  • Kuku sabzi (Persian frittata) tend to have less eggs than the typical fritter or omelet. They can be slightly sweet with dates and dried rose, or savory, like the one below. Try not to be diverted from all the greens that are suggested for this recipe. You really can use whatever hearty greens and herbs you like. It’s the ideal clean-out-the-fridge recipe.

    You can add some finely chopped toasted walnuts and a handful of dried barberries to the mix before frying it, to make it the way it's done in northern parts of Iran.

    I bought too many herbs and vegetables to juice. Tried to find out what I could do with the excessive veggies and found this video.. definately good for "clearing out the refrigerator" not only that is was delicious and I felt honored to be making such a traditional special dishes. First Persian meal and LOVED it. It was soo good. However, I'm vegan so instead of eggs I uses chia seeds and instead of baking power I used apple cider vinegar & baking soda. And put about 3 tsp's of oil in the herb mix until I realized it should have been in the pan, oops.. but it still turned out so goo, so flavorful! I couldn't believe it. Keep these traditional veg dishes coming! Thanks!

    I completely love this dish, found a recipe online just randomly one day and I kinda went rogue on it with mint and swiss chard and parsley (recipe didn’t mention the leeks which I’m so putting in the next time) + it had cinnamon in as well and I added chopped walnuts. It is also baked in so much olive oil it gets very crispy at the edges. So so sooo wonderful!!!

    I found the easiest way to chop all those herbs is either use my weed grinder or simply toss it all in my lawn mower

    I miss Iranian food soooo much! I only get it once a year when I visit my Mom, Brothers and Sisters in Calgary. We grew up in Iran. Where I live now, there are no Iranian Restaurants. I love Kuku Sabzi! We call it Sabzi Kuku.....sigh I want some right NOW!

    I tried this once in a party hosted by an Iranian family. It was very savory & soft & I love it because it's different and healthy! That was the first time I had that and never again because it's hard to find Iranian food in my country

    this is so healthy and easy to make. you dont necessarily need toi broil it or cook the herbs seperately. I'd recommend cooking the herbs with the the eggs together to preserve the herb vitamins more.

    I'm full Persian, live in Scotland and I personally don't really like kuku sabzi, but this version looks different from the authentic one. I think they also use spinach in Kuku sabzi

      In Iran some also like to add zereshk (barberry) for cool sour fruit taste to bring the herbs together

    This Chinese Hawaiian, Native American girl had never made a Persian dish in her life. This spoke to me and was so delicious. Halved the recipe incase it was not to my taste. Big mistake. Could eat all damn day. Happy Farsi New Year.

    I add spinach, cinnamon, freshly ground nutmeg, ground cardamom, turmeri, ground cumin and chopped bits of walnuts to mine. Wonderful as is hot, cold for a picnic food or drizzled with some grape molasses and topped with some dried barberries or cranberries.

    As a Persians, we used to use less herb or more egg plus walnut and feta cheese. Also fried in butter and make it crispy. It was really good

    Fantastic 👌🏻 but I remember they would flip it over to roast the other side too ⁉️ also you could add crushed walnuts and Barberry between two pouring layers of Kuku 👌🏻

    very very true about the food processor. I also always avoid it,when cooking, since it leaves a mess (reminding of the disgusting thing they feed to very very old people who have no teeth left) instead of neatly cut vegetables and herbs. besides when the dish is ready, it's "al dente", your palate feels the essense of the food. That's why handmade stuff is always better :)
