4 Levels of Grilled Fish: Amateur to Food Scientist | Epicurious

  • We challenged chefs of three different skill levels - amateur John, home cook Julie, and professional chef Palak Patel from the Institute of Culinary Education - to prepare us a grilled fish. Once each of them had presented their creation, we asked food scientist Rose to explain the choices they made along the way - both good and bad. Which of these grilled fish looks most tempting to you?

I feel that this episode really shows the advantage of having everyone cook from home, they get to use some tools that they couldn't do in the studio, such as their grills. Not to say that this can replace the studio setting, but there's a nice special perspective this way that makes the dishes feel more personal.

its a great method to cook things...but not at home. who has that much salt at home to just essentially throw away like that? there's actually a way better method, which is to make a merengue with the whites and fold salt into that. its still a bunch of salt, but definitely way less (like a pound maybe for a fish that big instead of 5 or 6). but you can roast root veggies like that, ham, roast beef...
