Turkey and Bean Enchiladas!

  • Turkey and Bean Enchiladas
    Ingredients:
    ½ pound of ground turkey (you can also use ground chicken)
    About 8 yellow corn tortillas
    1 cup chopped green chile
    1 - 1 ½ cups cooked pinto beans (I like to use leftover beans for this recipe)
    ½ cup chopped tomatoes in a can
    2 cups, or more of sharp cheddar cheese.
    ¼ cup vegetable oil
    2 tablespoons flour
    2 cups water or chicken broth
    1 clove garlic, pressed
    1 teaspoon salt
    Directions:
    Add oil to a medium size saucepan on medium to low heat. Now add the ground turkey and cook until browned. Next, add flour and cook for about 1 minute to cook off the flour taste. Add in the green chile and mix until combined. Now add the water or broth and bring it up to a boil. You will know how thick it is going to be once it starts boiling and you can add more water, if necessary. Next add in the tomatoes and continue cooking until it comes back up to a boil. Once the sauce is boiling again, add in the salt and beans and stir to combine. Let the sauce cook for about 20 minutes.
    Now it is time to assemble the enchiladas. Dip one corn tortilla at a time into the sauce to soften and place it on a plate. Now add some of the sauce on top along with a layer of cheese. Repeat this step one or two more times, depending on how many layers you want your enchiladas to have. Put the enchiladas into a preheated oven on the broil setting just until the cheese melts (20 seconds). You can also put it in the microwave for about 30 seconds.
