    What do you suggest for me to substitute for the sumac? I cannot get sumac where I live.

      HI Phyllis - Sumac adds a citrusy flavor most like lemon, so just add grated lemon peel and a bit of lemon juie and it will achieve a similar taste profile! Hope this helps! Cheers, Caroline

      Great question and if you want it, by all means, add it! As I always say, you do you but this version didn’t really need it and I prefer to shatter the finished dish with a bit of parm over the top instead! Cheers, Caroline

      Hi and good idea… I totally agree because but secretly I have two types already. A regular vacuum sealer (which is a bit finicky with liquid things) and a new Zwilling system (which has boxes that would great!). Anytime I make soups or stews, I freeze them in reusuable plastic boxes and then, once frozen,vacuum seal them for the freezer which also works great! This time, Although less effective, I wanted to show a less expensive way for people who wouldn’t want to invest in a sealer, but I totally agree!

And I reviewed the website and still couldn’t come up with any issues but now that I have a bit more information, I’ll go dig into it andf find out what the problem is. By the way, the PDFs are not directly linked from the website, the links are provided when you sign up for the newsletter (which I’ve only published twice in the past 2 years! but someday I’ll get better at it!!).       Hi Karline - Great question. They fit in very well for anyone not interested in animal-fat based products. Since George is pretty much a pescatarian, we've tried soy milk, almond milk, and oat milk - which at the moment is his favorite! Thanks for joining in the conversation! Cheers, Caroline

    Great swaps! I absolutely love following the Mediterranean Diet(which doesn’t feel like a “diet” at all). I had to find a diet with low saturated fat, and it has really helped me with my high cholesterol and insulin resistance. It’s so rare these days to find people recommending lower fat options(well, this video was made a year ago, but it’s still very applicable today!). I’m so tired of people telling me how bad non fat plain Greek yogurt is and trying to shove Keto down my throat. I love that it works for others, but a diet high in saturated fat doesn’t work for me. Heart disease and high cholesterol run in my family(both of my parents had major cardiac events in their 50’s and passed away in their mid 60’s). I have eliminated high saturated fat foods like red meat and butter completely…and I honestly don’t miss them at all. For the most part, my diet is really dialed in. The one thing I struggle with is my morning coffee. I am not a fan of black coffee. I have swapped Splenda for cinnamon, but I still add 1-2 tablespoons of HWC(which of course is high in saturated fat). I have tried lower fat options like 1/2 and 1/2, but I have to use twice as much to make it tolerable and I think it has some questionable ingredients. I was wondering if you have any healthy swaps or suggestions for cream in coffee? Thanks so much!🙏🏻

      Wow, Reny! You have dialed in so many excellent thoughts and I agree with them all. And actually, IMHO, the Keto diet is not healthy... for anybody. It may result in some initial weight loss but at what cost? Science proves it and I'll stick with science. The balanced way of eating with the Mediterranean-style is just that, a way of staying healthy through what you eat, not a diet at all. I don't like black coffee either but I have gotten used to non-fat milk. Since discovering he had high cholesterol and not wanting to take any medication, George cut all animal fats and we pay attention to using the best ingredients for lowering cholesterol. It's resulted in a 60 point drop for him (now at 184). He uses oat milk and likes it quite a bit. We've also tried almond milk (since we grow them!).
