Ingredients:
For the gnocchi:
1kg (2¼lb) Potatoes
1-2 teaspoons Salt
1/4 teaspoon Pepper
1/4 teaspoon Nutmeg
1 Egg
1½-2 cups (190-250g) All-purpose Flour *more if needed
For the sauce:
2-3 tablespoons Olive oil
1 Onion
2 Garlic cloves, crushed
800g (28oz) Tomato sauce
8-10 Basil leaves
1 teaspoon Dried oregano
Parmesan
Directions:
1. Make the gnocchi: Put the potatoes in a large pot. Fill the pot with cold water and add 1 tablespoon of salt. Bring to water to a boil, reduce the heat to medium-low and simmer until tender, about 30 minutes.
2. Drain and let cool slightly until cool enough to handle but still warm. Peel and transfer to a large bowl. Mash the potatoes until there is no lumps. Add egg and mix until combined. place mashed potato onto a clean surface, add flour and knead until smooth and soft dough forms. Add more flour if needed.
3. Cut the dough into 4 parts. Roll out each part into a long rope, about 1-inch wide. Slice the rope into ½-inch squares and set aside on a lightly floured surface.
4. At this stage the gnocchi are ready to boil. You can leave then in this shape, or shape them with a fork (you can see the method in the video).
5. Make the sauce: in a large skillet heat olive oil, add chopped onion and garlic and sauté for 4-5 minutes, until slightly golden. Add crushed garlic and sauté for 2 minutes more. Pour tomato sauce, add chopped basil and dried oregano. Simmer for 5-10 minutes.
6. Bring a large pot of salted water to a boil and add the gnocchi in batches, gnocchi are ready when they float to the top.
7. Drain and add to the cooked sauce, add a little pasta water, cook for 1 minute, gently tossing. Serve immediately and grate some parmesan cheese on top.

I made this it was so good! The recipe was easy to follow and tasted amazing! There was a lot of gnocchi left over so the next night we ate it with an Amatriciana sauce and a Parmesan & spinach sauce.

I tried it today! The gnocchi got up so fast in like 2 min so i was scared that they were not done so I ended up boiling them for 10-13 minutes 🤷🏻♀️ the sauce was so good too!!!❤😊

How do I make the tomato sauce at home?
I know I'm a bit late but if this helps anyone, my job is done! For 800g tomato sauce, you'll need:
•800g tomatoes, any kind will do
•1-2 cloves garlic, depending on the size (optional)
•pepper & salt
1. Boil the tomatoes in water after cutting a small cross in the top of each, and boil in a covered pan until the skins start peeling.
2. Peel off the skins and cut the tomatoes up, removing the seeds where possible
3. Put the crushed garlic into a pan, and dry cook them, adding the tomatoes, and cook with about 50ml water for twenty minutes
4. Either mash or blitz or blend the sauce up, and season with salt and pepper to taste.

Can someone help me? Is there a reason as to why the potatoes were peeled after boiling? Or can you peel before boiling like normal? Just wondering if it makes a difference that’s all

Hi. I’m an okay cook but I recently made these for the first time. It wasn’t the best, I think I made them too big so they weren’t as nice. Kind of chewy. Can someone help please?? I really want to perfect these 🥴
When I made gnocchi for the first time, I overcooked them a tad and they came out chewy and not very tender. I suggest pulling them a little early from the water, as the heat from the sauce will finish the cooking. Another reason would be too much flour or too much kneading. The final dough should be a little sticky.

You shouldn’t mash them with a fork, if you do, you have to do it really long and hard. You have to buy an potato presser
The flour made it taste not good at all
