    CHARLESTON, SOUTH CAROLINA - We’re just outside Charleston, South Carolina, and on Sunday, I was invited over to my friend John Haney’s ( / alveronbbqco8462 ) house for a real deal southern barbecue. It was an incredible experience, watching John and bbq and all of his side dishes including collard greens and the greatest bbq mac n cheese you’ll ever have.
    Additionally, in South Carolina is the only place you'll find hash, a mixture of all the pig bits including the face made into a stew. There's ketchup based hash and mustard based hash, and we had a full lesson on South Carolina hash.
    John Haney (Alveron BBQ) makes the best bbq grills in the United States all hand made - so definitely hit him up: / alveronbbqco8462 and he also one of the greatest legends of American bbq.

    Mr. John is a good friend of our family. He is the sweetest man in the world and he has some of the best BBQ and Mac n cheese I’ve ever had!! I’m so jealous that I wasn’t there that day 😢

      This brought back memories when I was working and attending college there back in the day. So many places to find people cooking traditional food. One elderly lady I met said she had the nickname Beans because her job was to cook Lima beans at at a restaurant near me foot of the Ashley River bridge. She was talking way back in the fifties.Also there was a woman from Orangeburg that made some great Hash. Glad that John got some exposure because Hash goes way back with folks

      Mark is the ultimate nice guy not to mention his family and film crew. I don’t think I’ve ever seen him say food “not delicious” so funny 😆 I have one question what if he said the absolute truth about his food tasting stories? Would his Chanel be as popular? My experiences in foods and cuisines around the world has not always been good or delicious! Whether it’s on the street, in the jungle, in a Michelin style restaurant, or any other restaurant or cafe! 🤔🤭😉 so I’m not sure

You can't be eating that fried chicken, mac n cheese, pork ribs, yams, peach gobbler and whatever else food all the time make you gain weight fast but it's the high carbs and sugar and sodium that'll make you get diabetes and high blood pressure.

    I'm not a religious person, but I loved his prayer. Food comforts the soul. Its amazing what kind of difference a good meal can make to the mind. There's good BBQ across this country, but nobody takes it as seriously as the people of the South. This man has it right. I could follow him. (if I lived there)

Jesus changed my life and there is no greater love than knowing the King of kings and Lord of lords. Please trust in the person of Jesus Christ and His finished work on the cross for salvation.     Southern food, too me is the best in the world. South Carolina is one of the top places to find that really good southern food. Everything looked wonderful. Can you choose a favorite dish out of all the dishes cooked at the cookout Mark? When I was a little girl, around 5 or 6, , mid 1950s, my family would go the fish camp on the river where the family cabins sat just up off the water. My Uncles would sit up all night cooking hash and some good drinking as they stated, for the next day's meal. Memories are the most blessed part of a life as one can look back and recall times long gone. This food looked so good Mark, the three top choices I'd pick for my plate would be, hash, collards, ribs, I missed the light bread to go with my hash but the cake was to die for to cover dessert.

    Mark...a PERFECT 4th of July to celebrate, probably, the BEST BBQ segment you have ever featured. John and his family and friends are a wonderful example of backyard perfection....when you can cook like he and his wife do. What an AMAZING BBQ Grill he created....and imagine three hours of BBQ to cook the greatest food...including his Mac and Cheese and Hash! I have never seen hash before---never knew about it! Thank You! I believe John is blessed by God with his cooking perfection....and his nice prayer before everyone eats was simple and beautiful. I will be sharing this video with my friends and family...and be watching it today again. I am preparing a meal for the 4th ...and I daresay it won't be able to compare with John's....but watching this while i cook will be loads of Fun! Thanks, Mark! Happy 4th!

    Mark was having a good time eating my culture's cuisine "soul food".. Brings back nostalgia, I have not had hash since I was a little girl...my grandfather, his brothers and my uncles would be up all night roasting a pig for our celebration or family gathering for a big dinner..thank you Mark for the experience,,,and honoring the different cultures and food they live on, you have much respect...I heard one of the gentlemen in the background of the video say "He down to earth"...and that is honoring you, and accepting you to our culture.

    My late nanny taught my a recipe of ‘Texas hash’.
    She was handed it from some American friends and that would have been in the 1950’s.
    It’s tomato based (this one), minced beef, 4 cans on peeled tomatoes, bell peppers, onions Tabasco sauce, salt pepper, garlic, cumin and for this one, add rice at the end and simmer until cooked and flavoured. Serve with fresh hot garlic bread.
    Great winter meal.

      UberDump’s Nans Texas Hash
      4 cans plumb tomatoes
      1kg minced beef
      2 onions chopped
      2 peppers (green and red) chopped
      10g of easy cook long grain rice
      Spices
      1 teaspoon garlic or 2 cloves
      2 teaspoons cumin (heaped)
      Salt and pepper to taste
      Tabasco sauce to taste
      Method
      Fry onions and peppers until soft
      Put aside in bowl
      Fry mince until browned. Drain off any excess fat.
      Add onions and green and red peppers to the mince and the garlic, cumin and pepper.
      Cook for 5 minutes
      Add the tomatoes one tin at a time, chopping up the whole tomatoes into pieces - fill the 1st tomato can with water, as you empty each can into the mince transfer the water into the next can, empty the last can of water into the mix.
      Bring to a boil then turn down to simmer.
      Add the Tabasco sauce to taste.
      Add salt to taste
      Add rice
      Put mixture into an ovenproof dish and cover with foil for a tight seal.
      Cook in oven at 160C for two hours at least.
      Best made the day before eating.

    Mark this is how a backyard bbq is done. Great food, great people and everybody having a great time. My mother (RIP) was born and raised in Saint Matthews which is probably over an hour to Charleston depending on which direction you're coming from. I remember her father my grandfather would slaughter a hog once a year and my family making hash. Ours was more vinegar based. I wasn't a fan of it as a child but now that I'm all grown up maybe I might like it more. Also while you're in S.C. Mark ask about puddin' which is made with rice, spices and the chopped offals from the pig then stuffed in a casing and cooked like a sausage. I'm also not a fan of it but since you like trying exotic foods I think you might like it.

      Hey! My wife is from Saint Matthews!!! She loves the hash, but not the puddin'. She also swears by the MUSTARD based sauce and barbecue.

    Aikenite here. Hogshead hash was my jam. I used to help my stepfather put the ingredients in this big old manual grinder we had and we'd start turning. That's one reason my arms stayed tight when I was younger. He's no longer with us. I honestly miss these types of bonding time with him. Making preserves, wine, hash, chitlins, etc. Food was and is our family's love language. Thanks for taking me back, Y'all.

    That hash is Charleston/lowcountry hash! Midstate South Carolina hash is almost thin like gravy and has shredded meat, not chunks, no vegetables other than Potato and onion, and is served over rice! His BBQ looked right though being saturated with sauce while heating it.

    I love BBQ hash, there isn’t anything quite as comforting as a little hash and rice whenever you’re in a bad mood - it’s like a little hug to you’re stomach. The next time that you’re here in the Charleston area, you should check out both Bessinger’s and Duke’s.
    “Big Joe” Bessinger was largely attributed for the creation of mustard based BBQ sauce (Carolina Gold), and the Duke family has an Orangeburg spin on that sauce with the addition of both ketchup and mayo, which makes for a rusty colored, but slightly sweeter sauce. I personally like the Orangeburg style sauce over the Carolina Gold style, which is a bit of sacrilege to some folks here.

    This video makes me proud I was born in and Raised in South Carolina but I live in philly most of my life but never forgot my southern roots !! This video brings back childhood memories of gatherings in Elliott S.C seeing Hogs being roasted during baseball games😢 Miss You South Carolina 😢

    This is a wonderful setup for some mass cooking. Love the grill. I used to make my own grills back in the day but no one to cook large for anymore. So I just use my Big Green Egg for me. There is one thing that the pit master said and that is hash is different around the state. What he has here is more Beaufort stew. I live in the central part of the state and mine is totally different. My hash has two meats. 75 % beef and 25% pork. Boiled down in a large pot with onion. When the meat is cooked down until it is fall apart, I take a potato smasher and break down the meat until fine. In goes salt and pepper to taste, rubbed sage, garlic powder, onion powder, splash of apple cider vinegar and yellow mustard to taste. Served over white rice. That is SC hash.
