Anyone who is a fan of shoving deliciousness into their face already knows about Momofuku. Over the years, chef and owner David Chang has garnered respect for his empire of flavor not only in New York City-where his impeccable string of restaurants began-but the world over. In Canada, the peachy brand is still stretching its wings, which is why we felt like it was a good time to showcase Toronto's Noodle Bar, Daisho, Nikai, and Shoto-the four arms of Momofuku Toronto-to show how one of the planet's most tantalizing food brands has Canadianized itself in a seriously impressive way.
Not only did we hang out with the crew of this massive culinary endeavor on their home turf, but we took them to Edulis for a pressed duck dinner and Parts and Labour, where fellow MUNCHIES friend, chef Matty Matheson stuffed the Momofuku Toronto crew with lobster grilled cheese sandwiches, fried quail, pig's head, and whiskey shots. After all that, we circled back to Momofuku for a gigantic rib eye, more drinks, and fried chicken.

YOOOOO MATTY! 😁
A slightly narrow minded acquaintance of mine with a very, very limited palate one day decided she wanted to be a little more open about international cuisine. She remembered seeing some of us obsess over a dish called tteokbokki in the past - it's a Korean dish made with those exact rice cakes in the video, simmered in a sweet, savoury and spicy soupy sauce. It's a national favourite in Korea for all ages. Despite her declaration, she seemed very apprehensive about trying it, but to her credit, the little miss braved it and started chewing. A couple of very slow camel chews later (you know the kind, where they move their jaw in a circle in a single chew, very exaggerated), she spat it out immediately, claiming that it had the weirdest texture, and she couldn't stomach the chewiness. That's fine, it's not for everyone, except that I recall her response was 'what the fuck, that's not even food. I mean, no offence, but you guys eat some weird ass shit'. (The 'you guys' was directed at one of our friends who is Korean - I assume she was also meaning Koreans in general, although I wouldn't be surprised if she meant Asians in general.)
Cut to about a month later, we end up at Momofuku, and order that very rice cake dish in the video. We don't tell her what it is exactly. But she doesn't even notice that we don't - she's just so fucking ecstatic to be at 'oh, my, god, Momofuku. I HAVE to Facebook this.' She starts eating. I know this may sound exaggerated, but I kid you not, she does that whole shoulder heave as she rolls her eyes back and says 'MMmmmMMMmmm oh that's sooo good!! It's like, so different! It's like, a bit soft, a bit chewy.. oh it's like eating slightly chewy gnocchi!!' She thought it was the most creative dish in the whole world. Ate over half the dish by herself. Selfish and pretentious twat. Needless to say, the rest of us at that dinner table rarely see her these days.
they said that, that dish is a momofuku calssic dish. david chang is the chef who started momofuku who is also a korean. so i would assume that it was inspired by his cultural background
luke pak My point was more that when the rick cakes (that specific style being called garae ddeok) were presented to her in its authentic Korean style, she was very judgmental and went into it with preconceived notions that it was going to be disgusting. But when the same ingredient was used in a dish from a 'hip' restaurant, she wouldn't stop raving about it. I wish I could say that perhaps it was because the dish - sauce, flavours etc - was the difference that caused her to act like a twat, but it was more that one specific ingredient she kept referring to in both occasions.
at first i was like "whats the point", then i was like "ooooh yea", had those exact same moments with people who judge purely form where it comes from, this also includes clothing

I have been passing by this restaurant everyday for eight months without knowing anything about the wonder that are happening inside.
I can now see why everyone has been talking about Edulis for the past few years. The place/food looks amazing.
literally live 15 mins from momofuku, really considering going there after see all the hype and walking past it when going to Pizza Libretto :D
My favorite part:

These are like rich white people pass time. Fake laughs friends, temporary never permanent. I hung out with people like that give it a few years you'll find out that's all they ever do is drink and eat.

Everything and everyone is temporary.
Drink and eat now because alive is a short warm blink and death is forever.
Being good at cooking is far more attainable than many skills.
You must eat. You have money. You have time.
SO...all the opportunities and motives are in place, make things you like to eat , keep it simple practice it over and over .....Being as good as a World Class Chef is setting your sights a bit high.
This awesome kind of family environment is what i miss about working in a restaurant.

that was a dope video. I'm (kind of) surprised to see how many negative comments could come from such an enjoyable, interesting, and chill-vibed video. Looks like a great work atmosphere. Being in the city often, Im definitely going to try a couple of these Momofuku joints soon!

Despite all the talk about hipsters and whatever, I think the family and team efforts made by the restaurants is excellent. It really makes a work environment better when you're spending more time with them than your own family.

I worked under Sam Gelman and Mitchy Bates at Momofuko KO for a little while and although I'm not the biggest fan of Chang, those guys were fucking hilarious and very talented chefs. The food at this Toronto location looks pretty banging.
