The best thing I've bought were the ticket to Mickey's Christmas Party. I'll never forget my mom's face when she danced with Prince Phillip, fulfilling her life-long dream, it was the happiest I ever saw her.

Awwww that reminds me of a similar experience with cupcakes that happened to me back in 2018. My mom and I had spent a huge portion of the trip sick in the room with the flu (it was hands down the worst trip we've ever had in 30 years!), and my mom still had a bad lingering cough by the end of the trip.
We were driving home the next day with an overnight stop halfway home, so I bought some nighttime cough medicine from the Screen Door at Boardwalk so we could sleep and drive safely.
The cast member ringing me up saw the cough medicine and said, "Uh oh, looks like somebody's got the icky creepy crawlies." and I told him the whole story. He was really sympathetic, and told me, "I think we have just the right thing to help you and your mom feel better on the way home as soon as I finish ringing you up here."
After he finished he led me over to the bakery case and told me to pick out two cupcakes, one for me and one for my mom. Then he boxed them up and handed them to me, saying "This is a 'we're sorry you were sick during your vacation'!". Pretty notable given how expensive those cupcakes are!

Also, I bet that the Christmas and Halloween parties are AMAZING. But for my family, we much preferred to go to THE OTHER PARKS. And do the extra magic hours while everyone is at the party. Extra magic hours are great as is, but they are even better when half of the people in the whole place are at the Christmas party in magic kingdom, and you are in Hollywood studios, pretty much walking on to rides.

"Mickey's not so Scary Halloween Party" is always a good choice. Smaller crowds, special parade & fireworks & castle show, special events-Tomorrowland dance party, special food, special popcorn bucket, characters in special costumes, you get to wear a costume. I think that's it. Hey DFB Fall 2019 I scored FPs for Haunted Mansion @ 5pm on MNSSHP day! That's pretty much the only way to ride it on a Halloween party night.

I absolutely do not regret my lightsaber from Savi's - it really was an incredible experience, and every time I look at it displayed at home I smile. Was there sticker shock? Yes, but I saved and planned for it - that was my "big souvenir" from Disney. And, as a huge Star Wars fan I would have been heartbroken if I hadn't been able to get a reservation for it.
The other thing I don't regret, for different reasons, is the Disney Dining Plan. No, based on strict credit-counting, I probably didn't save money with it, but, it was just so nice to be able to sit down to a restaurant and not have to worry about if we were going over budget; it let us try restaurants like Homecomin' and Be Our Guest, that we would have steered away from otherwise due to feeling we couldn't afford them. Everything except tip was paid for in advance, so we could just sit down and enjoy our meals.

You're not packing things around, the warmer/dry clothes are there when you need them and you can really pack a lot into them. I think one of my best memories is the moment you know that it's too late in the day to ride any more water rides. On my birthday last year, the first time I had been to the park in ten years, I splurged on After Hours tickets. At $125 (on top of your regular park ticket, for just a few extra hours in the park?!), it was a bananas choice... And the best, most fun night EVER. The park was essentially empty, and I rode Space Mountain six times--the only "wait" being the time it took to run through the queue! I only stopped because my partner at the time was starting to feel sick, hah! Walking around an almost spookily empty (in a fun way!) MK in the dark is a memory I'll never forget. ...Oh, they also ran the tea cups just for us!!! ...!!! I had bought the ticket because so many people had written online about how worth it the price tag was, but I thought there was no way... Well, it exceeded expectations!
