      Thanks! Right now 451 Pizza is selling their 14" pizzas for $17-$20 and slices are around $7. There are 6 slices per pie.

      @@judichristopher4604 - We are the dealer who sold the trailer to the customer who operates it, so we aren't totally sure where the name comes from other than the things you said - it is simple and easy to remember.

    My dream for years has been to open my own food service business. I have been leaning towards a food truck or trailer and the thing I cook better than anything else is pizza. What I am grappling with is not knowing how much dough I would need to keep on hand. Most foods you can just keep cranking out and if you run out of an ingredient you can send someone to go get more. But with pizza it's different. You have to have enough dough made and fermented ahead of time and proofing ready to be made or you have no product. And when you run out, you're done making pizza for the day. Thats the one thing I can't figure out, and no one ever seems to discuss how much dough they keep on hand.

      You can't say how much until you open and see how busy you are.
      Once you've been open, mess up a bunch, then start to get the flow of customer volume, rush times, etc...

      The good thing about Pizza Dough... you need more than enough... because you can always use that dough the next day... pizza dough is always better 24 hours later anyway.
      I think you can FREEZE it... I never have but it's best to make more than you'll think you'll need.

      @@judichristopher4604 dont know if they still do - but dominos use to make their dough the day before - put all pre made bases in the fridge for use the next day.. this was 20 years ago but yeah.. their pizza use to taste better then too hah

    What is the benefit of using a pizza roller? Is the time saved really worth all that precious space? Just curious.

      It is time saved, but also helps keep pizzas consistent. Either way that same space will be used to hand roll the pizzas or use the machine. I imagine some people are better served hand rolling, while others prefer the automated process.

    I notice this trailer does not have a vent hood? So the ovens vent through the smoke stack out the roof? No need for a fire suppression system either

      The ovens do vent through the smoke stack in this trailer, but your fire marshall will be the one to determine if you are required to have a hood or not, as well as fire suppression.

      @@christabor8877 - yes! Most of our trailers are custom built, so we can make it however you need it. We have done a lot of trailers with bathrooms - it has definitely become a more common feature in recent years.

    Do you find using that oven with the pellets more efficient than propane? And do you think the costs are similar?

      The price of propane varies, as does the consumption depending on what oven you use, but with this exact setup, there is no propane needed for the entire trailer, so it is nice being self sufficient without it.

      @@giulio4045 This is the Cookshack PZ400. It is a very clean cook, so ventilation is not always required. That being said, if you are cooking commercially, your local fire marshal will be the one who determines if ventilation is required on your setup or not. Also, ventilation can help with removing heat. That oven puts out a lot of heat, so the trailer gets hot inside if your are pulling the heat out.       @@rebeccatrafford2417, we sold this pizza trailer to our customer, so we are not the operators. That being said, this pizza oven is cheaper than a lot of commercial pizza ovens. It can turn a profit because it is able to produce pizza very quickly, so you can serve a lot of slices in a short amount of time.

      Some food truck operators use them, and some don't. This specific truck is able to serve a lot of pizza in a short amount of time, which is why they are a very successful business. To each their own.

      That specific dough sheeter is the Doyon DL18DP. There are a number of 2-stage dough sheeters out there. For a more economical version, you could look at the Estella EDS12D. Hope that helps!
