I pick up the tray and drop from about 4inches off the counter several times to get a smooth top on my wraps rather than spending a lot of time smoothing.

I got the recipe book! Honestly, the only essential component to follow in the recipe is the silicone tray, water amount, and then psyllium + chia/flax. I've omitted the dates and onions, subbing other veggies instead, and it's been totally fine.
My tummy does not like onions 😢. I am glad to see that you sub, I am thinking of trying zucchini. Thank you for adding your note!
@Catcapozzi I'm glad for your comment, because there's no way I'm going to eat that amount of onions, and I like onions, it just sounds unnecessary. I also love medjool dates, which I eat two or three every few days...

I bought the 12 inch rectangular molds, and am able to fill 3 trays. The green kale recipe filled two. They were super easy and quick to make. They are in the dehydrator now so we haven’t tried them yet, but they smell and look amazing.

If you use exact weights, you CAN replace some of the veggies with ones that you want. I cannot eat peppers etc, so I replace it with either summer squash OR Okra. Works great!

Dr. Goldner and her husband said that you can't get fat from omega-3 fatty acids. They did a study and they said son of them ate up to 1,000 g a day of omega-3s and did not gain weight. It just increased their metabolism

Ordered the ebook, so excited because my wraps aways have issues 🌻
To clean your Vitamix out if it is dingy use cascade powder only not the liquid cascade gel with water blend it for 10-20 sec leave it soaking over night after 8 hours than you scrub with a dish sponge rinse in sink and rewash again with regular dish soap and rinse again and it will look brand new. If you have dingy spots on the very top or outer top, I than put a bucket with the cascade powder and water stir up well and put the vitamix in upside down just enough water to only soak the top. And clean the same as above. Will look phenomenal. I’ve been doing this once or twice a year for the last 25 years that I have had a Vitamix.
I normally do not recommend Cascade or any products that are not sold at a health food store but this has been the only thing that complete works and thankfully you only need to do this once or twice a year. And it does work. Please make sure you blend it for 10-20 seconds or longer otherwise it will get hard on the bottom and that is not a good thing.

Chef, AJ, just a thought to share with those who have difficulty eating foods that are high in oxalates and or lectins. Chia seeds are high in oxalates and lectins. A wonderful substitute is basil seeds. You can still make the vegan egg with them, substitute them any place Chia seeds go, and they are low to no oxalates and lectins. Just a thought to share with those who have those issues.

Dr Goldner SAYS oxalates are not ab issue. Meat eat eaters get the calcium binding to them in the kidney forming stones... (You know near hides behind all the fall guys like sugar and oxalates)... age doesn't even bother with rotation on her smoothies.
And, to think, I've been trying to extend my garden basil season and have been breaking off the seed stems! Nice tip. Do they have omega 3s?

These are awesome and easy! I got a Ninja Foodi air fryer with the dehydrator function bc I didn’t want a huge dehydrator and it worked great with a 12x10.6 silicone tray. I just halved the wrap recipe.

Great video, I have everything I need to make them including the ebook. I'm waiting for cooler weather at night as I find my dehydrator emits some heat & I try not to turn on the AC unless it's unbearably hot.

I was able to find a 9-tray Excalibur on FB Marketplace. I ordered the silicone sheets (as shown in this video) in preparation. I gathered all my ingredients. I had to laugh when there was a person who said, the dehydrator is going to stink up the house. And OMG - I had to pick the Spicy Onion Wrap as my first recipe. And Oh Man! That was so strong, it made our eyes water. I unplugged it and put it out on my back deck. Now that it only has 3 hours left, I think I can bring it in to finish up, as the smell has toned down. I think in a small house, you'd have to pick and choose which wraps to dehydrate in the house, and which ones to dehydrate outside. Now, winter will be a problem.
You can leave out the onions and be fine! We had the same problem at our house--my eyes watered quite a bit, too.
Chef AJ, not sure if you'll see this, but the dingy look of the VItamix container can be because of age and not because of any coating on it. Sometimes there's a mineral coating which can really come off well in the dishwasher, but a generally cloudy look is probably from blending things over time. The inside of the container gets scratched and dinged and beat up creating that look. Thank you for doing these videos!

Have you tried making them. I want to get a dehydrator but one of the reviews for the Exalibur is that it is difficult to clean.
I only the wraps once so far but when i did I was glad the grams were listed cuz once inweighed "my " 2 large onions I was like wait, what? I needed several onions to make that amount in gram weight ...and same with the dates, my medjool dates I thought were large but according to gram weight I needed to add more than 2, like several, I can't remember how many, possibly 5 🤔
I think this is my 3rd or 4th comment (sorry); but the 6 tray Excalibur dehydrator I think I want is in both a 600 watt version - - which has been offered to me new for $185 with free shipping. The 700 watt Excalibur is on Amazon with an extended payment plan and no interest. Perhaps the 700 watt is the newer model? Anyway , in researching what would be the difference in drying time or electricity, here is what I am reading:::::> Different foods need different temperatures to properly dehydrate while maintaining flavor and nutrients. These temperatures are general guidelines for drying a variety of food types:
Herbs: 90-100° F
Fruits & Vegetables: 130-160° F
Meats/Jerky/Fish: 145-160° F
The drying temperature can be set at the higher end of these ranges at first for very wet foods then turned down later to finish, as evaporative cooling keeps the actual food temperature lower than the dehydrator's air temperature.
Another consideration for many users is the preservation of beneficial enzymes in fresh foods. Estimates vary, but there’s some consensus that these enzymes begin to degrade at about 104-106° F, and that they’re destroyed entirely at about 116-120° F. :::::::> SO, if it's recommended to dry the wraps at 115 degrees, are there any beneficial enzymes left?

Can someone describe the texture of the wraps when you eat them. These look great. I’m just wondering since there is a leathery look to them. Are they tender, tough, or somewhere in between?

I've got a question about the "extra thick mats" that are linked here. I've read that 1/8" thickness on the filling is best but can't seem to find those. How thick is your wrap? Does the extra thickness of this mat slow down the dehydration process?

Super interesting subject - and After having listend I am convinced that is necessary to investigatoren in a dehydrator if you watt to add this possibility to your raw food kitchen 🙏so even if I have an Owen that Can stop at 50* Celtius …. Just a little bit higher than 46˚ celtius its probably not an option 🎶🖤🎵😊

I'm thinking of buying the 4-tray Excalibur Dehydrator. Hopefully the 14 x 14 silicone sheets will fit. I know Lissa uses the larger 9-tray dehydrator. That one is too big for us - we have no place to store it when not in use. Looks like the 14x14 wraps work best for making those delicious sandwiches. Hopefully the 4-tray isn't more narrow. I'll have to research it.
I hope you are correct however I was looking at that one but thought the trays were smaller. I do see they have a smaller silicone sheet - 10x12.
The 5 tray would be a better option as I think it’s the same tray size l. The 4 tray is much smaller tray size. Hope you enjoy!! ❤️❤️
I have always wanted a wrap recipe. The commercial wraps have unwanted oils.
My vita mix containers also dingy looking. I was hoping that they made a glass one which will be nice.
Glass blenders are so heavy. They need to be thick. If they drop they can break where plastic ones can crack and still function with a cloth ready to wipe. I like glass too.

Oh I really would love to see that video Chef AJ on how to make these wraps in the Breville Smart Air machine using their dehydrating feature. I purchased the Hand Salad ebook and I don’t have a dehydrator in my home. I only discovered after I purchased the ebook that using the Breville is not recommended. So now I’m feeling stuck with my extra Breville trays and the silicon trays and lots of insecurities about being successful making these wraps. 🙏🏻🙏🏻🙏🏻💕🥰😜
Get a cheap Excalibur on eBay, Craigslist or Facebook Marketplace. Breville is still great for other things

I checked 2nd hand ones on ebay but they are all in the USA voltage. It would be great if you and Lissa could do a comparison video on a couple of the other most popular smart oven machines which have a dehydrator function too, if you have any of them? Thanks :)

I'm curious to know if anyone else has made the Green Goddess wrap? The flavor is great. However, I followed the recipe to a T using grams to be most exact. The only thing I changed was to substitute a serrano chile for the jalapeno because serranos have better flavor and slightly more heat. I divided the mixture between two of the 14-inch (approximate) square silicon trays, and discovered that the mixture barely covered the trays, and certainly didn't come close to the lip of the tray. After dehydrating overnight for 10 hours, the wraps were paper thin. Delicious, but thin, and they don't appear to be nearly as thick as the ones Lissa and Nate have been showing. I've read and re-read the recipe multiple times to ensure that I didn't make an error. I didn't, so am wondering if the wraps others are making are likewise very thin?
Yes I gave had the same issue. I've made it twice and the quantity is definitely not correct because there's only enough mixture to make one wrap. I've made other Wraps and this is the only one that I have this issue with.
@Twinkle-ns6cb , Thanks for sharing your experience. It's nice to know that it wasn't just me. I had decided that the recipe needs to be increased by 50%, or doubled, in order to make two appropriately thick wraps. I've not tried any of the others yet, but will soon.

I have a Cosori dehydrator and have just ordered your recommended sheets with edges but in the size to fit my appliance; 12" x 13". I realize I will have some leftover filling and have to get creative with how to best use it-lol, but wondering if there is any other reason I'm not thinking of whereby this wouldn't work in my dehydrator before I buy the e-book? I've watched the whole thing and it looks like a lot of work and I really don't want to have to buy a dehydrator. I recently discovered sprouted grain wraps from Sprouts. You can put yesterday's salad or vegan fried rice or whatever in them. DELICIOUS. Also, Asian rice wraps are super easy to use, too. If you end up selling your wraps at Sprouts or Whole Foods, I'll buy them!
Aww thank you for the enthusiasm! ❤️ I don’t think we will go that route to sell them pre made (it would be a massive investment both in time and $ and no guarantees it would even get picked up) but they only take me 12 mins to blend up and spread out 2 large wraps the night before needing them ❤️
Yes, they look great, but it is very time-consuming. I already struggle living a plant based life with work and other responsibilities. I don't have the time to invest in making the wraps. Maybe in 15 years when I retire❤
What brand is the sprouted wrap at sprouts?
They were super easy. I had a dehydrator, and just bought the other supplies. I made the wraps last night and they are in the dehydrator now. It was Super Easy. Throw the ingredients in the blender and blend. You can use any filling you want if you think theirs is too involved. I haven’t done that part. I thought it was going to be complicated too, but it is simple. Blend, pour, spread. Dehydrate.

Did she say "no" to the Breville? that's what I have...the Breville Smart Oven Pro that also dehydrates...I'm about ready to order the extra 3 trays....BUT I often have a lot of condensation on my door when baking or toasting....so now I wonder if the condensation would have a way out??

I haven't seen this problem addressed in any comments (unless I missed it). I am making the everything bagel wraps. They seem to be dry in that there are no spots that leave a finger impression, but they are somewhat sticky. I've been drying them longer, not knowing if that will help or if that's normal. Any thoughts? I'm thinking if they stay sticky I could maybe dust them with something to make it better for wrapping.

What about electricity how much does it use for such long dehydration process?
I don't know about other brands, but the Excalibur costs only pennies per hour to operate. Of course, the exact amount depends on your electric rate. I believe I found this info years ago on the Excalibur website. Bottom line, the cost is nominal, and people waste electricity on so many other things, such as leaving things plugged in that are not being used, not to mention leaving the television on. I'm in Texas where we finally just dropped out of the 100 degree temps, and there was great concern every day that our energy grid would fail. Among other things, people were asked to physically unplug everything that was sitting idle because most things draw electricity even when not in use.
Does mats do not fit in my Wartmann dehydrater. What do you recoment?

Has anyone tried to make these in another dehydrator brand like Cosori, the Breville Smart Oven or the Instant Pot Vortex Plus Smart oven or Ninja smart ovens which all have an air fryer and dehydrator plus more functions? If so do they still work or does it have to be in the Excalibur dehydrator? The Excalibur's are harder to get in Australia, so if anyone has tried another brand that works for these wraps in Australia, I would love your advice, Thank you:)

I just prepped the ingredients for the cheese steak wrap & honestly the measurements are not making sense to me. One cup of sweet sweet potatoes or 270 grams, 860 grams of sweet onion is to equal 2 large onions? Pureed as much as I could in my blender, it filled two silicone sheets with plenty left over. I used the gram measurement. What measurement did you use Chef AJ?
Okay, the wrap was delicious. Next time I’m just going to ignore the gram/ounce measurement & see it comes closer to 2 wraps.

You're good. The powder is just ground more fine, which may alter the measurement slightly. Put the psyllium husk in your blender, process it a bit, then measure out the amount you need.
Could you use a freezedryer
Don't think so
Not for the wrap, it would come out hard and crispy like styrofoam
A freeze dryer is a completely different process and would not work because it renders the food completely not pliable whatsoever. It would crumble like dust in your hands ❤ think “space food” texture. Dehydrator is the appliance you’ll need for pliable wraps
I will look into a dehydrator. Could I use flax instead of chia? It needs to be crushed to be useful. I always have flax, and hemps in my freezer, and pantry

The Vitamix is just what we all turn to bcs EVERYONE in the vegan world swears by it so I bought one about two years ago. And I kept waiting for that "wow" moment tha t never came. Frozen fruit was always a wrestling match and by the top me I was done, so too were my wrists! It was also difficult to clean. A little over two months ago I hesitantly picked up the Ninja Professional Plus and it blows the Vitamix out of the water. I get nothing from this endorsement but the long (vertical) three blade blender works effortlessly to crush frozen fruit and I don't have to wrestle the contents with the plunger. And the best part is it all comes apart and it is so easy to clean. Oh and I can walk away from it as it does its thing...unlike the Vitamix. I will never buy the Vitamix again. Also the Ninja comes with a food processor and a much better smaller blender for dressings than my silly Vitamix one with the cumbersome huge base that was awkward and just annoying. I'm just saying...
Hi AJ! I know you're not going to be able to probably answer this or maybe you will. No, no matter. I wanted to comment on the psyllium husk and the flax seed for me. Personally. I'm avoiding seeds that have any fat content because I follow Anthony William the medical medium, and I have what he calls a sluggish liver. Liver. Since the liver processes fat, all fats are hard on it and so in order to cleanse and heal, I need to be as fat free as possible. As far as the psyllium husk, he says to avoid that because it can be irritating to the gut lining. Now I know that you can use powdered psyllium husk and versus whole psyllium husk, so I honestly don't know. All I know is it. His information has been really healing to me and so I try to follow it to a t. This is really just an information for you. As to my reasonings why I avoid those ingredients. It might be the same reason that other people are saying these things too.
I agree and wonder if these can be made well without the husk powder.

When I was into raw foods, I used to make burritos using a collard leaf where I cut flat the center vein so it would wrap easily. I made a sauce out of tomatoes and mangoes. I loved it! You can also blanch the collard leaf to soften it more. A dehydrator is not in the budget nor really do I have space for it in my small kitchen, but I miss eating with my hands too so Ill get some collards again.
