I am taking my boat offshore here in Key Largo and will be taking Joe from SeaFear out and 2 of his buddies to do some good old fashioned fishing in Key Largo. It's been a long time since I have gone fishing in the Florida Keys so I am stoked!
My main goal on this offshore fishing trip was to catch yellowtail snapper in 30-50ft of water off the reef edge. We do catch some yellowtail snapper and that will be part of the bonus! The bonus catch clean cook. That's right, we don't just catch snapper but we also clean snapper. And did I mention an African Pompano?! Yes this is a full on Florida fishing catch clean and cook episode =)
The reef and weather conditions were so beautiful Heiko Winkler decides we should go a little deeper to 120ft of water. It's time to go vertical jigging. And who knew that we would hook up into an African Pompano while jighing. This is only the second african pompano I have caught so I start thinking how to eat African Pompano.
I have just the perfect African Pompano recipe that I want to try out in this catch and cook. Thank you Craig for the African Pompano fish recipe. The yellowtail snapper is also part of the catch clean and cook which are fried whole which Heiko Winkler has done a lot on the South Florida Fishing Channel. This is actually a first time Heiko Winkler can catch african pompano on video!

Keep in mind you can't spearfish in the John Pennekamp state park, but you can fish!

When I was in Key Largo last month, I stayed in a house on the water right near that gas station with the Dunkin and Walgreens across the st. That intersection just gave me deja vu!

Have you tried those spinning jigs yet? I just bought a 200 gram spinner that comes with a swivel to try out on Tuesday, super stoked! They are made by wiliamson I think and comes with some beefy gear on it...

How good eating are the African pompano? We caught a 30+lb one here in NC and I had no clue what it was
Just a FYI to everyone interested in purchasing a Genuis charger or jump pack, his battery was totally dead and drained and that jump pack fired it up from a totally dead battery. That's pretty good. I've been using my Genuis Smart Charger to charge my charge all of my car batteries for years and it never fails.

Did you eat the yellowtail fin ? Lived in Miami Beach for twenty years what a life now im in a fish camp in Lake of Wales but Fort P is only 70 minutes to the boat ramp. The African is a great dish too catch them at the power plant at Fort P on pass crabs in May time to get that Key West salt wet again she has been on specs all winter on Lake Rosalie

yea def. ask if they can get some and try it! If it looks really fresh and doesn't have a very fishy smell I would even try to sashimi with it

That African pompano was so awesome. Hey instead of cooking on the tiny gas stove why not by a nice propane grill? You can still cook outside and will have plenty of space. A ton of them available on craigslist. Or spend $200 and get a nice one from home depot. Still a good video. Can't wait till the next one.
