  • The main SECRET of Perfect French Pancakes is to mix all the ingredients correctly!
Hey there, today I've got a fantastic old-school recipe for French pancakes that's sure to impress. Start by combining 8 ounces (225 grams) of all-purpose flour, 3 tablespoons of sugar, and a pinch of salt in a bowl. Make a little well in the mix, then crack in 3 eggs.
Now comes the secret: slowly add 17 fluid ounces (500 ml) of warm milk, whisking gently as you go. It's crucial to pour the milk gradually to avoid any lumps in the batter. Once half the milk's in, whisk it all together, then pour in the rest.
Next, melt 3 tablespoons of butter and add that to the batter along with a hint of vanilla. Keep whisking until everything's smooth.
When your batter's lump-free and beautiful, heat up the skillet and pour in just enough to make a thin pancake. Once it's matte on one side, flip it for another 30 seconds or so.
These pancakes are incredible for stuffing with all sorts of goodness-meat, cheese, you name it!

I'm French and if you want to make your crepes specials, ADD DARK RUM, about 10% of what you put in milk. The smell and aroma will make your crêpes unique.
I don't recommend it for savoury crêpes, only for sweet ones.

These are what we had IN England growing up. They are usually a bit thinner though, not quite so much batter. The very best way to eat them is to (immediately after taking out pan) sprinkle flat pancake with white sugar. Then squeeze fresh lemon juice all over. Fold, or roll up. Then spread some butter on top and sprinkle with a little more sugar and lemon juice. Absolutely delicious!!! Once you eat them like this, you won’t want them any other way. It was perfect until the end. First, secret tips you can add one tea spoon of Orange Blossom for the flavor and a cork of Brown Rhum, if you do not have this kind of pan, you can oiled it with sunflower oil for each crêpes. To spread the oil, use a little potato (or a carott if you do not have) cut in half and stick it on a fork. This is french pancake ONLY for desert, use only sugar, jam, or chocolate on it, never use meat or cheese. If you want the recipe of French 'galette bretonne' (salty crêpe) use only buckwheat flour, water, and salt. Bon appétit, and cheers from Paris !

Another way to do it is: first in a bowl add the eggs to make sure they are mixed well together with a pinch of salt to get that nice and yellow colour, add a small part of the milk ( I personally add 1/4 of the milk) and stir again, than add the flour and incorporate well. This will form a thick batter that way you will avoid those lumps. When all the flour is well incorporate and you see no lumps of flour, add the rest of the milk and stir very slowly. You can now add the butter or olive oil and whatever flavour you'd like. There is no need for the sugar though, they still come out lovely and soft and absolutely delicious. Let it rest for 5-10min and get cooking.

Nice recipe. Tip for anyone interested; crack your eggs on a flatsurface , not the rim of the bowl. The shards never go into the egg because of the was they are formed by the flat surface. I use the inside of a small bowl.

I too had these growing up in England. The batter was a little thinner though. We always had them with lemon sugar. Right after removing from pan, sprinkle with white sugar and squeeze fresh lemon juice over. Then fold or roll up. Spread a little butter on top and sprinkle with a little more sugar and lemon juice. Absolutely delicious. You can make a whole batch and put them in the oven on very low, heat to keep them warm while making the rest. I do not turn the pancake like you, only with this little jump move to retrn it. Watching from Belgium, preparing now.
You really need a ceramic pan (the cheap tefal pancake pans don't really work to shake'm off like that)
But after the 1st flip all goes easy.
I used 40 grams of salted butter (no need for a pinch of salt) and added cane sugar also in the warm milk.
    Vanilla extract at the end.
They were nice and got 13.5 pancakes out of the batter.
Not bad for a (lazy) Sunday.

Sounds like a great Sunday in Belgium! 🥞👩‍🍳 Glad the ceramic pan and your own twist on the recipe worked out for you. Keep enjoying those pancakes!

I worked as a chef in a crepe shop and of course they were big batches. We always let the batter rest over night.❤❤❤

Always crack your eggs on a flat surface and never above your food. You don't need sugar in the batter it just makes it heavy and sticky. Use half milk half water for the batter since water helps creating a smoother lighter texture. Use less batter in the pan, that's way to much and makes it way too thick.
