Thanks so much for this video. When I add the spices in the brine, I put them in a piece of cheese cloth. That way you get all the flavor but not the bits and pieces in the jars.

Oh Renea they look beautiful. I was amazed at how you kept everything so clean and beet juice free. I've only made them once and my hands were a very pretty shade of red for 3 days and I managed to have juice everywhere. I see beets are on sale this week for a 10lb bag farm our local farms so I might give them another try. Thanks for another great canning video.

The stems came out great as well, added a bit of onion and carrot to the stem jars so now i open a jar and put the veggies on the salad, no cutting is nice.

I did it and I have to tell you that following your instructions was the easiest way to make pickled beets. I purchased my beets 4 for a dollar from a local farm. When I took them out of the bags I saw that they were hugh!! Once I got into cleaning them I realized I had more than 20 pounds. I should have weighed them but I didn't. Turns out I filled 20 Quart Jars packed full. I had to do the math to make the right amount of syrup. After all was said and done and 9 hours later I was bushed. Oh but girl..... they are so delicious!! Thanks again! Hugs!!

After boiling, the skin slips right off the beets. I like small whole beets for pickling, they look nice along the pickled eggs.
A good alternative is to peel and cut the beets, then boil one litre of vinegar with a quarter kilo sugar, add the beets. Boil tender, pack and keep chilled.
