- Kuku sabzi (Persian frittata) tend to have less eggs than the typical fritter or omelet. They can be slightly sweet with dates and dried rose, or savory, like the one below. Try not to be diverted from all the greens that are suggested for this recipe. You really can use whatever hearty greens and herbs you like. It’s the ideal clean-out-the-fridge recipe.

Andy Makes Kuku Sabzi (Persian Frittata) | From the Test Kitchen | Bon Appétit - Jak na to + styl
You can add some finely chopped toasted walnuts and a handful of dried barberries to the mix before frying it, to make it the way it's done in northern parts of Iran.
Yaaassss I knew I'd find a fellow Rashti (?)!!!
barberries are the greatest blessing I was bestowed when starting to look into iranian/persian cuisin, I love them so much ^^
Great 🤣
Wow, so many things in this video I'd like to eat.
Lay off my man
You be standin' in line...
More Persian cuisine
Need mo Farsi FOR sho.
Great❗️👏👍🙌😷
I'm glad to see Andy make a dish from a cuisine that's very clearly close to his heart. More like this please?
I followed this recipe at home and it's fantastic! I've made it multiple times already. Reminds me of the way my grandma used to make it.
That recipe made me so happy while being homesick. More Andy and more Percian recipes please!
As someone who can't get enough herbs, this dish might be my calling
One of my favourite dishes ever, thank you, that's so precious.
An instant classic!! I just made this dish. So good. Gonna be a regular on my menu! Thank Andy
Oh my, this is the recipe I have been looking for ! All those fresh herbs, oh yes !!!!

Perfect. I made it and it’s wonderful. Andy you’re the best 👏🏻🙏🏻
Thank you my love. You made my day with this phenomenal Irani dish. I am in love with iranian dishes and their great people and culture
I had it once in a Persian restaurant and they put nuts. I liked that added.
Looks awesome! Gonna try it!
I bought too many herbs and vegetables to juice. Tried to find out what I could do with the excessive veggies and found this video.. definately good for "clearing out the refrigerator" not only that is was delicious and I felt honored to be making such a traditional special dishes. First Persian meal and LOVED it. It was soo good. However, I'm vegan so instead of eggs I uses chia seeds and instead of baking power I used apple cider vinegar & baking soda. And put about 3 tsp's of oil in the herb mix until I realized it should have been in the pan, oops.. but it still turned out so goo, so flavorful! I couldn't believe it. Keep these traditional veg dishes coming! Thanks!
Looks interesting, I’d be willing to try it. Always need to eat your greens! Like always, nicely done Andy!
I will makes for sure. No doubt about it! 100 %!!
Persian culture looks amazing!
This is the first BA video which got me to subscribe and still my favoirite. It's not too long and just simply about cooking and little bit of story about the dish.
I love these videos!
This is so good!
It's a wonderful food for a keto diet. Thank you so much for your video.
It looks delicious !
Just Loved it .. how easy it is to have such an exotic dish ..Thanks / merci
Merci Andy Jan
Amazing video and recepie
Happy Nowruz 🙏
I completely love this dish, found a recipe online just randomly one day and I kinda went rogue on it with mint and swiss chard and parsley (recipe didn’t mention the leeks which I’m so putting in the next time) + it had cinnamon in as well and I added chopped walnuts. It is also baked in so much olive oil it gets very crispy at the edges. So so sooo wonderful!!!
This looks so delicious
This is comfort food for me. My mom would make this all the time as a kid.
I love it this recepi
It's very yummy!
I found the easiest way to chop all those herbs is either use my weed grinder or simply toss it all in my lawn mower
No no, darling. You're supposed to pull it OUT of your lawn mower not put it in. An easy mistake to make. 😂
@@davidb.854 it kinda does look like lawn cuttings, does it?
@@rumblefish9 Absolutely lmao
😂
But boy u have no idea how delicious that thing is and also very green
I miss Iranian food soooo much! I only get it once a year when I visit my Mom, Brothers and Sisters in Calgary. We grew up in Iran. Where I live now, there are no Iranian Restaurants. I love Kuku Sabzi! We call it Sabzi Kuku.....sigh I want some right NOW!
Great job mate.... cheers
I love this dish my mom used to make it for me all the time
That looks delish
Amazing recipe 😋 👌
WoW different & interesting
beautiful dish beautiful andy
so yummy😍😍😋👌
Watching this whilst eating Kuku is so satisfying
Thank you so much
I tried this once in a party hosted by an Iranian family. It was very savory & soft & I love it because it's different and healthy! That was the first time I had that and never again because it's hard to find Iranian food in my country
I love Persian food
Omg its kuku 😍💖 LOVE it! But we usually make it like an omelette 😍

Merciiiii
Can't wait to make this for my Persian bf! Thanks for the recipe!
Everytime l make kuku sabzi, I come back to your video. I've actually memorised everything you says but just to be sure...😂
It took me several seconds to parse the phrase "Celery leaves work as a sub." 🤣
the healthiest frittata EVER.
Looks great. But I also just want to hug him. He seems like one of the sweetest people. :]
hug? hmmm
😋 delicious
this is so healthy and easy to make. you dont necessarily need toi broil it or cook the herbs seperately. I'd recommend cooking the herbs with the the eggs together to preserve the herb vitamins more.
it’s crazy going back and watching these videos because the editing is so different and there’s barely any jokes. it’s so wild to me jdksksks
Every Saturday my dad makes kuku shabzi breakfast burritos with tomatoes, potatoes, and ham
as an iranian i’m so proud of you ANDY ,but as a food lover you need to flip over the Kuku for crunchy sides and soft inside
Yums.😋
Excellent 👌👌👏👏
Norouz mobarak
Interesting
My mom makes this quite a lot. One of the best Persian dishes (not ahead of gaimeh or ghourmeh sabzi though!)
OMG you read my mind! Just as I was thinking "I can just use a food processor!" you chimed in NO you cannot!
andy , there’s no onion in the veg mixture (at least I’ve never seen)
besides where’re the walnuts and the barberries ?
btw thanks for introducing our cuisine to the world❤️❤️
aaaaand happy new year
Comfort food my man!
Bravo
I'm full Persian, live in Scotland and I personally don't really like kuku sabzi, but this version looks different from the authentic one. I think they also use spinach in Kuku sabzi
In Iran some also like to add zereshk (barberry) for cool sour fruit taste to bring the herbs together
My mom makes it with just parsley. It’s pretty good on it’s own.
My family doesn't use spinach either.
No but they use sereshk and gerdoo.
Different but I like it
in 3:01 whats written in persian is wrong it should be attached and written from right to left its like you wrote "Hello" like this "o l l e h".
Hussain Ferdosi exposed
And the text doesn't even say what he said!
I don't speak Farsi, but what did he actually say (before mubarak)?
Hussain Ferdosi you are arab or persian i know it
Maybe he's from Iran. I've tried to read what sas written on a jar full of curry but the letters weren't attached. (so it said like C u r y)
Husain
Please make more Persian dishes!!!!
the person who thought about the constan dolly camera movement need to be stop
I'm glad someone said it. There are some things we don't need to change in 2019

I ove how you guys use beautiful Japanese knife
k so I'm obsessed with him
Ooh I ate this when I was a kid
Amazing★-★
This Chinese Hawaiian, Native American girl had never made a Persian dish in her life. This spoke to me and was so delicious. Halved the recipe incase it was not to my taste. Big mistake. Could eat all damn day. Happy Farsi New Year.
I add spinach, cinnamon, freshly ground nutmeg, ground cardamom, turmeri, ground cumin and chopped bits of walnuts to mine. Wonderful as is hot, cold for a picnic food or drizzled with some grape molasses and topped with some dried barberries or cranberries.
As a Persians, we used to use less herb or more egg plus walnut and feta cheese. Also fried in butter and make it crispy. It was really good
I remember my mom would cook it on both sides.
Processesssser
Did u even watch the video at all? Cutting it makes it less liquid..y. Use ya'll fkn ears before commenting.
+Beerus OP they were commenting on how he mispronounced processor lol like, did YOU even watch the video at all?
Burn!
Hahaha yes! @ 0:59
"Rumorzz of daily mimosas in the bondapatee test kitchen are [hic] fake newzzz."
Sounds even better slowed down.
More Persian recipes please!
I used to eat this when I was a kid, but I prefer the normal kookoo with only eggs and potatoes. I still eat it to this day.
Finally something to eat on Keto!
My dad makes this all the time
Fantastic 👌🏻 but I remember they would flip it over to roast the other side too ⁉️ also you could add crushed walnuts and Barberry between two pouring layers of Kuku 👌🏻
very very true about the food processor. I also always avoid it,when cooking, since it leaves a mess (reminding of the disgusting thing they feed to very very old people who have no teeth left) instead of neatly cut vegetables and herbs. besides when the dish is ready, it's "al dente", your palate feels the essense of the food. That's why handmade stuff is always better :)
What can I use instead of coriander?
Shabzi stew with rice is SO delicious
ghormeh sabzi is life
how do you make it with dried Sabzi please?
Never seen amyone mix onions in kuku sabzi, and i like it both side cooked
Det är bra att du säger att det är persisk koko. En del lagar våra recept och säger att det är något recept som jag har hittat på. Vi kallar de recept tjuvar.
Is this the fabled Herbslayer in action?
