Outstanding camera work on a great video displaying Japanese cuisine.
Wonderful coverage. 1st time I've seen hard working but happy staff eat lunch together before service. Reminds me of a family at home and it's no wonder that sentiment translates to their success over so many years. I wish them more of the same to come.

Wait, no, if an entire generation had it shut down, then that 230yr streak is broken, and not accurate to use while describing them.. Still nice they managed to preserve old classic recipes though.

they make their own noodles from scratch but use a machine to cut green onion really
Hand making noodles results in a different texture compared to machine made noodles. Whereas, there isn't a noticeable difference between green onions which are machine chopped versus hand chopped.
I grew up with Italian neighbors, and I CRINGE when I see people rinse their noodles. But that's Japanese : )
Italian pasta is made from Semolina, while Japanese noodles are made from a different variety of wheat and other grains, which yield a different result. The post cooking rinsing makes Japanese noodles more springy, which is the desired texture.
The food processes are almost Korean food.
That knife cutting noodle' s process is same to Kal-gucksu of Korean food.
