  • We challenged chefs of three different skill levels - amateur John, home cook Natasha, and professional chef instructor King Phojanakong from The Institute of Culinary Education - to stir fry us their preferred Pad Thai recipe. Once each level of chef had finished and tasted their final product, we asked food scientist Rose to explain their choices from an expert's perspective. Which Pad Thai take the prize in your eyes?

    I'm reading several comments on King's choice of adding Chinese sausage to his pad thai. Guys, he's Thai/Filipino. I'm sure he knows what is traditional and what is not. He never claimed his recipe was traditional. As a level 3 chef, i think he's expected to add his own twist on the dish.

      I think the sausage, regardless of authenticity is an awful choice both as texture and flavour. The fried prawn is also dumb. The egg wrap form factor is sus, but I'd willing to try it.

    I'm Thai people and I love to cook and I'm satisfy to see all 3 version of this. I don't care if it a traditional ways It's hard for foreigner to find the ingredient that can bought easily in Thailand, Just cook the taste the you love That's all!

    Level 1: Stir-fried chicken noodle (No one adds pepper here in Thailand)
    Level 2: Western Padthai version (Thais don't add sprouts in padthai. We place them on the side of the plate like the sliced lime.)
    Level 3: Egg-wrapped padthai with plentiful of high quality ingredients
    Level 4: Thai auntie selling street food padthai using 4 ingredients

      It's always more than 4 for Padthai though.
      Noodles, Egg, Tofu (yes, the traditional one is tofu), Bean Sprout, Garlic Chive, and Sauce.

    As a Thai, I need to say that the level 1 chef’s dish isn’t a Pad Thai but a Pad Mhee 😂 but it looks like a very yummy Pad Mhee 😇
    Level 2 chef did a very good job! That’s a Street food Pad Thai you can find in Thailand! Level 3 chef elevated Pad Thai looks sooooo goooooddd I wanna taste it 😍

    as a thai people myself, it's really interested me to see how others cooking our food, well mostly thaifood is not fixed ingredients, use what you prefer, as long as the base taste is there, but this one really surpirsed me, well still good job.
    ps : dont be afraid like you are gonna hurt the food, put your back and muscle into it.

      @@ruvin7023 hhh rice noodle is truly made by rice flour but no that way as making pasta. It would like a rice purée, flowing into the hot water through a small hole, then it would be set. When it cool down and dry out all the moisture, then it would become the one that king used.

      I’m not thaï but I have a Thai restaurant in Paris and all of the chefs are thaï so I have seen a lot of of Thais being made and none of this versions are good.
      Any Thai can see it from miles away just by the color of the noodles .

    The tamarind paste is really important in getting a proper Pad Thai flavor. John added citrus in the form of lime, which is just not the same.
    A lot of people don't like tofu because they don't know how to work with it. Straight out of the package, tofu has very little appeal in flavor or texture. However, properly frying the tofu is one way to really improve the texture, and tofu is a flavor sponge. It takes up the flavors that you cook it with. Seasoning the oil with some salt, pepper, and chili flakes alone will make a big difference, and give it a little time to drink in the Pad Thai sauce flavor to get it to peak.

    It’s nice to see King here as the professional chef for this episode because he really has a great personality and he really seems like he loves his job. It’s kind of upsetting to see how many people really disliked his formation of the dumplings in the previous video, but it was true, his dumplings did not look very good. I think it’s also really interesting to see the level 2 chef making a vegetarian version of Pad Thai, I do not see that very often at all. As for the level 1 chef, he has a very goofy personality, but he definitely has a lot to learn in terms of making a Pad Thai because his Pad Thai was very simplistic and he did not really include all of the flavor and texture components of one like the lack of tofu, peanuts, palm sugar, and tamarind paste, but he did not do that bad of a job.

      Really? I thought his dumplings were really good! Xiaolongbao dumplings are so hard to make, so it's impressive to see him make them without them breaking and in a good shape. I think everyone was just more biased to Level 2's dumplings because they're much more common and traditional (which is good though).

      I was wondering if eggs count as vegetarian since lvl 2 added them at the end. I've been told that since they aren't fertilized they can be put in the same category as milk but idk if that's true or not.
      I also love King, fish sauce is best sauce!

    None of them are authentic but I’ll tell you what. I’m damn sure that last one, taste so much better than an authentic plate or bowl of Pad Thai. Man added so many flavors, textures, and the presentation looks amazingly delicious.

    None of these are traditional and that slightly hurts the Thai part of me (Italian/Thai person here though so this isn't coming from a traditional Thai), but I came to terms with this vid and I love that a) people care this much about Thai culture/food (same thing really) and b) the ingenuity of elevating the original, from amateur to pro. Traditional doesn't always mean correct and I'm happy with that. Besides, what Thai cooks like their neighbour anyway.

    As a native Thai, I find these dishes a little too complicated. The best padthai I've eaten was from Yaowarat, Bangkok's Chinatown, and guess what it cost only 1.3 dollars (40 baht). The female cook used only a few ingredients such as peanuts, tofu, sugar, and soy sauce. The crucial step in making padthai delicious is using wok - not a regular or teflon pan.

    Even I’m Thai. Pad Thai is hard for me to make delicious. My pad Thai always too moist and the noodles always stick together too. But it’s tastes good, for my friends and my family at least 🤣

    Level 1 chefs have also their own different levels. There's John who is near level 2, Emily who cooks quick meals (typical for any level 1),and then there's Stephen who made ice cream sundae from commercial ice cream.

    I'm Thai, and my ancestors are crying. (LOL)
    1.U can make an easy sauce With boiling Sriracha sauce, tamarind paste, fish-sauce, plum-sugar and shrimp head butter.
    2.We use garlic chives neither scallion nor spring onion and we ad in the last before finish.
    3.They forgot key ingredients like mini dried shrimp and dried pickled radish.
    4.In good Pad Thai we use fry pork belly to make pork crackling and keep pork oil to cook it.
    5.Chopped peanut, chili flake, sugar, a slice of lime is self addition seasoning for customer.
    6.We doesn't ad any carrot or broccoli in Pad Thai.
    Even Mr.Gordon was cursed by a Thai chef when he made Pad Thai before.
    I hope u love Pad Thai and make ur self a good Pad Thai.

    You probably already saw a few people saying they're a Thai and they're disapproved of these cooking in one way or another.
    As for me I would like to say: As a Thai, I approve of these cooking, Food is supposed bring a smile to your face, If you cook something and it tasted good and you're happy with it, who am I to say "You're doing it wrong" or "That's not authentic"
    I'd love to see more people cook Thai food, and I'd love to see new ideas people could cook up with them.

    I’m sooooo glad that my country’s food got into this show hahahh
    Just for the info the like very tradition Pad Thai was with no shrimp or chicken in it but the tofu and we put the little dry shrimp instead. And for the scallion part, we use the cousin of it which called chives. And lastly, the traditional one will add the chili flake into it for the hit and the lime juice after finished before we dig in it.
    Ps. King nailed it with the fish sauce Lmao
