- Steve Rinella and Chef Kevin Gillespie are back in the kitchen, this time to work some magic with meat from his New Mexico bull elk. Kevin shows Steve one of his favorite quick dinner fixes, Vietnamese Style Shakin Elk. The two discuss some of the mythology surrounding marinades and brining, plus Steve shows off his prized culinary possession, his citrus juicer.

To be completely honest, I enjoyed the odd fishing ep between the steven rinella episodes and Im a HUGE fan of Jean Paul and his Cajun cookin but I really missed your face Steven Rinella. You are what Im on Meat Eaters for.
I agree with everything Horst Hooden said, when are we going to see Steven back hunting?
@@claudemills1961 season 10 part 2 just released on Netflix didn’t it? Or am I missing something else you’re referring to?
MeatEater has got to be my favorite channel on CZcams. So many awesome sportsman and cooks. Everybody featured on this channel teaches me something new, so I'm glad I subbed.
From Tennessee with love ❤️
I prefer the hinged double handle lime juicer myself..
Great episode gentlemen!
Rick Bayless approved
I can feel the passion when the chef is talking about cooking. Great episode gentlemen.
I don't think he's ever seen a set of dice in his life.
Those chunks of meat are the size Paul Bunyan would use to play.
I thought the same huge dice 🤣
Kevin said he made them a little bigger than normal so he could pick them up with chopsticks easier. He then uses a fork.
He meant the size of dice that hangs from your rear view mirror 😂
Man I miss the "pardon my plate" episodes. There are still so many species to go over, not just species. But think of eyes, elk nuts etc.
This dude looks like the prospector from the old Rudolph cartoon lol.
I've never seen Steve less interested in a conversation.
😂
I was actually coming to the comments to say that it does not seem that Steve and Kevin like each other
@@DialedN_07 Probably because Kevin can out-talk Steve :)
I've never seen more conflict over a damn lime juicer 😅
@@martyk7914 Boom. They both think they know more than the other.
PLEASE more Asian recipes! Everyone knows how to roast and pan fry- but there is a whole world of flavor that will blow minds between Vietnam, Thailand, Indonesia, India, Japan, China, S. Korea and India. My family and I have been delving deeper into asian dishes- and it's great because so much of it is so different from the western foods.
Love seeing meat eater pop up on my youtube.. can't wait for more stuff on Netflix.... I know more just came out but the stuffs so good
Love the show! Thank you from Brazil
Love the MeatEater shows, now I can watch Steve here!!!
love love love all this content!!
Close up on Steve washing his hands made me laugh. Fast forward to him gutting an animal then handing Janis or Cal a piece of raw tenderloin to sample in the field lol.
A tremendous amount of patience was put into this episode on Steve's part.
Vietnamese and Japanese food are both clean and really good. I appreciate Steve wanting to use as much of every ingredient as possible
So you eat Pho and spring rolls on occasion and you think you’ve had all their dishes. Asian cooking in general is high high in sodium. That’s why a lot of Asians suffer from high blood pressure. This dish is no different. It just taste cleaner because it’s not as heavy and has fresh vegetables.
@@brandondamasco6768 and lots of soy
@@brandondamasco6768 I think Laotian food is Alittle better then even authentic Chinese food because they use lots of blood and just roasted pretty plain meat
Man that dish looks perfect. Thank you.
I enjoy all of the meateater stuff but I need more Steve!
Yo Steve save your elk bones for the PHO broth. You will thank me later😂
By far my favourite meat eater episode by a mile. I'm a german (no shortage of wild boar and roe buck) who lived one year in india and also traveled most parts of south east asia. since then i absolutely fell in love with the cuisine (which in india can significantly change by only moving 100 miles) and took it as a personal challenge to try wild meat cooking the asian way. the results differed from disgusting to absolutely amazing. will definitely try this dish! for all who feel the same as me (and are hunting pigs) and love asian cuisine, there is one wild-boardish i would die for: Pandi-curry. Originally from Khurr in India and it's very different from what you might associate with indian cuisine. Preparation is very easy and it actually reminds me of the german "Sauerbraten", just way more spicy...
Absolutely love this cooking content. Would love if you guys did some wild game dishes with an indian twist. Regardless, keep it up!
Elk bone pho is delicious!
We need more of this. would love to see a full session of this.
The full show is on netflix!
@@toddnicholos4866 no of the cooking shows
Love it! I love doing venison backstrap steaks marinaded in Vietnamese Sườn Nướng pork chop style!
Outdoor connection hunting to fine dinning chef cooking. Nice!!
I love the sh*t talking banter over the juicer
I could listen to Kevin talk about food all friggen day!!! I absolutely love the myriad of new content. Its great to always have something new to watch/listen to year round!
Shout out to meateater for knowing the exact perfect time to release this video! "Step on it"
Man what kind of dice have y’all been playing with lol?
MeatEater has inspired me to take so many leaps of faith with. Y game meat. I've almost perfected a venison pancit that is just out of this world.
Wok hay is amazing. That is the word/phrase that he was trying to remember at 10:00. Breath of wok.
Enjoying these food related videos. It would have been nice to see how rare the elk cubes were on the inside and hear whether they were tender enough in that dish. On a side note there was an interesting dynamic going on in this video, couldn't put my finger on it.
i love this
nice job guys
Ha ha. Made this dish in the Little Belts this past general rifle season. Perfect use of the tenderloins. “Nai Luc Lac”.
i just saw this episode on netflix yesterday (the hunt for the elk). i've see al episodes from al seasons XD .... i need more !
Really beautiful Tudor Black Bay GMT on the wrist of chef Kevin!
Welcome back steve
"Like dice" *cuts chunks significantly larger then dice*
I have watched hunters cook on meat eater for a long time. It’s funny seeing Steven see a culinarily minded person cook game. Sugar and fat content for restaraunt quality food will look like a lot( because it is a lot) but it’s to get to the desired taste and texture.
This combo is legit!!!!!
Lol Kevin is all dicing and precision cooking vegetables to make a pretty dish and Steve is like "Now when I cook, I want it took look like it came out the first or was cut from a animal" and I know Kevin was just like 🥺😫😐🙃 on the inside lol
Steve, episode 10 is tooo short. When is episode 11 coming out? I’m craving already
Hey Steve long time no see. I've got to get over to Netflix
I miss your Hunts!
JO JO IN VT 💕😄☃
I'm Brazilian and I love your videos, very good, congratulations!
I have the literally exact same juicer
The Chinese phrase he was looking for is “Wok Hei”.
👍
Hey Mr Wok
Steve was clenching his jaw but keeping his cool the second time he brought up the lime juicer. Kevin is educated and very particular. He knows his stuff, but I'm sure Steve held back from saying a thing or two to Kevin about that damn lime juicer 😂.
Steve seems grumpy on this one. I like the Chef Kevin, would love to try his food.
I think Kevin was trying to give Steve a little crap like guys do, but "the boss" wasn't into it or Kevin was pushing a little to hard. Lol
Sometimes comedy works...
Great to see MeatEater back, but it kills me to see so much refined sugar, the worst thing a human can eat, added to beautiful elk, one of the best things a human can eat.
Agree, way too much sugar in that sauce. Definitely not needed.
That whole lime bit, had me cracking up!!
nice Tudor watch ;)
I've been wanting a wok for awhile now
Nice watch, bro
Damn good eating
These episodes with Kevin are the best. It would be cool to add one more person, a Vietnamese chef to even further incorporate Vietnamese flavors into an American ingredient.
Brooooo, venison shank pho ?!?!?
@@chrisbarrett8377 seriously would be amazing. thin cut strap back dropped in the hot broth. Pho is amazing. Ideas...😁
🔥🔥
Nice rolly
Elk hunter, son-in-law to an amazing Cambodian cook, and big fan of Meat Eater and Kevin. I just want to set the record straight, this dish is Cambodian, not really Vietnamese. You might get knifed if you call it Vietnamese in front of the wrong crowd. I'm sure the Vietnamese make it as well, but the name Lok Lak gives it away. That's a Cambodian word if ever there was one.
Steven sayin "I was in Nam" I was like whoa yeah he could totally be a Nam vet lol def a sniper
Things I learned from this clip:
1. Rinella washes his hands very thoroughly
2. I don’t have a bunch of those ingredients
Hilarious as soon as he said exotic. Asian style music played in background. Well. I found it funny being Asian myself. Lol
Nice Tudor GMT brah.
steve looking like he missed a flight to somewhere cool and got stuck making a cooking video...😳
😂
Kevin is an amazing add to this team.
Steve, I want to see more pics of the frontal arrow shots.
If you ever come back to AZ for coues deer hunt I will make something out of the deer similar to this and you won’t forget :)
Phelps, and Rinella, kicked some but in that episode! Anytime you can bring in a bull during archery w/ calls is an art, these guys got a double!!! 🤙🏼
which episode was it?

Kevin you're think of Wok hei! Uncle roger would be so dissapointed right now! haha
Are you sure you didn't measure the die sized beef with the dice on your rear view mirror?
All day.
I love Kevin, but he totally looks like Yukon Cornelius!
An elk salad. Cmon yall
Seems like a missed opportunity! Should’ve had J. Kenji on the show to make stir-fry and promote his new wok cookbook.
👍🏽👍🏽
"Got it"
😂
The breath of the wok term is Wok hei
Was that a custom chefs knife used ?
Wok Hei is the "breath of the wok".
Squeeze those lime Stephen!!
Chef Kevin, nice Rolex dude!
Are you certain it's a rolex?
Though it was Action Bronson + Steve Rinella combo real quick from the thumbnail lol
That would be a mind blowing combo

That Lime Dip will be Stellar ,I do Belive!!!

He is talking about Wok Hay or the breath of wok
I invite you to make Mexican adobo.....Adobo le me know
Can you eat a Peacock? Like a turkey?
Would this taste good with goose or duck?
Just saying elk live in Asia too.
