jharkhand too. My family members do consume mutton, fish and chicken( preferably Jhatka)but I prefer to be a vegetarian and they are cool with it.

    As a kayastha community member, I can say few things about kayastha is correct like kayastha people like be a administrator....But these things are changing with time...So people should stop stereotyping all member of kayastha community. As a hindu I can say varna system is based on work...Not based on birth. Even if you consider varna system by birth kayastha community comes between brahmin and kshatriya. One of major kayastha festival is chitragupt puja, which is celebrated on the day of bhaidooj. But by the way very nice video.

      Majority of Kayastha community resides in western UP (Ruhelkhand) and Luckow (Awadh province in Mugal and British Empire) and know the Kayastha traditions very well.

    Little bit of correction about kalam dawaat puja. It is celebrated after the second day of Diwali . Mythologically ,when Sri Ram returned to Ayodhya after victory, then Sri Ram sent invitation to all Devta' s in heaven . On the day of coronation, Sri Ram didn't see Lord Chitragupta. Later Sri Ram came to know that that mistakenly Lord Chitragupta was not invited. So for a day Shri chitragupta gave up the pen to show his resentment. From then onwards , on the second day after Diwali ,Kayastha celebrate this Chitragupta puja where they don't pick up the pen for entire day.
