    Just found you, I have always wanted to be a pastry chef, been chef for years but can't get any experience in a kitchen as I'm too old apperently, thanks for explaining everything xx

    How many oval tarts did this make? Was there leftover cream and ganache after you made the 5 tarts shown?

    Thank you very much for the method, I have a question, how long does the tartar dough keep in the refrigerator or freezer?

      Hi, you can wrap the pastry well in plastic foil or bag, and keep it in the fridge for a couple of days or in the freezer for up to a month.

    You are the perfect teacher, and you make it very easy ... my question why do you need gelatin for the whipped ganache on top? What can be used as a topping instead?

      Hello, you need it because it would be too soft without the gelatin. You can use regular milk chocolate ganache made with double quantity of chocolate than the cream, just leave it at room temperature until it becomes pipeable. :)

    Can you just use pastry flour or is it too expensive for mass orders?

    What can you use instead of tulie cookie? Can you have a crushed ferrero chocolate ball on top?

      Instead tuile you can use crushed wafer cookies or crushed ice cream cone. You can use ferrero ball on the top, I hope it won't be too heavy though! :)

      Hi, I'd put some honey instead, I wouldn't just leave it out.
