    Isn't that a centurions armor?

No.There was nothing like Centurions armour.Simply parts of equipment that you would find across classes and ranks of the entire army. Its not his armour alone but other details of his gear what set him from apart other ranks but in this case its not centurion but standardbearer.Since type of standard is not shown in the video I cant tell which standardbearer exactly but I can know it quite safely from his animal fur over head(which was by the way not worn by Centurions).Standardbearers are also modernly sometimes depicted wearing metal masks although it is not known safely if they really did.

The roman army was pre industria,.relatively little is known of roman armour based on little that has survived. There is no one period that we know completely from the archeology.
Uniformity in the Roman Army is a modern myth.Nearly ally surviving Roman armour in existance is incomplete and differnet in some way to previous discoveries. So the existing Archeology promotes a higher degree of difference than similarities. It is very likely that if a time machine could transport a Roman legionaire into the present he would be critisized for not having the right gear. There are too many gaps in our knowledge for any true expert, only those who know a bit more than others.

You're right that there was probably little to no uniformity back then(besides shields), archeology has never been the only source or even the best source on ancient weapons and armor. There is also art(sculpture, paintings, mosaic, illustrated manuscripts, etc), and descriptions in literature. Archeology can't be taken for a general value.

I own a set of roman armour. it's the best armour I've owned in terms of mobility and flexibility if you're not carrying the shield. Roman Republic and 1 century imperial roman shields are crazy heavy.
