Italian Chicken Cutlet Sub | 2 WAYS

  • Today we're frying up crispy Italian chicken cutlets and making two different heroes/subs/hoagies, etc. The first way is the always popular chicken parmesan sandwich and the second is a crispy chicken cutlet sub with lettuce, tomato, provolone cheese, tomato, onion, and mayo. Both of these subs are placed on seeded Italian bread. I hope you enjoy these two chicken cutlet sandwiches! Be sure to check out the rest of the sandwich series!

    INGREDIENTS
    FOR THE SANDWICHES
    - 1 pound crispy chicken cutlets -recipe above
    - 2 large hero/sub/hoagie rolls
    - lettuce, tomato, provolone cheese, red onion, mayo
    - 1-2 cups marinara sauce
    - half a pound grated mozzarella cheese
    - 3 tablespoons grated Parmigiano Reggiano cheese
    INSTRUCTIONS FOR CHICKEN CUTLET SANDWICH
    1. Slice and remove some of the bread with fingers to thin the heaviness of the bread.
    2. Spread a layer of mayo on both sides of the roll and season with salt and pepper.
    3. Layer chicken cutlets on the bottom side of the bread along with the lettuce, tomato, onion, and cheese.
    INSTRUCTIONS FOR CHICKEN PARMESAN HERO
    1. Slice and remove some of the bread with fingers to thin the heaviness of the bread.
    2. Spread a thick layer of marinara sauce on both sides of bread.
    3. Layer the chicken cutlets on the bottom side of the bread. Next place a thick layer of mozzarella cheese and the grated Parmigiano Reggiano on top of the chicken.
    4. Bake the chicken parm sub in the oven at 400f until the cheese is bubbly. If desired broil for 1 to 2 minutes at the end but watch carefully.
    NOTE: You can lay foil on the non cheese side to protect the edge from burning if desired. Either way keep an eye on the bread while in the oven at all times.

    Your parchment paper idea is excellent. Since seeing it here several weeks ago I’ve used it with chicken, fish, and pork. Hate to be cliche but it is a game changer for the exact reason you mentioned. Man I love your channel Jim. Great job!

    You can use a metal toast rack for the cutlets, i find more oil runs off that way when i make schnitzel. Good point about the flouring and the breading, I like make the cutlets first and let the breading set while making potato salad or spätzle to acompany them.     Wow! Looks great man, so glad I found your channel. My wife and I love Italian food here in NC but not many good places to get it here. I made your meat sauce with the white and red wines, my wife likes the red wine better but they were both really good. It's the only recipe I use now. I am also looking forward to trying many of your dishes. I think you do a really good job presenting how all your dishes come together too. Thanks for sharing.

    They both look great ! I already like making chicken parm , so I think I'll try that one first . The other one , I think I'll toast it before putting veggies on it to melt the cheese and give a little crispiness . Love it !

    I make mine with mozzarella n Provolone n parm- romano with mayo ketchup honey mustard black n white pepper galic n onion powder no salt tomato onion n i make the chicken parm the way u do but i use both Provolone n mozzarella

    Been enjoying your videos two pieces of advice one is improve your lighting from the front shots and the second is fixing your camera so that you don't have to to croutch down while you're talking it's kind of distracting. Thanks for the vids!

      Hey there! I appreciate the constructive critique. The crouching is tough right now. I'm using a 24-70 zoomed all the way out. I might have to get a wider lens to not crouch. The lights I have work better from the side camera for sure. I might need to move it around a bit. Thanks!

    That is a proper sub. The test for me is to talk while holding the sub and pretend like you are putting holy water on the person you are talking with the hand you are holding the sub with. If the meats and toppings are flopping around without falling out you know you got a good sub.
