    Renea your sauce looks beautiful. I did my first ever tomatoes last weekend. Yay me. Lol I got a half bushel of farm fresh romas for 7 dollars and canned 8 quarts and 3 pints. I don't know why I didn't do this years ago. Thank you for being such an inspiration. Between my canning and dehydrating my pantry is slowly coming along nicely. In a few weeks I'll have my very first pressure canner and I'm so excited to start another new journey. ❤

    That's how I make my tomato sauce too. This year instead of jaring all my hot smooth sauce I poured it into my flat slow cooker....reduced it for 24 hrs on high and got some beautiful tomatoe paste, which I packed into very small sealers and processed them 30 min in water bath. Best tomato paste we have ever tasted!!

    Best way to start canning good idea with the vinegar wipe down . I want one of those blenders 😍. Love the idea of few spices till you use🤩.

    Watching you made me think of my father. He did his sauce almost identical. Was always a family favorite. Another thing we used to do with his sauce was take a canned quart and cook down green beans in it. It was sooo good, and it makes a great side dish to steak or burgers.

    I always have to add a bit of sugar to my tomato sauces, etc. because I don't like the high acidity taste. Looking great, Renea...an inspiration as always. xo

      If you add a 1/4 tsp of baking soda, it will also reduce the acidity.

    im wondering if what you did with the full jars that didnt fit in the canner,how do you keep them hot,put back into 275 oven?

      I have used my oven to keep my jars hot, or a separate pot full of hot water, and even my crock pot filled with hot water for smaller jars! Ball Canning has a CZcams channel that can help if you want "official" instructions.

      They do not cool down with the hot sauce in them.

      I would always pressure can stewed tomatoes for 25 minutes at 10 lbs of pressure but you need to check the blue book guide for your altitude.

    I have never done canning renae it's not that common in Australia anymore but I think I'm going to have a go at it once I get my tomatoes in this year...where do you buy the can goldy thingy from?

      Mine were a little tough too but the blender just pulverizes them to nothing and they taste wonderful.

      Some people do, some don't. It's personal preference, I think. It also depends on the food being canned.

    Why wipe rims of jars with vinegar on ur cloth versus hot tap water?

      The vinegar cleans the rim prior to the lid and seal going onto the jars. The vinegar acts as a disinfectant/antibacterial agent. It's important to keep germs/bacteria out of the batch of food that is going to get sealed.

      It is also good for removing any oil on the rim from the sauce.

    Why do you leave them boiling for 30 minutes? Why wont it work at 15 minutes?

    I just put hot tomatoes cooked with garlic and olive oil into sterilized jars and just put them on the counter and they sealed. Is this safe??

      No, They are sealed, however, they need to be processed to be shelf stable. You can store them in the fridge.
