Why would he? All that unnecessary stress. Here he is a celebrated man, renowned and accomplished, why drive yourself mad working 80+ hours a week, when he has achieved and proven himself here
Also, the paperwork involved in having your own restaurant is overboard. He may hate paperwork as do many chef's. They want to be hands on.
