    I tried this dish this weekend and it was AMAZING! I have tried 4 of your dishes thus far and Dear Lord am I happy I found your channel. I made this dish, the Soup Joumou,Curry chicken and the Epise! Once again Thank you and keep them coming I am a fan! I have watched other Haitian cooks and granted they look good but to me you are the best!

      Thanks, I'm using a Dutch pot and yes you can use limes. I don't know if there's another name but in my local stores it is call sour orange. The brand goya has it in a bottle.

    I thank you for sharing your recipes. I know that for the people who do not eat pork we usually make Turkey. I'm unsure of what part of the turkey they use to make the griot. Would you know?

      Dieuda Dash ... about two to three weeks as long as you add seasoning that has salt in it, that will help preserve it.

    Does it matter what type of pork shoulder used? Meaning pork shoulder butt roast, pork shoulder picnic, etc... because when I googled to try and find where they sell pork shoulder near me it came up with these different variations not sure if it is all the same thing or not.

      You have too. Wash with lemon and rinse with cold then pour hot or boiling water over it let it . Or you can boil it for 5 minutes then pour out the water.

      Venessa Byfield ....in a saucepan, add a little oil, to oil add small amount of tomato paste, cook tomato paste over medium heat for a few second, then add some of the liquid you cooked pork into your cooked tomato paste. I hope that helps.

    Could I simply let the seasoned pork boil away in the water and once the water evaporates and you're only left with the natural fat from the pork, just let it caramelize in the pot/pan and then eat it that way afterwards? Deep frying makes me nervous because I can never get it right. I know it won't turn out exactly the way it should but I'm the type of person who will probably burn my house down if I try to deep fry anything.

      You can try it but if you’re not comfortable with deep frying , you can place meat in a tray, add a little oil on your meat and put it in the oven under a high boiler until it’s golden brown.

      We name our sauce depending on the meat we're cooking. Example, I would use the broth from a chicken I've cooked, using tomato paste as a base and we would call it a chicken sauce. In this case, I made a sauce using the pork broth.

    Ok ill be honest...haitian food is unapealing and lacks colour, im a sous chef in a nice restaurant and worked with an haitian fellow he made griot and it looked not apealing, when i tasted the griot it was simply amazing and you guys dont go with all the fancy ingredients and all the fuss your food is deliciouse

      How do you know it’s not cook well, have you tasted there foods? Everyone has their own style of cooking. The taste is what matters!!!! I’ll bet if someone was to watch you cook, they will say the same thing about your cooking. You develop a cooking style based how your parents or grandparents taught you.

      Rania Marshall .. not every stove have numbers, some stoves reads high, medium, low, warmer with little lines in between each word. And there’s some stoves that don’t have neither numbers or words go online. Thanks for your comment.
