- Today we will be making "Griot", Haiti's National Dish.
For those of you who don't know, "Griot" is a comfort food meal often cooked in large quantity with a side of fried plantain and pikliz (Picked Vegetable Relish).
Personally I'm not a fan of eating pork, but when a family party, or celebration comes around I cannot resist the delicious flavors of Griot.

The stock is healthy. I would use that.
You method is good , in Miami most of the Haitian spots over-fried the meats. They should do the same as you style and just fry it for color.
