    So much fun nothing wrong with a mark or2 on those tomatoes. And celery is. So good for lots of soups and stews. Wow wee love that mix. Simply the best. You have mastered the lids to perfection .👩🌹👍

    I canned a bushel and a half of tomatoes last weekend. I made salsa and crushed tomatoes. Tonight after work I started canning more salsa. I also have a bushel in my freezer to can when I have more time. I bought all of my tomatoes from my local farmers market, I am so lucky to have one so close to me.
    I love to have tomatoes and salsa of my shelf but it is not my favorite to can. I don’t like the way it smells😖 but that doesn’t stop me one bit!
    Yours looks wonderful!

    Hello, mmmmmmm stewed tomatoes they are so good and can be used in anything. We love peppers and onions, well not the little so much. She loves peppers raw but not cooked but we get them in there somehow lol. Thank you for sharing, God bless, stay safe and have a wonderful day.

    Hi Rinea, just discovered your channel. My daughter and I are going to be canning tomatoes this weekend, I came across this video just in time. Never knew about adding vinegar to the canning water till this year. Your jars look beautiful!

    FYI the best chili is started the same way with the hot pepper instead of celery to get the heat evenly through the juices so when you add the rest there aren’t any hot spots

    I noticed with your tomato sauce and these stewed tomatoes that you do not put lemon juice or vinegar in your jars with the tomatoes to add acid. I always have but if I don't have to that would be great! Can you tell us why you don't?

      Ooops I didn't realize you were pressure canning. I was referring to water bath canning.

      Depends on what site you look on. Even the safe canning sites (universities, USDA, Ball etc) vary as to acidification requirements for pressure canning tomatoes.

    Curious why you're p.c.'ing high acid food instead of water bath. I prefer to p.c. too, but that's just bc I'm weird 😂 & hate water bathing. Let's just say huge pots of boiling water & I DO NOT get along. 💯

      My understanding is: The reason for P C them is the added veggies, they are not a high acid item, and no other acid besides the tomatoes were added, so they must be PC. Hope this helps

      Figure 1. Stewed Tomatoes Recipe
      Ingredients
      2 quarts halved tomatoes
      ¼ cup chopped celery
      ¼ cup chopped onions
      2 teaspoons celery salt
      2 teaspoons sugar
      ¼ teaspoon salt
      Procedure
      Select firm, ripe Roma tomatoes. Wash and place tomatoes in boiling water until skins split. Dip in cold water and remove the skins and cores. Slice tomatoes into halves. Combine all ingredients in a large saucepan and cover. Heat to a boil and simmer for 10 minutes. Fill five half-pint canning jars, leaving ½ inch headspace. Remove air bubbles, adjust headspace if necessary, and wipe jar rims. Secure two-piece metal lids. Process jars in a pressure canner.

      When you add low acid foods to high acid foods you will need to pressure can them.
