If i want to cook 10kgs (about 22 pounds) how many of them should be meat with bone and how many should be chuck? And correct me if i'm wrong, should i use 24 guajillos and 4 anchos for 10kgs? I'm sorry for so many stupid questions.
The amount of peppers used is good for up to 10 lbs. The more peppers you add the richer the broth will be. The Ancho peppers gives it flavor and a richer color. If you are making 10Kgs which is approximately 22 lbs, I would definetely double the amounts.

You can also serve it as a regular taco without the cheese. Top it off with the cilantro, onion, radishes or any other toppings you prefer.

I store them in a tightly sealed tupperware. It tastes much better when reheated. Enjoy!
