Garlic-flavored oil may be a staple in your kitchen, but if you're preparing your own at home you may place yourself at risk of botulism. Spores of Clostridium botulinum are found in the soil and may inadvertently contaminate your bulb of garlic. When exposed to oxygen these spores are harmless.
However, Clostridium botulinum spores thrive in an oxygen-free environment at temperatures of 50 degrees Fahrenheit and above, warns Michigan State University.
Your homemade garlic-flavored oil stored in your kitchen cupboard is the perfect environment for the growth of this dangerous bacteria. Furthermore, the bacteria are odorless and tasteless, so there's no way to know until after you've gotten sick.
If you make your own garlic oil, Michigan State University recommends you keep the oil in the refrigerator and discard after three days. If your flavored oil is kept at room temperature for more than two hours, you must throw it away or risk garlic poisoning.
      You'd probably be fine tho.

Y'all, if you want to roast garlic, simply cut the stem off the top off of a whole garlic bulb. After that, drizzle LIGHTLY in oil and season with salt. Cover in foil, place In the oven on 350° for like 30 mins and there you go pookie

If you submerge it in oil like that, it's not roasting, it's deep fat frying. You may as well throw some chopped potatoes in there as well, then you'll have some chips to go with your garlic flavoured oil sponges.

I put a pan with garlic and oil in my smoked at 200 for about 3 hours until the oil temped at 200 and the garlic started to brown. The flavor was mouth wateringly good. Now we have amazing smoked garlic, and wonderful smoked garlic infused oil for cooking 😀
