  • If you are looking to boost your diet with a nourishing, nutritious, healthy one-pot meal, you've found it! I love this lentil stew because I can make a big batch and eat it all week long! It's the answer to chilly weather meal prep!
    INGREDIENTS
    3 small diced carrots
    3 small diced celery stalks
    1 small diced medium onion
    ¼ cup extra virgin olive oil
    1 tsp chili flakes (as spicy as you like)
    1 tsp sweet paprika (Spanish pimenton)
    1 tsp oregano
    2-3 garlic cloves, minced
    3 ounces (85 grams) tomato paste
    8 ounces (226 grams) crushed tomatoes
    16 ounces lentils
    8 cups vegetable broth or water or combination
    8 ounces (4 cups or more) fresh spinach
    EVOO to garnish
    Parmesan cheese to garnish
    Tiny cut chives to garnish
    Salt and pepper to garnish...

    ABOUT ME
    By the age of 6, there was early evidence that food would play an important role in my life. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
    But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
    I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
    In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.
    Following that thought put me and my partner, George on a plane to Alicante Spain in 2014 where we have lived ever since. Our mission is to explore the aromas, ingredients and collective imaginations that are all part of Spain’s vast culinary heritage.

    Hola everybody - I don’t know about you, but I didn’t learn to appreciate the little lentil until I was a grown up. Spanish kids have been raised on this superfood all their lives and the sooner you try them, the sooner you’ll love ‘em too. Anybody looking for more lentil recipes out there? Let me know!     I made this for the second time in a month because I was craving it!! Even the picky teenage boy loved it! I did tweek the recipe for what I had, I used 156ml of tomato paste and a large can of diced tomatoes. I also couldn't get chives so I used green onions instead and it still tasted great! Made a large pot so perfect for batch cooking or a large family.

      HI Jennifer! You sound so much like me. I throw whatever I’ve got into the mix frequently. These kinds of recipes are so forgiving that you can pretty much use whatever is on hand. Sometimes I struggle with actually writing up or planning recipes because I’m pretty much of a “as it goes” kind of cook. The more you experiment, the more you make it your own and that, for sure, is the best recipe of all! Cheers, Caroline

    Rather than using parchment paper, you could use a lid to a smaller pan, avoiding waste! Just tried it, it worked great. Thanks for the recipe!

      Hi Wendy. I totally agree about tomato paste. I buy it in a squeeze tube when I can find it because it’s alot easier to use and not waste the extra in the can but I guess it can be frozen too as another option. It provides such a rich, intense tomato-y flavor. Definitely, one of my pantry go-to’s. Hope you enjoy the lentils! Cheers, Caroline

Thanks for participating in the conversation The full ingredients are listed in the video description and I use large brown because they are grown locally and I can get them really fresh but any larger lentil will do.       Hi Daruma! Thanks for reaching out with a really good question since I never specified it. I use brown ones because that’s what my little grocer offers in bulk and fresh, but I think it would be really nice to do a mix actually, so go for whatever you prefer (although I find the red to be softer) and I hope you enjoy it. I just made a batch a couple of days ago and put some in the freezer for later…one of my favorite tricks for meal prep in the winter! Happy Holidays, Caroline

      Absolutely, Angela. I love green lentils too, I just happened to have these brown ones from the local market who has a local source and they are quite fresh. You might want to keep your eye on them though regarding cooking time as they could be ready sooner if they are smaller. If it were me, I’d probably check them at the 20-25 minute mark and go from there. Best of luck! Cheers, Caroline

      Sure, tomato sauce will do. Just add a little more and maybe cook it down a bit first to get that jammy taste that comes from the intensity of tomato paste. Either way, it will be tasty and I can confirm it...it's what I had for lunch today! Cheers, Caroline

I’m not familiat with the ingredients you mentioned so I can’t advise on them, but maybe there is someone who lives in your area who could make a suggestion. If you are thinking about a pasta-like noodle, rice or soba noodles are two of my favorites. I use them all the time in my cooking. Hope this helps. Cheers, Caroline

      Hey Stella, here’s a little suggestion that might solve that problem. You can soak lebtils or beans overnight, discard the water and rinse them in fresh water a couple of times which will reduce that problem. I usually change the soaking water twice over the course of 8 hours if I am going to cook them for dinner. Hope it helps! Cheers, Caroline
